Smoked NC Pork Shoulder

NC Rub (makes about 1 cup)
* 2 tablespoons salt
* 2 tablespoons sugar
* 2 tablespoons brown sugar
* 2 tablespoons ground cumin
* 2 tablespoons chili powder
* 2 tablespoons freshly ground black pepper
* 1 tablespoon cayenne pepper
* 1 tablespoon roasted (good quality) cinnamon
* 1/4 cup paprika

"After carving our pumpkins, we decided to make some smoked pepitas by putting them in our SmokinTex smoker with a 1/2 oz of hickory wood for 40 min at 225F.  After they were smoked, I removed them from smoker, tossed with 1 tbsp of olive oil (butter would be good too), salt, pepper, cumin and chile powder. I put them in a 350F oven for 15 min until golden. Yum!"
