SPECIAL AND SAD ANNOUNCEMENT It is with a heavy heart that I announce here that I will no longer be working for Weight Watchers. I cannot give you details but it is a sad thing to have to tell you all this. I do feel, however, that everything happens for a reason and I know this is meant to be.
This newsletter will continue, so no worries on that score, and I will be doing workshops, as well as something new and different which I suspect many of you will find interest in.
Those of you getting this newsletter I consider my friends, either personally , via Facebook, or we have a deeper connection in and beyond the WW meeting room, as I am not able to use my Weight Watchers database for these mailings. I also am sending this for the first time to many new people in my life who have not seen it. If you enjoy it, and so many of you have told me you do, please tell everyone you know to either email me and tell me they want to receive this newsletter, or Friend me on Facebook under Healthy Thoughts / Healthy Actions. Any promotion you can do to help me rebuild my readership will help all of us keep this alive.

Hi Everyone!
So I thought I would begin my newsletter as I usually do, despite the announcement above. I had this written before all the upheaval happened, so felt it only right to send the newsletter as written...and certainly this topic is perfect for me right now.
What I had in mind to write about this week is this business of THANKS-giving. Yes, I know the holiday has passed. But this last week I spent some time thinking about how grateful I am for all that I have, and I thought I would share with all of you the things I am most grateful for:
In no particular order I feel thankful for:
The time and the location I was born into. I never cease to be in awe of all the miracles involved in this particular gift. To be born at this specific time in history and in this amazing country has meant I have had the freedom to become who and what I want to be. I have not had any restrictions put on my education, marital desires or worship. I can come and go as I please and reach for the stars, if I so choose. Where I live: People come from all over the world to be visit here: a little slice of heaven, both from a visual perspective, and the over all feel. My friends and family...and I include all of you in this. I have a huge support system in my life, and it is an incredible blessing. My intelligence and sense of humor: They have saved me many times. My Imagination: It is working overtime now to make up for losing my job. It never ceases to amaze me how adversity sparks my creativity like nothing else can. The kind of work I do: I have been given the gift of being able to help others, and this gives me tremendous joy.
My health: Everyday. as I get a bit older, and feel the occasional creaky knees or achy back I reflect on all I am still able to do, and how I am determined with all my heart and soul to be the healthiest senior I can possibly be. This list could go on and on. I am blessed. And I know you are too. I am hoping you all will sit down this week and write yourself a list of all the gifts you have had bestowed on you. If loss of job, illness or other setbacks keep you from being able to find the blessings, look harder. Despite anything and everything we suffer from or lose, there are still positives in all our lives. If we focus on these we can move forward towards our goals and dreams so much easier. May we all find that truly grateful place in our hearts.

RECIPES FOR THIS ISSUE
DeAnna, all the way from Tucson, sent this yummy sounding sweet potato custard. And because our neighbors gave us a heap o' persimmons I made a fantastic persimmon bread. Enjoy!..

SWEET POTATO CUSTARD
Ingredients:
1 cup sweet potato, cooked,mashed
1/2 cup banana mashed
1 cup of low fat buttermilk
2 tbsp of brown sugar
1 tsp of lemon or orange zest
1/2 tsp nutmeg and or cinnamon
1/2 tsp of salt 2 egg whites (1/3 cup of egg substitute) 1 tbsp of vanilla
1/4 cup raisins 1 Tbl sugar 1 tsp cinnamon
- Preheat oven to 325ºF.
- Spray 1 quart baking dish with oil spray
- Blend all the top ingredients until creamy and transfer to baking dish
- Combine raisins, sugar and cinnamon and sprinkle over top of potato mixture
- Bake for 40 minutes, or until knife comes out clean
Makes 6 servings:
PERSIMMON BREAD
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 t easpoon salt
- 1/2 cup white sugar
- 1/4 cup xylitol (or other sweetener)
- 2 eggs
- 1/4 c up vegetable oil
- 1/4 cup unsweetened applesauce
- 1 teaspoon ground cinnamon
- 1 cup persimmon pulp
- 1 teaspoon baking soda
- 1/2 cup raisins
Directions:
- Preheat oven to 325 degrees F (165 degrees C). Spray oil 2 loaf pans.
- In a small bowl, combine flour, cinnamon, salt, and raisins.
- In a large bowl, blend eggs, sugar, and oil. Mix baking soda into pulp, and add to sugar mixture. Fold in flour mixture. Pour batter into prepared pans.
- Bake for 75 minutes, or until tester inserted in the center comes out clean.
Makes 18 servings:

PRODUCT SUGGESTION
TRADER JOE'S WILD MARINATED SOY GINGER COD
One of my favorite quick meals of late are the frozen marinated fish fillets at Trader Joes. The best one, in my opinion, is the Wild Marinated Soy Ginger Cod. Absolutely delicious!!
Make sure to defrost these naturally: do not soak in hot water or put in the microwave. But if you pull the package out in the morning and then in the evening spray a frying pan and pan fry these lovely fillets, you are in for a treat!
