Reminder: You can leave butter out on your counter. Just remember to cut the butter in your tub into quarters and only keep one quarter out at a time. Refrigerate the remainder. Unsalted butter should remain frozen until you are ready to use it. No salt means no preservatives!
Using the butter keeper (pictured above), the butter is packed in the top part and water is added to the bottom half (about 1/2 inch to 3/4 inch). The water seals the butter. Serve from the top and avoid digging the butter out. If the butter falls into the water, just repack it. Change the water daily.

Cow of the Month
Bethany
This issue's Cow of the Month just calved today (March 1) for the third time. Here Bethany is shown right after the birth with her new baby boy. Bethany is 4 years old and is a real treat to have in the barn. She has a wonderful disposition and great potential to produce a lot of milk.
This youthful-looking cow has a very nice udder, great mobility and a strong front-end. Bethany should be around for a very long time.

Ice cream temperatures
Did you know? Hansen's ice cream is like "homemade," and it will freeze hard. The temperature at Moo Roo freezers are kept at -20 F. Your home freezers are probably about 0-10 degrees. The dip cabinet runs about 14 degrees so the ice cream scoops more easily.
