With summer upon us, the children out of school, family reunions scheduled, our thoughts turn to vacation and trips. Eating while taking trips can be very challenging. It takes some planning to help the trip feel like a success and not leave you feeling miserable. Advantages of planning ahead of time include arriving at your destination with more cash in your pocket and money to spend on doing something fun or relaxing.

Pack a bag/cooler
Pack a bag/cooler no matter what form of transportation you take.

If driving, this gives you even more freedom and room. Make sure to pack a variety of foods so that any of your texture desires can be met.


For instance:

  • Crunchy: apples, carrots, celery, granola bars

  • Smooth: low fat cheese sticks, yogurt, puddings

  • Sweet: strawberries, grapes, individually wrapped pieces of chocolate or candy

  • Sour: lemon, grape, lime (but not the whole bag)

  • Salty: pretzels, nuts, pickles (be careful with this one, you will want to drink more water and may need to have more rest stops which might add a little time to your trip if you are on a time crunch)

Don't forget your water! When out of your normal routine, many find it hard to keep up with their fluid recommendations, so pay special attention to meeting your water needs.


Check in with yourself
Pay attention to your hunger/fullness/satiety signals

Some people associate traveling with struggling with eating. This can often be because people are not paying attention to their hunger/fullness/satiety signals. Changes in schedules and/or lack of schedules can contribute to this as well as energy expenditure by changes in activities. Make sure to stop and check in to see how your body is feeling, does it need fluids, sleep or food?

Recipe to try
Here is a recipe off of the Fiber One Original Box with my recommendations.

I tried this recipe, but saw the servings produced was low, so I doubled the recipe when I prepared it to maximize my time spent. I found that the cookies come out pretty moist. One variation of the recipe is to use the dried fruit bits mix instead of only cranberries and raisins. I didn't chop my fruit, as I like mine chunky. Don't just eat them for breakfast. I prefer them as a snack!

Hungry Girl's Grab and Go Breakfast Cookies

  • 1 T. raisins, chopped
  • 1 T. dried cranberries, chopped
  • ¼ c. Fiber OneÒ Bran cereal (original)
  • ½ cup old fashioned oats
  • ¼ cup plus 2 T. whole-wheat flour
  • ¼ c Splenda No Calorie Sweetened (granulated)
  • 2 T. brown sugar (not packed)
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • 1/8 tsp salt
  • 2 tsp. sugar-free vanilla-flavored powdered creamer
  • 1/3 cup pureed peaches (often found in baby food aisle (I just used baby food peaches))
  • ¼ cup canned pure pumpkin
  • ¼ cup fat=free liquid egg substitute

Directions: preheat oven to 375
  • In a food processor or blender, grind Fiber One to a breadcrumb-like consistency.
  • In a large bowl, combine Fiber One crumbs with oats, flour, Splenda, brown sugar, baking powder, cinnamon, and salt.
  • Mix well.
  • In a medium bowl, dissolve powdered creamer in 2 T of hot water.
  • Add peaches, pumpkin, and egg substitute, and mix thoroughly.
  • Add this mixture to the large bowl and stir until completely blended.
  • Slowly sprinkle chopped raisins and dried cranberries into the batter and stir.
Spray a large baking sheet with nonstick spray and spoon batter into 4 evenly spaced mounds. Spread batter out a bit with the back of the spoon. Bake in the oven for 12-14 minutes, until just slightly crispy. Allow to cool slightly on the sheet. Grab and go!
