Now selling bison meat
|
|
Hansen's Dairy Outlet in Cedar Falls is now carrying grass-fed buffalo meat from Jim and Tammy Wedeking of Timber Ridge Bison in Waverly. Here's what Tammy told us about their bison:
"Our bison are locally grown and naturally raised without the use of growth hormones or antibiotics. Our herd management program consists of rotational grazing so our bison always have fresh deep grass to graze in, just as they have for centuries. This provides you with a natural food that hasn't been genetically altered or processed."
The Outlet is carrying frozen ground bison and ribeye steaks. Buffalo meat is 98% lean. It is low in fat and calories, high in protein and iron, and has a rich flavor. Moo Roo will also be carrying the meat soon as well. We certainly enjoy the meat, and we hope you do, too!

Cow of the Month
|
|
Renee
|
December's Cow of the Month is Renee. She was born Sept. 18, 2007. She has given us three bulls in her calving years. Renee is a fine producer - currently she is milking 150 pounds a day.
Today we are using one of her bulls, Roger, to breed some of our cows. Generally we use artificial insemination for our breeding and sell all the bulls born here to beef farms. But once in a while we raise a bull for natural breeding and use him if AI has been unsuccessful. Hopefully Roger will pass on the successful production traits of his mother. Next time you tour the farm see if you can spot Roger. He is the only male in a pen full of females. Livin' the dream.

Bread pudding makes a delicious (and easy) weekend breakfast or brunch. Adding Hansen's eggnog gives the dish a unique flavor!
By the way, look for a special edition of the newsletter in the next week. We have compiled customers' recipes that use Hansen products and will share them with our loyal fans. Great ideas for your holiday meals!
Eggnog Bread Pudding
4 eggs
1 cup Hansen's milk (preferably whole)
1 1/4 cup Hansen's eggnog
1 tsp vanilla
1/2 tsp cinnamon
1/4 tsp cardamom
4 to 5 cups day old bread, in cubes (French bread is great, but rustic bread or cinnamon swirl bread would also work)
1/4 to 1/2 cup raisins, dried apples, craisins, or other dried fruit
Hansen's butter, for greasing the pan
Preheat oven to 350 degrees. Butter a 9x13 baking dish (2-quart). Put the bread cubes in the baking dish and sprinkle the dried fruit (if using) over the bread. Whisk together the eggs, milk, eggnog, and vanilla. Pour over the bread and fruit in the pan. Sprinkle with the cinnamon and cardamom. Let stand for 15 to 30 minutes on the counter, pushing the bread cubes into the egg mixture every now and then. Bake for 45 minutes, or until the middle is set and the top is golden brown. Serve with your favorite topping - Hansen's fresh whipped cream, fruit preserves, maple syrup, or Hansen's butter.
Do Ahead: After you've assembled the bread pudding, you can cover the dish and let it sit in the refrigerator overnight, if you wish. Let it warm up to room temperature on the counter for 30 to 60 minutes, uncovered, before baking it in the morning.

Sounds of the season

Synopsis: A harried mom, Kelly, frantically pushes through the rush of the Christmas season until an accident forces her to stop dead in her tracks. Told with poignancy and humor, this musical will entertain and inspire.
Sadie Hansen will also be performing in the Waterloo Community Playhouse's musical "Annie" during the month of December. Visit the web site for more details.
