Before the school rush begins, take time to relax and unwind from the stress of the bustle of summertime activities. It is important to keep balance within your life and make time to take care of yourself.

  • Relax by the pool with a good book you have been waiting to find time to read
  • Schedule a "spa day" and pamper yourself with a massage, pedicure or new haircut
  • Take a yoga class, to help your mind and body unwind
  • Take a day to go to the park, take a walk and relax in the grass

 It is important to remember to take a moment to breathe to avoid becoming overwhelmed with the stresses of day to day to-do lists. Remembering to take time to yourself will help you keep a healthy body and mind.

Spinach Feta Baked Pizza

Ingredients
  • Flatbread or Naan
  • 1/2 cup Feta Cheese
  • 2 cups fresh baby spinach leaves
  • Sundried tomato pesto
  • 1/2 cup Mushrooms

 

Directions

  1. Preheat oven to 350 degrees
  2. Slice naan or flatbread in half and place on cookie sheet or baking pan
  3. Spread a generous amount of the tomato pesto onto each half of the flatbread
  4. Place spinach leaves onto pizza and cover with feta cheese
  5. Arrange mushrooms evenly on top of cheese and spinach
  6. Bake in oven for 15 - 20 minutes

 

You can adjust this recipe by adding more vegetables, adding more cheese or adding olive oil. This recipe is a great idea for a quick lunch or a fresh change to a pizza dinner.
