These tiny seeds (approx 1 mm in diameter) with a mild nutty flavour originate in Central America, where they were harvested and eaten as a staple by the Aztecs in pre-Columbian times, and served as an important source of nutrition for warriors on long hunts.
Dietary benefits of chia seeds (Salvia hispanica sp) inlude:
1. High Protein Content: 20% protein by weight, and a complete vegan source of protein, containing all eight essential amino acids.
2. Fibre: 27% fiber by weight, including 5% soluble fiber, forming a high-viscosity mucilage that may confer more health benefits than low-viscosity mucilages from fibres such as guar and beta-glucan).
3. Omega-3 Fatty Acids: highest levels of Omega-3 fatty acids by weight of any plant source (17.55% vs 6% in flax), and converted EPA/DHA levels may match those supplied by salmon.
4. Antioxidants: chlorogenic acid, caffeic acid, myricetin, quercetin, kaempferol. High levels of these in chia means that chia seeds can be ground without risking rancidity of the Omega-3, an advantage over flax seeds.
