Hello!  Fruit & Veggies 
 
A belated "Happy Mother's Day" to all moms out there. Mothers provide loving care, mentally and physically, to all family members. Remember to take care of yourself so that you are able to do that. If you are not a mom you had one and I hope that you were able to enjoy the day with family and friends.
 
This month I have included money saving tips and budget friendly pantry staples to assist in caring for your family and/or you. Take time to enjoy my recipe of the month.

 Money Saving Tips
Tips to save a little money during this time of economic structure! 
  • Buy in bulk.
  • Cook more at home.
  • Utilize your Farmer's Market. 
  • Opt for tea or flavored water with fruit for a fresh new taste (cheaper than sodas or the fancy mixes).
  • Pack more sandwiches versus frozen dinners.
  • Watch for sales on items.
  • Use the stores' card (you get additional coupons).
  • Combine coupons and sales for maximum savings.

 Budget Friendly Pantry Staples
Keep on hand these budget friendly pantry staples. 
  • Brown rice
  • Frozen vegetable 
  • Pasta
  • Potato (one of my favorite meals is a baked potato, with steamed broccoli and low-fat cheese of top)
  • Canned tuna or salmon
 Recipe: Sauteed Cherry Tomato Couscous
Original recipe from Nature Sweet, modified slightly.
  • Package of couscous (I used a box and made according to directions but left out the flavoring packet.)
  • 1 T extra virgin olive oil
  • 2 cups NatureSweet cherry tomatoes cut in half
  • 1 cup fresh spinach leaves, torn
  • 1/4 cup chopped walnuts
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 1/2 cup chopped fresh cilantro
  • Freshly ground pepper to taste
  1. Cook couscous according to directions.
  2. Heat oil in large saute pan over medium high heat.
  3. When hot, add tomatoes, spinach leaves, walnuts, garlic and shallot.
  4. Saute for 3 minutes or until tomatoes start to soften.
  5. Add cilantro and toss well.
  6. Season with pepper.
  7. Fluff couscous with a fork and transfer to a serving bowl.
  8. Add tomato mixture and gently combine.

Serve at room temperature.
