A FEW NOTES ABOUT THE NEW FORMAT AND MY WEBSITE...
At Constant Contact they have been bugging me to convert to a mobile-friendly format, so here we go. Hope this makes the newsletter more accessible to people.

I also have decided to let go of my Healthy & Happy website for the time being, until I can redo it in a way which I think is more functional. I will keep it up through the end of the month. Meanwhile my monthly blog will be printed in full in this newsletter, as will the recipes. If any of you relied on the website for certain recipes please let me know which ones you need and I will send them to you.


New Year, New Promises
 
Here we are again. It is coming to the end of another year. We made it, maybe barely for some of us, but yay! 2016 awaits us!

What does a new year mean to you? For some of us it is just another date on the calendar. Maybe we get some time off from work, or we see our families, but other than that it has no special significance. For others of us there is a line that gets drawn on December 31st and when we step over it, to January 1st, we get to start again. I am one of those thinkers. I like new beginnings: second (third? fifth? hundredth?) chances.

Does it seem wrong or bad to continually look to the beginning of the year as the time to begin again: whatever that thing is you somehow did not do the previous year? Is it foolish to think that THIS will be the year we finally lose the weight or join the gym and really do it, or get into cycling or.....?

I don't think it is foolish in the slightest. There has to be a point at which we find the will to act. It is there, inside every one of us. There is something that triggers us, and then we begin to think about it. Eventually we do the research. And then finally, one day we step out the door into a new world: a world of action, not just dreams and plans.

When this happens is different for each of us. For some January 1st is the new beginning. They set their goals and begin. But if the division between last year and this one does not resonate then it probably isn't wise to choose this time to make change, even if everyone around you is hopping on the bandwagon. Because if your heart is not in it, and you're doing it simply because that date is there taunting you, then I suspect you might not get the results you're dreaming about.

The last time I decided to join Weight Watchers, which was the one that stuck, thank goodness, was in February 2001, not in January, despite always using that time frame in the past. I thought about it in December: so much so that my Christmas dinner plate was heaping, as though it was the "Last Supper". I assumed I would join the first week in January, but it came and went without much change. As did the following three weeks, where I contemplated, hemmed and hawed, but continued stuffing my gob. At the beginning of February I got a rude slap in the face: the result of stepping on a scale, which I had avoided for months. That was the moment that turned my life around. I agreed to join my neighbor who had been urging me to come with her, and almost fifteen years later here I am.

So when January 1st comes around, hallelujah if it grabs you by the arm and pulls you into action. Run with it. But if your motivation is still not quite where it needs to be to undertake the steps needed to get healthier, don't beat yourself up, and/or attempt to charge forward without that key element. Instead trust that it will find you, and do what you need to do to make that happen. Maybe that will be going out with friends who are in better shape, seeking counseling, reading something inspirational, or like me, you could step on the scale. Whatever works.

RECIPES
stuffed pork tenderloin

You are getting this a few days before Christmas, so here are a couple of recipes which are elegant and delicious if you're still debating what to serve for the big meal!





Stuffed Pork Tenderloin

Ingredients:
  • 2 pork tenderloins, trimmed of fat
Stuffing:
  • 1 Tbsp olive oil
  • spray oil
  • 1 sweet onion, finely chopped
  • 12 mushroom, chopped
  • 1 apple, chopped
  • 2 Tbl chopped garlic
  • 3/4 cup dried sweetened cranberries
  • 1/2 cup finely chopped walnuts or pecans
  • 1/4 cup breadcrumbs
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • salt and pepper to taste
Marinade:
  • 1 cup orange juice
  • 1/4 cup orange marmalade
  • 1/4 cup maple syrup
  • 1/8 cup balsamic vinegar

 

  • 1 Tbsp flour
  • 2 Tbsp orange juice

Directions:
1. Preheat oven to 425. Spray a roasting rack with oil and place over a roasting pan.
2. Heat oil in large saute pan and saute onion, mushrooms, apple and garlic until browned. Mix all the rest of the stuffing ingredients into the pan and blend well. Set aside.
3. Split pork tenderloins the full length, being careful not to cut all the way through. Lay a piece of saran wrap across the top of the butterflied tenderloin and pound with the flat side of a meat pounder until the tenderloin is about 1/4" thick or less.
4. Place the stuffing along the center line of the tenderloin and carefully roll it into place. Bind the sides with toothpicks or wrap with string. Place wrapped tenderloins in a shallow dish. (see above for visual of how it should looked wrapped)
5. Mix the cup of orange juice, orange marmalade, maple syrup and vinegar together, adjust to taste, and pour over tenderloins. Marinate for at least 2 hours, basting as needed.
6. Place tenderloins on roasting rack and save the marinade. Put in oven at 425 for 20 minutes to brown the top. Lower temperature to 325 and bake for another 15 minutes, or until it reaches 140 degrees. Watch carefully. Do not over-bake. Baste as needed.
7. Heat the marinade in a small saucepan and while it is heating mix the flour and orange juice together until it is creamy and add to the heating marinade. Bring to a boil and let thicken. This may be poured over the top of the slices.

Each tenderloin will yield approximately 8-10 slices.

Greek Beef and Eggplant Stew


This is not what one would expect at a holiday meal, but the flavors are so unusual and it is super easy to throw into a crockpot and just let it cook while you get everything else done. It will get rave reviews.

Ingredients:
Directions:
  1. Wash the eggplant, then top and tail.
  2. Don't bother to peel, just cut into 1 inch thick segments.
  3. In large skillet heat the spray oil brown the beef, onions, carrots, garlic and eggplant until dark golden-brown. When browning the eggplant add the 1/8 cup oil.
  4. Place all in crock pot.
  5. Combine the beef stock with the tomato paste, water, vinegar, sugar, spices, and salt and pepper to taste, and stir it into the meat/veggie mixture.
  6. Cover and cook on high heat for 4-6 hours.
  7. Serve over couscous, rice or pasta and top with feta cheese if desired.
