Cow of the Month

Othello
Othello

Othello was chosen as March Cow of the Month because she was born on St. Patrick's Day, March 17, 2005. In her lifetime she has produced 37,372 pounds of milk. She is also 3-for-3 in having heifers for us.

Othello is a quiet cow and minds her own business. Even after having three calves she still looks very youthful and enjoys kicking up her heels on a sunny day in the barnyard. Othello is anxious for spring!

Delicious recipe

Easy manicotti

Forget about trying to fill manicotti pasta using a pastry bag. Just stuff a piece of string cheese in the middle! Here's the no-fuss recipe using cheese and hamburger that can be found at our stores:

Cook as many manicotti noodles as you would like according to the directions. Meanwhile, brown 1 pound of hamburger.

Preheat oven to 350 degrees. Put some of your favorite pasta sauce on the bottom of a 13 x 9 pan and place cooked manicotti on top. Stuff 1 piece of string cheese in each tube, then put more sauce, the browned hamburger, and shredded cheddar or mozzarella cheese on top. Bake at 350 degrees for 20 minutes or until all the cheese is melted.

Did you know?

Calcium fact

According to Midwest Dairy, it would take 3.5 pounds of cheese, 27 oranges, 50 tomatoes or 50 slices of wheat bread to equal the calcium content of a single quart of milk.

A big thank you

Jeanne Hansen wants to thank everyone for the kind words and prayers she received during the past couple weeks while recovering from knee replacement surgery. She hopes to be back up and running around soon!
