Quesadillas with Onion-Cranberry Salsa

 

Serves 6

 

Ingredients:

Quesadilla

1 Tbs. vegetable oil

1 medium green bell pepper, cut into long strips

1 cup frozen corn kernels

1 cup peeled winter squash (cut in 3/4-inch cubes), such as acorn or kabocha

2 or 3 links soy "sausage," sliced 1/4 inch thick

1 tsp. cumin

1 tsp. chili powder

4 flour tortillas

2 cups grated Monterey Jack cheese

 

Onion-Cranberry Salsa

1 1/2 cups finely chopped onion

1 Tbs. sugar

3 Tbs. fresh lime juice (1 lime)

2 Tbs. orange juice

1 to 2 Tbs. red wine vinegar

1/2 cup finely chopped green or red bell pepper

2 Tbs. chopped fresh flat-leaf parsley

1 cup canned whole berry cranberry sauce

 

Directions

Make salsa: In medium bowl, mix onion, sugar and 1/2 teaspoon salt. Let stand 15 minutes. Add remaining salsa ingredients and mix well. Cover and refrigerate until using.

 

In medium skillet, heat oil over medium heat. Add bell pepper, corn, squash and salt and freshly ground pepper to taste. Cover and cook over medium-low heat until squash is almost tender, about 7 minutes. Stir in "sausage," cumin and chili powder. Cook,

stirring occasionally, until heated through, about 5 minutes. Remove from heat.

 

To assemble quesadillas, lightly coat large skillet with cooking spray. Place 1 tortilla in pan and heat about 30 seconds each side. Spread about one-third warm vegetable mixture over half the tortilla. Sprinkle with some cheese. Fold tortilla in half to enclose filling. Cook quesadilla until cheese is melted, about 1 minute each side. Slide quesadilla onto cutting board and cut into wedges. Repeat process to make remaining quesadillas. Serve with salsa on the side.

Dieting: Will You Be a Statistic?

Dieting is almost a way of life for many people; when you're "on" you're on and when you're "off" you're really off and the weight comes flying back on (plus some). Sound familiar? Well for 33% of Americans, this pattern explains their life in 2010. A recent study completed by Baeta Corp, a technology-driven healthcare company, found that 1 of 3 Americans dieted in 2010.

 

When 500 Americans completed an online survey about their dieting history over the last year, one in five (21%) reported they were currently on a diet, another 21% reported that they believed they should be on a diet and another 13% reported that they had abandoned a diet in 2010. When asked why they fell off their diets, the participants responded that they had feelings of: cravings, fading willpower, hunger, stress and lack of timely results that caused them to abandon their weight loss efforts.

 

Often diets fail because, as stated above, you're either on or off. To diet (verb) is to fail. The word diet, a noun, is a way of life and is a way to succeed in your weight loss endeavors. 


 

A diet, or an eating plan, is really just what you eat every day. If your diet consists of foods that are high in fat, sugar and salt, it will be difficult to lose weight, and it's likely that, over time, you will gain weight. If your diet consists of foods that are high in fiber, lean protein and healthful fats, you're likely to lose weight as you will be satisfied with fewer calories.


Bottom Line: This year, instead of jumping on the next diet or fad, try setting up a sensible nutrition and fitness plan that you can stick with all year!

Saving Receipts? Save Your Health Instead


 

receiptSurely you've heard the buzz about the BPA in baby bottles, lined cans and water bottles. BPA, or, Bisphenol A is a synthetic chemical that has been widely used in commercial products including plastic bottles, compact discs and the lining of cans for years.  Recent research suggests that low doses of BPA, which has a similar structure to estrogen, can interfere with normal hormone balance and can cause a range of negative health effects, including reproductive problems and cancer.

 

Now there is a new BPA exposure risk - likely affecting you in your car, your house and your office! They are store receipts. The Environmental Working Group did some research and found BPA on 40 percent of the receipts collected from supermarkets, ATMs, gas stations and chain stores. While it's still unknown how much of the BPA on receipts is transferred through contact, whether on hands, food or utensils, it's likely that receipts are one of the biggest contributors of BPA contamination.

 

Bottom Line: Ask the manager, at shops where you frequent, if their receipts are BPA-free. If s/he cannot answer the question, contact the headquarters.
