 The world record is shattered for the longest any customer has gone without cleaning his smoker. A customer told us he hasn't cleaned his 1400 model smoker since he bought it in 1999! He's used it continuously since '99 and it still produces great smoked foods. Before that the record stood at just over 9 years.

 "I replace the foil in the bottom of the smoker after each smoke, and it was always a bit time consuming trying to cut the exact size I needed and often I'd cut it too small or too big. So I cut out a piece of cardboard that fits exactly in the bottom of the smoker and use that as a template. Now I just wrap foil around the template, cut two sides, and voila, a perfect fit every time. I also marked the dimension for the top of the smoke house on the template so I can cut that piece out as well." SmokinTex Forum member DFW

"I took fresh sausage, shredded cheddar cheese and mixed it together. Stuffed the peppers and put a piece of bacon on top of each one. Added some apple and hickory chips. Set smoker on 225F and let it go for 2 hrs and 45 minutes. They came out great. Bacon was crispy and the peppers had a nice mild after burn."
