Smoked Salmon
"Cooked @ 225°F to an internal of 150°F with apple. Normally use alder tho. Just ran out. Lemon juice fresh parsley and kosher salt. Normally do a little more but this one was for salads." Thanks Ron L.

Dan's Fantastic Smoked Salmon
6 - 8 pounds Salmon Filets 4 cups Brown Sugar 1 cup Non-Iodized Salt 1 cup Honey Alder Wood Chips
Now here is a way to make authentic smoked salmon, using an old traditional Alaskan method!
Use boneless Salmon filets, preferably Red, King or Silver Salmon (Sockeye, Chinook or Coho) if you can get it. Atlantic salmon will work, but not as desirable. Avoid Pink (Chum) Salmon altogether as it is just too oily.
Dan also uses this recipe for catfish here.

"My brother in Chicago is smoking chicken. This is his lab, Dakota, guarding the smoker. He said she growled at him when he walked up to the smoker! We always say how nice it is not to have to baby-sit the SmokinTex when you cook, but sometimes a little 'guarding' doesn't hurt."
Scott Wallace from his brother Chris.

"A big thank you to the folks down at SmokinTex. My son was blown up by IED in Iraq a few years ago. He is OK now and has graduated from college and works as a ...doctor of physical therapy for the VA. He has worked so hard to achieve this. With large student loans and the love to grill and smoke, I had to do something. I called and asked about their Veteran's discount. They respect our veterans so much and put an unbelievable package together for him. Much respect to a company that does this for our young men. ...A company that respects our veterans cannot go unnoticed. A big thank you to SmokinTex."
