"I built our kitchen from scratch, no experience, not a carpenter. Was a nice project, not too expensive except for the counter which is stone. Up here (NH) with freezing weather, we only have 2 choices, expensive granite or stone. If I lived down south, I could have used $1 tiles. I really wanted the smoker to be in the cabinet, now just pull it out to smoke, then push in to store. I love it!"

"Quartered the meat up and gave it a liberal amount of Obie-Cue rub. Placed it in my SmokinTex set at 225�F for 2 hours of heavy plum wood smoke. Covered the cuts in BBQ sauce, double wrapped them in heavy duty foil and turned the head down to 190�F. Smoked all night for about 9 additional hours. The meat was fall off the bone tender. Added a little garlic powder and vacuum sealed it in quart size portions."

null How do you recommend cleaning the inside of the smoker?

Replace the double foil lining the wood box and the floor of smoker after every use. Use a warm damp sponge to wipe the inside of the smoker down. Make sure you take care not to bring it back to the "like new" stage. The creosote that lines the inside caused by the heat and smoke acts as a barrier against moisture and helps lock in that smoked flavor.
