Cow of the Month

The February Cow of the Month is Ouchy. This 2-year-old has had one calf (a heifer named Oofda).

Ouchy is a very youthful cow. She looks outstanding and is slightly above herd average on milk production. She handles very nicely and doesn't cause any problems.

When Ouchy was born, her mother (Ohmy) had a large abscess on her udder. It was probably very painful so we helped the sore heal and it was all better in a few weeks. That's why we gave her calf the name Ouchy!

Brrr...It's still cold out there!
 
Just a reminder that milk can freeze if left in cars or garage refrigerators during periods of extreme cold. Milk that has been frozen is safe to drink, although texture and flavor may be affected. Heavy cream that has been frozen may not whip but is safe to use in other cooking/baking recipes.

This month we are featuring a French dessert - French Chocolate Cake - from a Swedish cookbook! (Adapted from Swedish Cakes and Cookies)

 

Ingredients
  • 6 ounces Hansen's butter (3/4 cup) plus 2 tablespoons extra butter 
  • 11 ounces semi-sweet or bittersweet chocolate, divided into 6-oz and 5-oz 
  • 3/4 cup sugar
  • 3 eggs
  • 2/3 cup all purpose flour
  • 1/2 tsp instant coffee granules
  • 1/3 cup Hansen's heavy cream

Instructions

For the cake: Grease and flour a 10-inch springform pan. Melt 3/4 cup butter in a large pan and remove from heat. Add 6 ounces of the chocolate and stir until melted. Stir in the sugar. Separate the eggs. Add the yolks to the chocolate mixture, using a hand mixer to beat them together until fluffy. In a separate bowl, combine the flour and coffee granules. Add to the chocolate/egg yolk mixture. Mix well. In another bowl, beat the egg whites until stiff and fold into the chocolate mix. Pour into the pan and bake on the lowest oven rack at 350 for 25 or 30  minutes. The cake will still be a bit moist in the middle, not completely dry like you might usually expect. Loosen the sides a bit, but leave the cake in the pan to cool completely.

 

For the chocolate glaze: Once the cake is cool, scald the cream (this means to heat slowly in a saucepan until it's almost - but not quite - boiling; look for it to be bubbling a bit on the sides but not boiling). Break the remaining 5 ounces chocolate and the remaining 2 tbsp butter into the hot cream and stir to melt until smooth. Let it cool a bit and thicken, pour over the cake, and smooth with a spatula. It will drip over the sides, but will form a nice smooth layer.  

 

Serve cold, with raspberry whipped cream for Valentine's Day! Whip 1 cup of Hansen's heavy cream. Once the cream is whipped, stir in a few spoons of your favorite raspberry (or strawberry) preserves. It will be nice and pink! Top the cake with it, or serve alongside.
