Smoked Pastrami by Sodaking27
  
"Picked up a corned beef for a great after St. Patrick's day sale. Decided to make pastrami. Soaked the corned beef for several hours in water to remove some of the salt. Changed the water a couple of times.
Mixed up the following rub.

4 tablespoons fresh coarsely ground black pepper
2 tablespoons coriander powder
1 teaspoon mustard powder
1 tablespoon brown sugar
1 tablespoon paprika
2 teaspoons garlic powder
2 teaspoons onion powder
Applied a thin coat of yellow mustard to help hold the rub."

"I hail from a small Brooklyn, MI and enlisted in the United States Navy in 2004 as a Flight Engineer on board the P-3C Orion aircraft.  It is a cold war era sub hunting aircraft modified to handle a wide variety of overland missions in the Intelligence, Surveillance, and Reconnaissance mission (ISR). My home port station was with the "Golden Swordsmen" of VP-47 on board Marine Corps Base Hawaii, Kaneohe Bay. From there I deployed 3 times, mainly to southern Iraq, at Ali Air Base located just outside of the city of Nasiriyah, Iraq. I also went to other countries such as Djibouti, Qatar, Bahrain, UAE, Oman, Japan, Philippines, and Thailand.
T-45C Goshawk

I was selected for a highly competitive program called Seaman to Admiral 21, to compete for a chance to go to Auburn University on a scholarship program while still earning full pay and benefits as an active duty service member. In August of 2013 I graduated from Auburn University and was commissioned as an Ensign in the United States Navy. From there I was selected to go to flight school as Student Naval Flight Officer.

After spending almost 2 years in flight school flying the T-6A Texan training aircraft and then the T-45C Goshawk training aircraft I graduated and was winged as a Naval Flight Officer and have been selected to move Lemoore, CA and fly in the backseat of the F/A-18F Super Hornet as a Weapons Systems Officer. My wife Tyler and I are very excited for our upcoming move to California.

I have a 1400 model and ABSOLUTELY LOVE IT!!!  I'm always looking for excuses to fire it up and make delicious food.  I've had it for just over a year now. I really appreciate how easy it is to operate. It is almost 'set and forget'. I'm too obsessed with my smoking to actually set it and forget it. I BBQ at least twice a month. My friends love it when I invite them over for BBQ. I love making pork butts, chicken quarters, salmon, and brisket.

Tips for Smoker Maintenance
"I've inherited a SmokinTex 1400 from my dad. It was built in 2001 and hasn't been used in a year. They moved out of state and he decided to buy a new one down there and give me the 1400.

I fired it up yesterday and it got hot pretty quickly and the heating element seemed to be working fine even after all these years. Nothing has ever been replaced.

I decided I'd just toss some meat in it today and see if it actually needs anything replaced.

Does anyone have any recommendations on maintenance on how to keep this going for a long time? Seems to be smoking just fine, it's been going for 2 hours now."
