Recipe: 

Rosemary Sweet Potato Chips

 

Ingredients 

1 large sweet potato

2 Tbs. olive oil

1 Tbs. lemon juice

1 tsp. dried rosemary, crushed

½ tsp. sea salt

 

Directions

1. Cut sweet potato into paper-thin slices with a mandoline or sharp knife. Place the slices in a bowl, and gently rub in oil and lemon juice until well coated. Add rosemary and salt, and toss to combine.

2. Lay slices on dehydrator trays without overlapping. Dehydrate 6 to 10 hours, or until crispy, shifting trays as necessary to dry chips evenly. Turn off dehydrator and cool chips completely. Store in an airtight container for several weeks.

Calories: 68, Protein: <1g, Total Fat: 5g, Saturated Fat: <1g, Carbohydrates: 7g, Cholesterol: 0, Sodium: 142mg, Fiber: 1g, Sugar: 2g

Starting Earth Day (April 22), Whole Foods Market will no longer carry wild-caught seafood that is "red-rated," a color code that indicates it is either overfished or caught in a way that harms other species. Whole Foods will stock sustainable replacements like cod caught on lines and halibut from the Pacific.

 

In a similar move, BJ's Wholesale Club recently announced a policy to ensure its seafood is sustainable or on track to meet sustainability standards by 2014.

Vitamins Won't Prevent Canker Sores  

Most people have suffered the inconvenience of the common canker sore. For some time, researchers speculated that perhaps these annoying sores were caused by a minor vitamin deficiency. To test this theory, researchers at the University of Connecticut recruited 160 participants who had at least three canker sores in the past year.  

 

The participants were divided into two groups. The first group received a daily multivitamin containing 100 percent of the U.S. reference daily intake (RDI) of essential vitamins for one year. The second group was given a placebo. Over the next year, the participants were asked to record how often they developed canker sores. At the end of the study, there was no difference between the two groups, meaning that the supplement did not protect against canker sores. 

 

Bottom Line

A multivitamin and mineral supplement won't help you prevent canker sores. And, of course, it can not substitute for a healthful diet.

It's scary to think, but heart disease can start laying its ugly tracks early in childhood. In a recent study published in the American Journal of Clinical Nutrition, researchers report that initial signs of heart disease can be seen in children as young as 12 years old who have a high intake of sugary drinks.

 

Researchers from Westmead Millennium Institute in Sydney investigated the link between carbohydrate intake (including sugar intake) and the retinal health of children. Narrowed blood vessels inside the eye are a known precursor to cardiovascular disease in adults.

 

In this study, 2,353 12-year-old children had retinal images taken. Researchers found that those children who consumed soft drinks once or more per day had significantly narrower mean retinal arterioles (an indication of potential heart disease) when compared to the retinal arterioles of children who drank no soft drinks.

 

Bottom Line

Let's just add the results of this study to the long list of reasons most of us should cut back on empty liquid calories.
