In Brief Ah, March has arrived like a lamb this year, sneaking in on a Sunday. February went by so quickly and it was a busy month with Valentine's and Mardi Gras, all good events to take our minds off the doldrums of winter. We even had those few days where many of us shed our coats in the false promise of an early Spring. While our friends came in shivering once again this week, don't you think that Spring is in the air? And what better proof than Daylight Savings time early this upcoming Sunday morning that Spring is just weeks away.
Thanks to the Wild Scotsman! We want to thank everyone who attended our impromptu Scotch tasting last week with the Wild Scotsman, Jeff Topping. Scotch tastings, as you might have read in the newsletter previously, are the most well attended events that we present. We actually resorted to calling people from our list of past seminar participants. Maybe that personal touch made the difference or maybe we've got lots of friends who are madly in love with Scotch, but the tasting, scheduled from 6:00 - 7:30pm, didn't break up until well after 9:30pm with many smiling faces and many empty bottles! After all is said and done, we mustn't miss thanking Jeff for his time, knowledge, and of course, for his scotch and Craig Minnette 'Mr. Burgundy' from Louis Glunz Wines who brought Jeff to our doors.
Looking Ahead: One Month, Two Firsts March is shaping up to be another activity filled month at Sun Singer. We'd like you to attend a unique Meritage Blending Class next Tuesday, March 10th. This seminar is being hosted by Matt McCormick, Midwest Regional Manger of Dry Creek Vineyards. While we've done many wine tastings in the past, this will be our first crack at not only exploring the different varietals that constitute a Meritage Blend, but hopefully putting together a number of teams to actually create their own blend that will be critiqued by all attending. Another first this month with be the next in the series of Wine classes engineered and presented by Brian Bowman. This month Brian is introducing Wine 103: Paring Wine with Food. I think that Brian has been awaiting Spring to bring our friends and guests the next logical step in our series of wine education and enjoyment. Combining the knowledge from Wine 101 and Wine 102, Wine 103 will provide the concepts and experience important to the understanding of successfully pairing wine with food. Meatless Options for Lent
Last Friday was the first Friday during the season of Lent. I fielded a question from one of our regular guests regarding what meatless dining options we offer on the menu. The thought occurs - how many of you have the same question?
So, for our friends who are fasting from meat on Fridays during this season of Lent we wanted to spotlight several of our meatless menu items.

Wine 103: Pairing Wine with Food

These days you're more likely to hear food and wine pairing suggestions than hard and fast rules. There's considerable room for experimentation and expression of your own personality in pairing food and wine. A basic understanding of the food, the wine and how the components and flavors in each interact can make it easy to find a successful pairing on a daily basis, and can greatly increase the chances of finding an exciting synergy between wine and food.
Food and wine pairing is a highly subjective and inexact process. The old rules - primarily red wine with red meat and white wine with fish and poultry - don't take into consideration the complexity of today's multi-ethnic and subtly flavored foods and the corresponding wide range of wines from around the world that are now conveniently available to almost everyone.
