Super Sunday snacks
|

We have lots of snack ideas for your Super Bowl enjoyment: cheese curds, assorted cheeses, summer sausage, smoked beef, brats, ground beef patties, baconburgers, crackers, granola, baked goods, pigs in a blanket (Moo Roo only), ice cream, candy and popcorn. Stop in and stock up!
Here are two great dip recipes using Hansen's dried beef:
Dried Beef Pickle Dip: 3 oz Hansen's smoked dried beef, 8 oz cream cheese, 1/2 cup sour cream and 3/4 cup coarsely chopped dill pickles. Cut up the beef and pickles, stir in the softened cream cheese and sour cream and top with a little ground pepper. Serve with chips, crackers or fresh vegetables. Yum!
Reuben Dip: Mix 1 jar/can drained sauerkraut, 1 pound shredded Swiss cheese, 8 oz cream cheese, 8 oz sour cream and 1/2 to 3/4 cup chopped Hansen's dried beef. Heat in a crock-pot and serve on rye bread.

Cheese of the Month

Cedar Grove Extra Sharp Cheddar Cheese
|
Extra Sharp Cheddar Cheese is so named because it is aged for at least 12-24 months. The older the cheese, the sharper the taste. There are even 6-year and 10-year cheddars available from some cheese factories. The cheese becomes drier and melts easier as it ages. If you notice white on the cheese itself, this is the salt bleeding through. Sometimes air can develop and the bag may be puffy. Mold may develop on this cheese, but that portion may be trimmed off and the rest of the cheese is fine.
This recipe uses extra sharp cheddar cheese to give depth and richness to traditional mashed potatoes.
Cook time: 10 minutes; total time: 25 minutes
Ingredients:
2 pounds russet potatoes, peeled, cut into chunks, and cooked until tender
3/4 to 1 cup hot milk
2 tbsp butter
1/2 tsp onion powder
1 tsp salt, or to taste
1/2 tsp ground black pepper
1 cup shredded extra-sharp cheddar cheese
1 tbsp chopped chives
Preparation: Drain cooked potatoes well and return to the pot. Add milk, butter, onion powder, salt, and pepper. Mash well. Stir in cheddar cheese. Gently re-heat mashed potatoes, stirring constantly, until all of the cheese has melted. Pour into serving bowl and sprinkle with chopped chives. Serve immediately. Recipe is easily multiplied for larger crowds.

Mesha
|
February's Cow of the Month wears her heart on her head. As you can see from the photo, Mesha shows love all year round! Mesha was born Jan. 9, 2009, and she is also special this month because she just became a mother for the first time on Sunday. Mesha wants to wish everyone a Happy Valentine's Day!

Ice cream container problem

|
We are aware that there have been some complaints about the broken ice cream containers. At the time the containers were filled, we did not realize there was a problem. We contacted the company to inform them of the situation. The containers have been used up but there may still be some flavors out there in the bad containers, so we apologize for the inconvenience.

Food for thought

At the USDA/HHS Press Conference, the Dietary Guidelines for Americans stated that there were
four nutrients lacking in the American diet. Three of those are calcium, vitamin D and potassium. Milk is the No. 1 source for these nutrients.
10% of the calories in the American diet come from dairy. Is dairy the cause for obesity?
