Sun Singer News
In Brief Back to Work Really now, we're sure you had a great time and wish that those sunny beaches and sunsets would never end, but what about us! We'll be glad to see your smiling and tanned faces once again. We hoped to bring in better weather for your return - like it was when you left - but to no avail! Spring is in the air, but the big debate is when will the patio be open. With the cool and rainy 2008 Spring, we were still inside late into May. Hopefully this season, we'll all be enjoying the great outdoors much earlier.
What's Next? April is a busy month with Easter on the 12th and the following weekend, April 18th and 19th, we'll be invaded with Moms and Daughters for the yearly U of I Mom's Weekend. Watch out Champaign-Urbana! These Moms have a style all their own and the stamina to have a good time! Remembering from last year, Sun Singer was packed with new faces Saturday afternoon crowding out our regulars until out later in the evening.
Taste Wine / Meet People We want to extend a continuing invitation to join us for our complementary Sensational Saturday Wine Tastings from 12 - 4. These tastings highlight an eclectic selection of wines sometimes by country or region, sometimes by producer or specific theme - like this week's Wine Meets the Grill! - or sometimes by the wines we like and want you to taste too. Take a Saturday break and come have a taste with us!
Join us soon for more good times at Sun Singer!
Best Wishes,
Jackie, Mark & the Sun Singer Staff

Unique Opportunity: Cloud View 'Pritchard Hill' Proprietary Red 2003 Napa Valley, California
Cloud View Vineyards sustainably farms 26 acres of Cabernet Sauvignon and Merlot planted between 1990-95 on ninety acres of rocky mountainside on Pritchard Hill. They use only estate grown grapes, hand-picked and handsorted. · 67% Cabernet Sauvignon and 33% Merlot · 23 months in French Oak, 89% new Aromas of freshly crushed rose petals and luscious dark fruits and berries. Fine leather and muted oak scents follow. First tastes give a mouthful of just-ripened fruit. Soon, flavors become distinctly blackberry, dark cherry, and plum.At mid-palate the wine reveals roundness and a full body, growing in complexity with time. Soft, yet hearty tannins give a departing flourish and a graceful, lingering memory.
Now available by the flight, glass or bottle in the Wine Bar Cafe.

Wine & Food Pairing Tips
Food and wine pairing is a highly subjective and inexact process. The old rules - primarily red wine with red meat and white wine with fish and poultry - don't take into consideration the complexity of today's multi-ethnic and subtly flavored foods and the corresponding wide range of wines from around the world that are now conveniently available to almost everyone. The following is a brief list of guidelines to get you started.
Match Flavor Intensity Match delicate wines with delicate foods, and conversely match powerful wines with powerful foods. The Soave goes with the Poached Fish, and the Bordeaux with the Roast Game, not vice versa.
Geography Reigns When in doubt select wine and food from the same area. The soil and microclimate may have a similar effect on both the grapes and the food. For example, Hungarian Cabernet Sauvignon tastes of paprika, the national spice of Hungary.
Balance Acidity The food should never be more acidic than the accompanying wines. This rule comes to mind especially when I hear people talk wine & pizza. The tomato sauce that is used to make the pizza is high in acidity. If you pair a Merlot or Cabernet with it, the wine will seem flat and uninteresting. The acid in the sauce has cut through the wine. On the other hand, if you choose Sangiovese ( a grape with higher natural acidity ) you will have a beautiful match. Wine Chiller
Great way to keep wine cool, inexpensive, and classy too!
Marble
is commonly used in the kitchen because of its cool surface. Here it's used for
keeping your white and rose wines chilled. Pre-chill the Cooler in the
refrigerator, then place it on the table with the bottle inside to keep your wine at its perfect temperature. An
elegant, yet practical touch, it also doubles as an attractive kitchen-tool
holder.
