Back to Work
 Really now, we're sure you had a great time and wish that those sunny beaches and sunsets would never end, but what about us! We'll be glad to see your smiling and tanned faces once again. We hoped to bring in better weather for your return - like it was when you left - but to no avail!  Spring is in the air, but the big debate is when will the patio be open. With the cool and rainy 2008 Spring, we were still inside late into May.  Hopefully this season, we'll all be enjoying the great outdoors much earlier.

What's Next?
April is a busy month with Easter on the 12th and the following weekend, April 18th and 19th, we'll be invaded with Moms and Daughters for the yearly U of I Mom's Weekend.  Watch out Champaign-Urbana! These Moms have a style all their own and the stamina to have a good time!  Remembering from last year, Sun Singer was packed with new faces Saturday afternoon crowding out our regulars until  out later in the evening. 

Taste Wine / Meet People
We want to extend a continuing invitation to join us for our complementary Sensational Saturday Wine Tastings from 12 - 4. These tastings highlight an eclectic selection of wines sometimes by country or region, sometimes  by producer or specific theme - like this week's Wine Meets the Grill! - or sometimes by the wines we like and want you to taste too. Do you read Wine for Dummies late at night off in a dark corner? Do you want to try Merlot, but you're afraid to ask? If so, this seminar is for you! Join us at Sun Singer as we de-mystify the world of wine. Wine 101 will introduce you to the everyday pleasures of wine.

We'll be covering basic wine varieties and their characteristics, along with how to taste and talk about wine. We'll cover some of the basic wine terminology and flavor components of wine. We'll also talk about 'when wine goes bad.' After this introduction you'll feel more comfortable with the 'language' of wine, ordering wine in a restaurant and how to explain what you want from a wine when choosing one in the store. With any luck you'll be on the road to a lifetime of enjoyment in a world of wine!

Whettin Your WhitstleWine & Food Pairing Tips 
 
Food and wine pairing is a highly subjective and inexact process. The old rules - primarily red wine with red meat and white wine with fish and poultry - don't take into consideration the complexity of today's multi-ethnic and subtly flavored foods and the corresponding wide range of wines from around the world that are now conveniently available to almost everyone.  The following is a brief list of guidelines to get you started.
 
Match Flavor Intensity
Match delicate wines with delicate foods, and conversely match powerful wines with powerful foods. The Soave goes with the Poached Fish, and the Bordeaux with the Roast Game, not vice versa.

Geography Reigns
When in doubt select wine and food from the same area. The soil and microclimate may have a similar effect on both the grapes and the food. For example, Hungarian Cabernet Sauvignon tastes of paprika, the national spice of Hungary.

Balance Acidity
The food should never be more acidic than the accompanying wines.  This rule comes to mind especially when I hear people talk wine & pizza.  The tomato sauce that is used to make the pizza is high in acidity.  If you pair a Merlot or Cabernet with it, the wine will seem flat and uninteresting.  The acid in the sauce has cut through the wine.  On the other hand, if you choose Sangiovese ( a grape with higher natural acidity ) you will have a beautiful match.
