You're not afraid of the big bad wolf, are you?

During the Great Depression, many people closely identified with the story of the Three Little Pigs. Today, many are comparing that time period with the economic downturn of the present day. Regardless of how accurate the comparison is . . .

"This really is a season of opportunity to rethink our resources and re-evaluate our needs, repair what we can, and rejoice in all that we've been given."

This month's Molly's Digest explores the resourcefulness and ingenuity that are still alive and well in 2009. The special feature for October is:
What Can We Learn From the Great Depression?

So far this month, we have talked chili, cornbread, and soup. Now that my appetite has been satisfied by those delicious, frugal dinners, I want to share with you some of my all-time favorite desserts.

These are not just any desserts, but hot desserts, to be served warm and gooey. They pair perfectly with coffee, tea, and good fellowship!

If you are looking for a little dessert inspiration, be sure to pick up a copy of my E-Book Molly Makes $5 Dinners and $3 Desserts. You will find all the inspiration you need, as well as a frugal price tag! And, if you're strapped for time, check out my $7 Slow Cooker Suppers E-Book. It has a special dessert section as well. Crock pot desserts--what a great way to save time and money. Just imagine walking in the door after a busy day of running errands or watching ballgames, to be greeted by the smell of a yummy dessert baking in the crock pot. YUM!

Fried Apple Pies

pumkin soup

These hot little desserts are so easy to prepare and make a great afternoon snack to share with friends. The kids will love them!

Ingredients:

2 cups all-purpose flour

1/2 cup shortening

1 teaspoon salt

1/2 cup cold water

2 apples

1/3 cup white sugar

1/2 teaspoon ground cinnamon

1 cup vegetable oil

Directions:

Peel and dice apples. Add sugar and cinnamon. Cook in a saucepan on low heat. Cook until soft, then mash with a fork to form a thick applesauce.

Sift flour and salt together. Cut in the shortening. Add water and mix with a fork.

Roll out to about 1/8 inch thickness on a floured board. Cut with a large cookie cutter (4 inches in diameter).

In each round, place 1 heaping tablespoon of fruit. Moisten the edges with cold water, then fold and press the edges with a fork.

Heat the oil in a large skillet on medium-high heat. Fry pies, a few at a time, 2 to 3 minutes on each side; cook until golden brown. Drain on paper towels. Sprinkle with confectioner's sugar.
