In Brief Take a Breath Hello! Hello! Anybody there? Spring Break and the first time in many years that Champaign, Urbana and the University are all out together. The difference is noticeable. Not that we're complaining, everyone stopping by seems very relaxed and full of good cheer. Could be the weather, could be just the chance to take a breath and let the dust settle for a few days. If you're not getting out of town this break, we'd certainly suggest a quick 'get away' to Sun Singer. Bring some friends or find some here - relax, refresh and enjoy! We always look forward to seeing you.
Final Days: Save $7 After 8:00 Just one week left to take advantage of our Save $7 After 8:00 special. March 31st will be the last day for our early year offering, and we appreciate everyone who has participated in the saving - on a occasional or frequent basis - since the beginning of January. While time is fleeting, it's not to late. Drop by the Cafe any evening after 8:00pm and buy any bottle of wine with an accompanying appetizer, salad, sandwich or dessert and you'll find that a little fun just got $7 cheaper. But remember, these savings will be gone after March 31st so don't be an April Fool, join us soon!

Do you read Wine for Dummies late at night off in a dark corner? Do you want to try Merlot, but you're afraid to ask? If so, this seminar is for you! Join us at Sun Singer as we de-mystify the world of wine. Wine 101 will introduce you to the everyday pleasures of wine.
We'll be covering basic wine varieties and their characteristics, along with how to taste and talk about wine. We'll cover some of the basic wine terminology and flavor components of wine. We'll also talk about 'when wine goes bad.' After this introduction you'll feel more comfortable with the 'language' of wine, ordering wine in a restaurant and how to explain what you want from a wine when choosing one in the store. With any luck you'll be on the road to a lifetime of enjoyment in a world of wine!

Wine & Food Pairing Tips
Food and wine pairing is a highly subjective and inexact process. The old rules - primarily red wine with red meat and white wine with fish and poultry - don't take into consideration the complexity of today's multi-ethnic and subtly flavored foods and the corresponding wide range of wines from around the world that are now conveniently available to almost everyone. The following is a brief list of guidelines to get you started.
Match Flavor Intensity Match delicate wines with delicate foods, and conversely match powerful wines with powerful foods. The Soave goes with the Poached Fish, and the Bordeaux with the Roast Game, not vice versa.
Geography Reigns When in doubt select wine and food from the same area. The soil and microclimate may have a similar effect on both the grapes and the food. For example, Hungarian Cabernet Sauvignon tastes of paprika, the national spice of Hungary.
Balance Acidity The food should never be more acidic than the accompanying wines. This rule comes to mind especially when I hear people talk wine & pizza. The tomato sauce that is used to make the pizza is high in acidity. If you pair a Merlot or Cabernet with it, the wine will seem flat and uninteresting. The acid in the sauce has cut through the wine. On the other hand, if you choose Sangiovese ( a grape with higher natural acidity ) you will have a beautiful match.
