And just like that it's February.  Remember those New Year intentions you had just set?  Where are they now?  For many of you they might be long gone after a month's worth of life and work getting in the way.  So many of us tend to postpone the most important things in our life because we let all of the "busyness" get in the way.  This causes the great fire in your belly that had you extremely excited just over 30 days ago to quickly diminish into a small ember of "I'll do that later when I have time."  Today is the day to re-create that spark.  Today is the day to re-commit to your goals so you can make this year your best year yet. 

 

The only way this can be done is to pour your heart into everything you want to accomplish and make it happen.  Pouring your heart into your goals and aspirations significantly increases your chances for success.  Pouring your heart out means sharing with others exactly what you want to do while holding yourself accountable on a day-to-day basis.  What better way to do this than to write or journal about your desired outcomes and when you are ready put it out there for the world to see.  Yes, this could be scary, but it could also be one of the greatest things you've ever done.  It could be another stepping stone toward achieving ultimate success.  All you have to do is put it out there.

February 5th: FunkFit Sports Tribe begins: Come participate as the first Ultimate Frisbee season kicks off. Bring out the athlete inside and motivate your FunkFit family to learn, grow and play! February 9th:  Ashtanga Vinyasa Yoga! Improve sleep, decrease blood pressure, reduce stress, and improve flexibility are just a few of the many benefits of yoga. Join one of the Gilbert Yogi's every 2nd Saturday of the month at 11AM for this 75-minute class. $5 donations appreciated. This event is open to the public, all non-members welcome.

 

February 14th: <3 Valentine's Day <3. Every day, your heart beats about 100,000 times, sending 2,000 gallons of blood surging through your body.  Join us for a heart-pumping cardio blasting-funky workout before you and your loved one head out for a date. 

 

February 15th: Spring into Action with the 21 Day Jump Start Challenge: We're rolling out our first ever complete nutrition plan to make your success a reality while you transform your body, increase your energy, and improve your workouts. Coaches will be available Friday morning at 7am, 8am, and 6pm as well as Saturday the 16th at 8am & 9am to do your starting measurements. 1st, 2nd and 3rd place winners will receive cash $$ money $$.    Register here or click for more details.

 

February 16th: Race Day Prep presentation. Coach Joe answers common questions relating to marathon and long distance running. He will also go over the details of his new Race Prep program that will teach you the basics. It is a comprehensive program that is great for a first race or an experienced racer. February 19th: Nutrition University: "Protein 101." This is the third workshop in our series about the macronutrients. Participants will be able to calculate required amount of protein intake for their personal fitness goals. Educate yourself with Coach Paige at 6:00 pm. This workshop is free and open to the public. *Receive 15% off all protein supplements after attending this workshop.

 

February 23rd:  Nutrition University presents: "Save money, improve your health and give back to the community by shopping local." Participants' will be joining Coach Paige and director Jessa Koppenhöfer for a journey over to the Gilbert Farmer's Market. Meet at 8am at the studio. Friends, family, kids, and even pets are all welcome! Open to the public but don't forget to bring your wallet if you plan on purchasing anything from the market.

 

February 25th:  "Put Your Heart Into It" seminar. Learn how to maximize your training potential with Coach Jeremy at 6pm. Be ready to learn about the Polar GX system and why we train in different zones. This seminar is open to the public and free of charge. Sign up today for a sub-max heart rate test to fully understand your training zones.

Clean Eating for a Healthier You
Paleo Chicken Mole     
 

     

 

 

Ingredients:
2 T olive oil
1 onion, chopped
3 cloves garlic, chopped
1 tsp. chili powder
1 tsp. ground cumin
1/2 tsp. ground coriander
1/2 tsp. ground cinnamon
1 can diced tomatoes (no added salt)
1 bell pepper, chopped
2 chipotle peppers, chopped
8 oz. chicken broth (organic, low sodium)
2 T almond butter
2 T organic cacao powder, unsweetened
6 skinless boneless chicken breasts
1 head cauliflower (for the rice)
1 avocado, sliced
fresh cilantro, chopped (for garnish)


Directions: 
Preheat oven to 350 degrees. Heat oil in pan, and saute onions until translucent. Add garlic and spices. Continue to saute so that spices toast and enhance flavors! Add diced tomatoes, peppers, chipotles, broth, almond butter, and cocao. Simmer for about 10 minutes. Cool slightly, and puree in blender or food processor. Set aside.
 
Heat a heavy skillet with olive oil on medium high heat. Trim chicken breasts and sprinkle with some black pepper & cumin. Sear the chicken breasts, on both sides, until browned. Add to a casserole or baking dish. Cover chicken breasts with the mole sauce (reserve about 1/4 C mole sauce to add to cauliflower rice). 
 
Bake for 50-60 minutes. 
 
Serve over a bed of cauliflower rice. Garnish with slices of avocado and fresh chopped cilantro!
 
Cauliflower rice:
Chop 1 head cauliflower in food processor. 
Add 1/4 C mole sauce, mix well. Cover and heat to desired temperature.
No need to add water!
