Classic Hummus  

Serves 8 (1/4 cup servings)

 

Ingredients:

3 cups cooked chickpeas or 2 15 oz. canned chickpeas, rinsed and drained twice, hot or warmed in the microwave
1/3 cup lemon juice

1 clove garlic

1/2 cup tahini

 

Directions:

Purée warm chickpeas, lemon juice, garlic, and 2/3 cup water in food processor 3 to 4 minutes, or until smooth, scraping down sides of bowl if necessary. Add tahini, and purée 2 minutes, or until mixture has soft consistency, adding 1 to 2 Tb. water, if necessary. Season with salt and pepper, if desired.

Calories:190, fat 10g, saturated fat 1g, carbohydrates 20g, fiber 6g, protein 8g, sodium 150mg

"Did you hear the one about the..."?
It's time for a laugh! In a recent study,

researchers found that simply anticipating a good laugh can be as healthy as actually laughing. Participants in the study were told that they would be viewing a humorous video in three days. Another group of participants were told nothing. In the days leading up to the video, those who were told to get ready to laugh, had a 39 percent decrease in cortisol and a 70 percent drop in epinephrine, both stress hormones that can be detrimental to health. 

 

We all know that laughing feels good... now we know that it's good for you. Laughter itself can relieve stress and increase blood flow. And being able to find humor in a somewhat serious situation can provide levity, and perhaps, offer a new perspective. Look around and try to find the humor in the everyday- it's healthy!

Walmart™ Joins the Fight Against Childhood Obesity

With childhood obesity on the rise, Michelle Obama's "Let's Move" campaign is pushing restaurants and food retailers in corporate America to make healthier foods more Walmart produceaccessible to America's children. As part of Mrs. Obama's campaign to fight childhood obesity, Walmart™ has agreed to reformulate the products they offer to be healthier and more affordable for Americans. In this initiative, Walmart™ has announced a five-year plan to reduce salt, fats, and sugars in thousands of its products. Walmart™ will reduce sodium in its products by 25% and sugars by 10% and they are pushing their suppliers to do the same. In addition, the prices of healthful foods will be reduced. 

 

Walmart™ has also agreed to develop seals for package labels, making healthy foods easier to identify. The company hopes to increase support for nutrition programs and address the "food desert" issue (urban areas that have far too few retailers selling fresh foods) by building new Walmart™ stores in locations where people have limited access to healthy and affordable foods.  

 

Since Walmart is the largest provider of groceries in the United States, this new initiative could have a profound impact on America's access to healthy foods. Although it is not the only solution to the multi-factorial problem of obesity, it is certainly a step in the right direction.

'Tis the Season...

echinacea...for colds and flu that is. During this time of year, many people turn to supplements to keep illness at bay. One such supplement is Echinacea. It is made from the above-ground herb (aerial) and/or root portions of the plant. Many people take this herbal supplement because it is believed to reduce the symptoms and duration of colds and flu-like illnesses, and there are some heavy hitters supporting this supplement: The German Commission E, World Health Organization (WHO) and Canadian Natural Health Products Directorate have all advocated the use of Echinacea for upper respiratory tract symptoms related to the common cold. However, the results of clinical trials have been mixed.

 
The conflicting results of this herb's efficacy may be due to different studies using different parts and concentrations of the plant. Additionally, the supplements are taken at varying times in the course of a cold. While the jury is still out, it is up to you and your physician to determine if this herbal supplement is right for you.
