Oops! I forgot to send the newsletter out yesterday...Easter week was a bit distracting!! So sorry! Here it is a day late...but filled with good stuff as usual! 


 
I have been producing this newsletter since 2007. That is nine years of writing these "blogs", as they are now called. I love compiling the content of this monthly, and sharing all the information, recipes, food ideas, art, and inspiration. To me it is such a comfort to know I have not lost you all: that somehow we have stayed in touch through the miracle of the internet.

But here's the conundrum: I have absolutely no idea what to write about anymore. I realize that after nine years, seven of which I produced this bi-monthly, I have said every damn thing I could say about weight, health, fitness, internal struggles, and anything even vaguely related to it. You have read my stories multiple times.

Many of you reading this have great stories of your successes, and maybe your failures, in this realm. Many of you enjoy writing, and some are professional writers. I would like to open this blog space up to anyone who would like to share their experiences with weight, activity, body image, personal transformation or frustration: anything that would pertain to the newsletter focus.

Please send pieces to me soon (just reply to the newsletter) and let's open up this forum and allow it to have a broader voice. I will publish one a month. I will continue to publish snippets of my book now and again as well, so I am not going away.

And thank you all for being such loyal friends and readers. I look forward to reading and publishing your stories
RECIPES
So many recipes find their way to me via Facebook or Pinterest. Here are two which came to my inbox in recent weeks. They both sounded yummy and could be made lighter by switching out one ingredient in each. In these written recipes I have modified them, but I am also including videos which indicate the full ingredients.

No Carb Cloud Bread
Ingredients
  1. 3 eggs, separated
  2. 3 Tablespoons low fat cream cheese (Room temp)
  3. ¼ teaspoon baking powder (or cream of tartar)
  4. Optional: 1 Tablespoon Honey or some natural sweetener, salt, garlic powder, rosemary


Instructions
  1. Preheat oven to 300 degrees Fahrenheit (150 degrees Celsius)
  2. Separate the eggs, there must be no yolk in the white.
  3. In one bowl, mix together the egg yolks, cream cheese and honey until smooth.
  4. In the second bowl add 1/4 teaspoon of baking powder (or cream of tartar if you prefer) to the whites and beat the whites on high speed until they are fluffy, form a nice peaks and hold their peaks (at least 5 minutes based on your mixer). Beat the egg whites until like a whipped cream consistency.
  5. Slowly fold the egg yolk mixture into the egg whites and mix carefully, you don't want to break the fluffiness of the egg whites too much.
  6. Do this as quickly as possible or the mixture may start melting - Spoon the mixture into 10-12 even rounds onto lightly greased baking sheet, sprinkle with rosemary or your favorite spices and put it in the oven.
  7. Bake for 17-20 minutes on the middle rack. Then broil (cook the top) for 1 minute and watch it until they become nice and golden brown. At this point make sure you watch them so they don't burn
  8. Remove from the oven and let cool and enjoy!

Peanut Pasta Salad 

Ingredients:

1/2 cup creamy peanut butter (use Better Than Peanut Butter for 1/2 fat)
1/4 cup soy sauce (use Tamari for wheat free)
1/4 cup rice vinegar
1 Tbsp. sesame oil
2 Tbsp. Sriracha 
1/4 cup water
1 Tbsp. ginger /minced
3 cloves garlic /minced
2 Tbsp. brown sugar
1 box whole wheat, brown rice, quinoa linguine or spaghetti
1 cup carrots /finely cut into matchsticks 
2 cucumbers /shaved using vegetable peeler 
1 red bell pepper /thinly sliced into strips
1 yellow bell pepper /thinly sliced into strips
1/2 cup green onion /sliced
1/4 cup cilantro /chopped
1/4 cup peanuts /chopped 

Directions: 
Bring a large pot of lightly salted water to a boil. Cook pasta according to instructions on the box. Drain and run cooked pasta under cold water to cool. 

In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, Sriracha, water, minced ginger, minced garlic, and brown sugar. 

Combine pasta with sliced vegetables. Pour the dressing over the pasta and vegetables and mix well. Cover and chill for at least one hour before serving. Garnish with chopped cilantro and peanuts. Enjoy!


Dates: Healthy or Sugar Bomb?

I love dried fruit...a little too much. I think this is a good summary of what makes dried fruit, and especially dates, a not so great choice for sweetening or for snacking.

Splenda Linked to Leukemia

Most of you have heard me rant for years about non-nutritive sweeteners like Splenda, but now there is definitive proof that it is cancerous. Please, if you are still using the stuff, throw those packets away. You are better off having real sugar. This does not help you lose weight, and clearly it can kill you.

Life Coaching / Weight Counseling

As a certified Life Coach I work with all issues, not just weight and body. We explore your dreams and desires and the ways you are stuck, with the goal of moving you forward. Coaching can be done in person or on the phone.

Weight Counseling is designed to help you figure out an eating plan which will help you lose weight, and which will work for you for the rest of your life. No pills or special meals, this is learning how to really eat in a healthy way, cook for yourself, and begin some physical activity. Generally Weight Counseling is done in person, but I have done it on the phone as well.
