Spring has Sprung!
We can begin to put away those winter clothes and start grabbing those gardening tools, golf clubs, donning inline skates, getting on a bicycle, or just going for a walk to get some exercise in the beautiful outdoors! With those increased outdoor activities and warmer temperatures, you need to make sure that you are taking in more liquids, especially water, to compensate for fluids lost.
Take time to smell the roses and enjoy the season!

Cucumber Salad
How about a cucumber salad? Start with one firm, large cucumber cleaned well--leave the skin intact for more fiber and nutritional benefits--chopped in bite sized pieces. Add some chopped cherry or grape tomatoes (1/2 cup), try some of the new sunburst grape tomatoes for an added bright taste to your salad. Then add some chopped onion and red or green bell pepper (about 1/4 cup each). Put in a teaspoon or two of chopped dill (fresh or dry) to your taste. Pour 1/8 cup light olive oil or canola oil and 1/4 to 1/3 cup of white vinegar over all those wonderful veggies and mix together well. The easiest way to mix is to put all the ingredients in a plastic container with a tight fitting lid, secure the lid and shake. After mixing, place the salad in the fridge to meld for a few hours before you enjoy a 1/2 cup serving of it. |

Have you heard? - Kathryn and her husband Raymond are expecting a baby in July. She continues to counsel clients, has an active lifestyle and follows a balanced nutrition and fitness plan with baby in mind.
- Kathryn was featured with other local Zumba instructors at a Dallas Mavericks half time performance and is proud to announce she and her baby bump made the big screen multiple times.
- Kathryn has been asked to continue serving on the Advisory Board for the Brookhaven Shape Program (Sharing Healthy Alternatives towards Positive Enrichment).
- Kathryn was a guest speaker this month at Hackberry Country Club.
