December 2011

Greetings!

Which is the better Holiday treat: a slice of pecan pie or a slice of pumpkin pie with a scoop of ice cream? See below for the answer - it might surprise you!

The month of December has many days that celebrate my motto of "There's always room for ice cream and chocolate." A month full of chocolate sounds good huh? Remember "there's always room for ice cream and chocolate."

The Holidays are fully upon us, but it is not too late to develop a plan so that your health and fitness goals are not disrupted; so contact me and schedule an appointment to discover how you can easily incorporate chocolate into your diet, enjoy the holidays, and still achieve your health and fitness goals.

Healthy Regards,

Q & A

I'm hosting a Christmas party at my house. How do I make sure I'm not tempted with all of the food left in the house?

Response: One safe proof idea is to not make so much. When hosting your party, make everyone rsvp to get an estimate of how many people are going to come. This allows you to make around the amount that you need without making too much. Also, it would be good to go buy some small disposable plastic containers so if anyone wants to take something home they can. Try to give away as much as possible and leave a small amount for you and your family.

Featured Recipe
With all the holiday stress, you'll need something hot and quick to keep you going in the morning..

Tex-Mex Omelet Wrap (makes 4 servings)

  • 1 cup diced red and/or green pepper
  • 1/2 cup chopped onions
  • 8 whole eggs (egg whites)
  • 4 (9in) tortillas (whichever brand you prefer)
  • 1 cup shredded pepper jack cheese
  • 3/4 cup salsa

1. Cover large nonstick skillet with cooking spray, heat over medium heat. Add pepper and onion: cook, stirring occasionally, until just softened, 5-7min. Remove from skillet; reserve.

2. If necessary, re-coat skillet. Whisk together eggs and 1/3 cup water. Add to skillet; cook over medium high heat, stirring occasionally, until cooked through, 3-5 minutes.

3. Heat tortillas according to package directions. Dividing equally, place egg, pepper mixture and cheese in center of each tortilla. Fold sides in toward center, roll up tortillas. Microwave on high 1 minute intervals until cheese is melted. Serve with salsa. Salsa can also be added inside the tortillas.
