Brrr ... it's cold!  
A reminder that milk can freeze if left in cars or garage refrigerators during periods of extreme cold. Milk that has been frozen is safe to drink, although texture and flavor may be affected. Heavy cream that has been frozen may not whip but is safe to use in other cooking/baking recipes.

Raw milk debate
The Hansens stand behind the ban on the sale of raw (non-pasteurized, non-homogenized) milk. Check out this article in the Waterloo Courier Jan. 1.

An excerpt: "We have no scientific evidence that consuming raw milk provides any advantages over pasteurized milk and milk products," said infectious disease expert Dr. Yvonne Maldonado. "But relative to the amount of raw-milk products on the market, we do see a disproportionately large number of disease and illnesses from raw milk."

Cow of the Month

The January Cow of the Month is Matilda. She was born Oct. 4, 2008, and has had 4 calves, all heifers - which is what we like! Her daughter's names are Munchy, Miggles, Mila and Mummy.

Matilda is one of the sweetest cows in the barn. She is mild-tempered and lets anyone pet her. She also knows how to milk! Matilda holds a production record of 97,938 pounds of milk in 1,045 days. That's almost 94 pounds or 11 gallons a day of the good stuff.

Matilda is also polled, which means 50% of her offspring will be born without horns.

Iowa Swabian Hall Pork -

Hansen's Farm Fresh Dairy Outlet and Moo Roo are proud to announce that we are introducing Iowa Swabian Hall pork from Rustik Rooster Farms. This is the world-famous pork produced by Carl Blake that got him attention from the Des Moines Register, New York Times, and the Colbert Report. The Iowa Swabian Hall pig is bred for its perfect balance of fat and flavor. We are selling bacon, chops, hams, roasts, and other cuts.

This month, we are also introducing a new line of beef in our stores. Doty Angus Cattle Company in Malcom, Iowa, produces all natural black angus beef. The cattle are farm raised with no added hormones, steroids or antibiotics. We are carrying ground beef, short ribs, chuck roast, top sirloin, NY strip, ribeye, and tenderloin filet steaks. We've also got jerky and meat sticks for sale. If you've never had 100% angus beef, it's truly remarkable - try some this month. Super Bowl snack ideas

 

The Superbowl is Feb. 2, and there are many ways to pull together delicious snacks and finger foods with products from Hansen's Dairy Outlet and Moo Roo. As an added bonus, buy two 1-pound blocks of cheese this month and get a free Hansen's Dairy cheese slicer! Here are a few snack ideas:

 

Nachos
Pick up a bag of Whole Grain Milling Company organic blue corn chips, one pound of Hansen's ground beef, a jar of La Casa white queso, a jar of La Casa or Kramer's salsa, and a package of Cedar Grove medium cheddar cheese from our stores. Brown the beef in a skillet until done. In a large bowl, mix the browned beef, queso, and salsa. Arrange the chips on a large platter, top with the beef mixture, and top that with grated cheddar cheese. If you like, add chopped onions, cilantro, tomatoes, and avocado.

Cheese plate
Our stores have a wide selection of high quality Wisconsin cheeses, and (of course) our own cheese curds. Browse our selection and choose two groups of cheeses - one "traditional" and one "fun." In the traditional group, choose something like cheddar, havarti, and swiss. In the "fun" group, try some of our fruit cheeses or the bread cheese. By having two cheese platters, you'll satisfy the traditionalists and the adventurers!

Cheese balls, jerky, and hummus
We have several products that are party ready right from the get-go. Neva's cheese balls are ready to go - bring to room temperature on a platter with crackers and serve. Beef jerky and meat sticks make quick snacks. The Oasis Hummus is a delicious and healthy snack, great with veggies, pita chips, or crackers.

This recipe for Beef Short Ribs is adapted from the Pioneer Woman Cooks. Enjoy! 

 

Ingredients
  • 8 Doty Angus
    beef short ribs
  • Salt and pepper  
  • 1/4 cup flour
  • 6 pieces bacon, chopped
  • 2 Tablespoons olive oil
  • 1 whole medium onion, diced
  • 3 whole carrots, diced
  • 2 whole shallots, peeled and diced (or another small onion, diced)  
  • 2 cups red or white wine (optional - if you don't want to use wine, you can substitute two cups of additional broth or 2 cups of any beer) 
  • 2 cups beef or chicken broth (enough to almost cover ribs)
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Instructions

Salt and pepper the ribs, then coat them in flour. Set aside.

 

In a large dutch oven, cook the bacon over medium heat until  crispy. Remove from the pan and set aside. Do not discard grease.

 

Add olive oil to pan with the bacon grease, and raise heat to high. Brown the ribs on all sides, about 45 seconds per side. Remove ribs and set aside. Turn heat to medium.

 

Add onions, carrots, and shallots to pan and cook for 2 minutes. Pour in wine (or other liquid) and scrape bottom of pan. Bring to a boil and cook 2 minutes.

 

Add broth, 1 teaspoon salt, and 1/2 teaspoon or so of freshly ground black pepper. Taste and add more salt if needed. Add ribs to the liquid; they should be almost completely submerged. Add thyme and rosemary sprigs (whole) to the liquid.

 

Put on the lid and place into the oven. Cook at 350 for 2 hours, then reduce heat to 325 and cook for an additional 30 to 45 minutes. Ribs should be fork-tender and falling off the bone. Remove pan from oven and allow to sit for at least 20 minutes, lid on, before serving. At the last minute, skim fat off the top of the liquid. (You can also refrigerate mixture, then remove solid fat from the top.)

 

Serve with rice, mashed potatoes, scalloped potatoes, creamy polenta, or any other side dish you love!
