Recipe: Fresh Broccoli Salad

 

Ingredients

2 heads fresh broccoli

1 red onion

3/4 cup raisins

3/4 cup sliced almonds

1/2 cup mayonnaise

� cup fat-free plain Greek yogurt

1/3 cup white sugar

2 tablespoons white wine vinegar

 

Directions

1. Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the raisins, your favorite nuts (here we use almonds) and mix well.

2. To prepare the dressing, mix the mayonnaise, yogurt, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

  

Makes eight servings. Per serving: 

Calories 252, Total Fat: 10g, Sat fat: 1g, Cholesterol 5mg, Sodium 168mg, Total Carbs 37, Dietary Fiber 6 g, Protein 9g

Broccoli- Only the Real Deal Will Do

veggiesBroccoli is a cruciferous vegetable, a class of vegetables that also includes cauliflower, Brussels sprouts, kale, cabbage and bok choy. These vegetables are sometimes called super-vegetables because they are a great source of fiber, vitamins and phytonutrients (plant nutrients that are known to confer health benefits to humans).  

 

They're actually so good for you that some supplement manufacturers are trying to bottle them up and sell them for big money. This is, of course, what veggie haters have been waiting their entire lives for! Not so fast though. New research from Linus Pauling Institute at Oregon State University has found that if you want some of the many health benefits associated with eating broccoli or other cruciferous vegetables, you need to eat the real thing.

 

The reason, researchers concluded, is that a necessary enzyme called myrosinase is missing from most of the supplements available on the market. This enzyme -which of course is found in the real food- is needed by the body to utilize a type of phytonutrient called glucosinolates. Glucosinolates are thought to reduce the risk of prostate, breast, lung and colorectal cancer.

 

Bottom Line  

Next time you see pill or liquid forms of vegetables, make the wise decision to skip these faux veggies and head right to the grocery store or farmers' market and get the real thing. Your prostate, breast, lung and colon may thank you in a few years.

October is Breast Cancer Awareness Month

It's the time of year for pumpkins, hay rides... and a mammogram! It's  National Breast Cancer Awareness Month! I am sure you've seen the pink across the countrybreast cancer ribbon; even the NFL is supporting breast cancer awareness by sporting pink accents on uniforms and on the field. 

 

Mammograms are recommended for all women over the age of 40 (or younger if you have a family history) and here is why:

  • Breast cancer is the most common cancer in women in the United States.
  • Breast cancer is the second leading cause of cancer death in women (after lung cancer).
  • About 1 in 8 women in the United States (12%) will develop invasive breast cancer over the course of her lifetime.

One more thing! Don't think that if you're male you're off the hook! One percent of all breast cancers are in men. Everyone needs to pay attention.
