Recipe: Grilled Pineapple and Macadamia Nut Salsa

 

Serves 8

 

Grilled pineapple and macadamia nuts give this salsa a hint of the tropics. Serve with chips or as a topping for grilled tofu cutlets. If you can't find macadamia nuts, replace them with toasted pumpkin seeds or pine nuts.

 

Ingredients

1 large pineapple, quartered

½ cup unsalted dry-roasted macadamia nuts, chopped

½ cup diced red bell pepper

¼ cup diced red onion

2 Tbs. lime juice

2 Tbs. finely chopped cilantro

2 tsp. seeded and diced jalapeño chile

1 clove garlic, minced (1 tsp.)

¾ tsp. chipotle chile powder

 

Directions

1. Preheat grill or grill pan. Grill pineapple quarters 4 minutes on each side, or until tender and juicy and dark brown char marks appear.

2. Chop pineapple into 1/4-inch cubes, and transfer to a bowl. Stir in remaining ingredients and season with salt and pepper, if desired.

Have you seen those commercials for Nutella? The commercial shows a mom getting her kids ready for school and implies that giving them Nutella on their toast is a healthful way to start the day. 

 

Just one tablespoon of Nutella contains 100 calories, 6 grams of fat and 10 grams of sugar. I don't consider this a healthy food and a judge agrees.

 

Ferraro, the makers of Nutella, recently settled a class action lawsuit for $3 million, which will be paid out to customers who feel they were mislead by Nutella's marketing schemes. If you bought Nutella thinking it was a healthy food item (I have a bridge to sell you in Brooklyn...just kidding), you are not alone. Exercise at Any Age

While muscle tissue is essential for strength, having adequate muscle mass can also help individuals maintain a healthy weight. Muscle loss or wasting can occur 
in both chronic heart failure (CHF) and as part of the normal aging process. Unfortunately, in these two populations, having low muscle mass increases morbidity and mortality rates.

 

To determine the impact exercise would have on increasing the muscle mass of individuals in these two populations, researchers put participants on a four-week endurance training program. At the end of only four weeks, patients with CHF had healthier muscles regardless of age.

 

In this study, 60 participants with CHF were divided into two age groups: those who were 50 years old and younger and those who were 65 years old and older. Another 60 participants of the same age stratus, but without CHF, served as controls. Half of each group participated in the four-week exercise program. Before and after the four-week training program, all participants had his or her leg muscle strength measured. 

 

After four weeks of exercise, despite muscle size not increasing, both younger and older heart failure patients increased muscle strength, a great boon for survival. 

 

Bottom Line: Exercise is beneficial even in the old and ill. This population is often treated with pharmacology, and only recently has the role of exercise been investigated as a part of treatment. We all know that exercise is good for us, and this is further proof that our bodies need to move to survive.

Sports Drinks and Tooth Decay  

 

Caffeine and KidsSports drinks, and occasionally energy drinks, can play a role for those who are exercising at a high rate of intensity for longer than an hour. For the majority of the population, however, they are a source of empty calories and . . . tooth decay.

 

Yes, tooth decay. In a recent study published in General Dentistry, researchers found that high consumption of sports and energy drinks, especially seen in adolescents, is causing irreversible damage to teeth.

 

Researchers say the damage is not due to the high sugar content but instead due to the high acidity of these drinks. They investigated the acidity levels in 13 sports drinks and 9 energy drinks and found that the acidity levels vary between brands of beverages and even between flavors of the same brand.  

 

To test the damage these acids can do to teeth, the researchers immersed samples of human tooth enamel in each beverage for 15 minutes then "rinsed" the tooth sample by soaking it in artificial saliva for two hours. This cycle was repeated four times a day for five days.

 

The researchers found that after only five days of exposure to these drinks, damage to the enamel was apparent. Also, energy drinks were twice as harmful to enamel when compared with the sports drinks.

 

Bottom Line: With a reported 30 to 50 percent of U.S. teens consuming energy drinks, and as many as 62 percent consuming at least one sports drink per day, this is a big problem. We're only given one set of teeth and we need them to last for a lifetime. For most athletes and physically active individuals, water is the best drink to consume while exercising.
