Hickory Smoked Turkey by Chris N,
Brine:
1 gal water
2 cups canning salt
1 cup dark brown sugar
2 Tbs. granulated garlic
A few peppercorns
2 bay leaves

Apple Wood Smoked Spiral Ham

"Double smoked brown sugar glazed spiral ham in the SmokinTex 1400! Fantastic!

 

1.5 oz of apple wood.

 

225�F for around 3 hrs or until 130�F.

  

Glazed it with brown sugar last 30 mins. while it came to 140�F.

 

Although I did spray it with apple juice/ honey mix before smoking and every hour after.

 

It was so juicy with a nice crust from the brown sugar glaze. Watch the amount of wood you use."

More Thanksgiving Menu Ideas

These pre-cooked Smithfield bone-in hams from Walmart were smoked by SmokinTex Forum Senior Member Deep South.
He added apple pie filling and pineapple juice to finish them off.

"1/2 shank hams bone in.
Use an exacto or new box blade to score the thick skin. Rub with brown sugar and a little smoked paprika. 3 hours on the rack/smoker @ 220F�. Drop in a foil pan and pour over apple pie filling and a little pineapple juice. Cover in foil. 2 more hours @ 220F�. I typically take them beyond 160F� but it is not necessary.
Those were 10-12 lb. hams and total cook time was 5 hours."
