Mardi Gras: Laissez les bons temps rouler!
I was criticized sharply by my collegues for my mis-spelling of  the famous French phrase above. I really have no excuse with a Frenchman on staff, but I was glad that our readers were kinder with their lack of criticism.  Fat Tuesday,  February 24th, is the culmination of  this year's celebration immediately before the beginning of the Lenten season. While winter maintains its dogged presence and is a penance in itself, Sun Singer remains your momentary escape to the sunny South - sip on a Hurricane, engulf yourself in a  spicy bowl of gumbolaya and  let  infectious beat of Cajun balllad and Zydeco stir your soul. We all need a good celebration - and any excuse will do.  Join us tonight as we wrap up Mardi Gras 2009.

Calling all Scotsmen!
 
Stop in this Tuesday evening for a walk up tasting with Jeff Topping, founder of Wild Scotsman Whisky. Jeff will be bringing a grab bag of scotches with him as he travels through central Illinois.
 
Wild Scotsman Whisky and Spirits is an independent whisky company created by an American whisky enthusiast, Jeff Topping. Jeff is one of only two Americans who are independent bottlers of Scotch whisky & is the madness behind the mind for Wild Scotsman, a true independent bottling company. There are no corporate bankrolls funding his passion, influencing prose, or choosing casks, just the passion and pursuit to bottle the best Scotch whisky.
 
Jeff's partner in the Wild Scotsman is John McDougall, who is arguably the most experienced Whisky Expert/Master Distiller in the business today having been Production Director or Manager of a distillery in all of the traditionally recognized distilling regions in Scotland. The men decided to create and market a "vatted" scotch, which is a scotch blended from single malts from each of the 10 recognized Scotch regions to create a particular flavor profile and each barrel is at least 15 years old.

Mardi Gras was brought to Louisiana by early French settlers. The first record of the holiday being marked in Louisiana is 1699. The starting date of festivities in New Orleans is unknown, but an account from 1743 notes that the custom of Carnival balls was already established by that date. Processions and masking in the streets on Mardi Gras Day took place, were sometimes prohibited by law, and were quickly renewed whenever such restrictions were lifted or enforcement waned. In 1833 Bernard Xavier de Marigny de Mandeville a rich plantation owner raised money to fund an official Mardi Gras celebration.

On Mardi Gras of 1857 the Mistick Krewe of Comus held its first parade. Comus is the oldest continuously active Mardi Gras organization and started a number of continuing traditions (for example, the use of floats in parades) and is considered the first Carnival krewe in the modern sense. In 1875 Mardi Gras was declared a legal holiday by the state of Louisiana.

Dixie Lager
 
Dixie Lager is an American icon. Brewed all-naturally today as it was first brewed in 1907, Dixie Lager uses lightly roasted two-row barley malts and rice. The result is a crisp and flavorful beer with a mild Cascade hop finish.
 
At present, all of Dixie's brewing is being done under contract with Minhas Craft Brewing at the Huber Brewery in Monroe with Dixie's brewmaster, Kevin Stuart, overseeing production according to the historic recipes.
 
The Brunos plan to reopen the New Orleans brewery within two years.
