Butternut White Bean Soup
Ingredients
  • 8 ounces white beans (canned or soaked overnight)
  • 4-6 C broth
  • 2 TB oil
  • 1 minced onion
  • 2-3 cloves garlic; minced
  • 1 TB sage; chopped (a little less if dried)
  • 1 large butternut squash; peeled and diced (4 C)
  • salt and black pepper to taste
  • 1 bunch of kale
Directions
Heat the oil in a large pot and saute the onion over medium heat until translucent. Add garlic and sage. Drain beans, transfer to pot, and add broth to cover. Bring to a boil, lower heat to a simmer, and cook about 1 hour until the beans are tender.
Add squash and broth to cover, return to simmer for another 30 minutes until the squash is tender.
Tear kale into bite sized pieces, ladle soup into serving bowls and add kale. You can add the kale to the entire soup pot but it will cook and become tender. I add it bowl by bowl because my family likes their kale crunchy!

For the month of November LGCWC is hosting a Pajamas and Underclothing Drive for Inn Vision Shelter Network - Commercial Street Inn which houses about 55 woman and children ( ages Newborn - 17yrs). The drive will run the whole month of November. 

We hope that you can help make this drive a big success by helping us with some donations. You can make a real difference in their lives with much needed donations of new pajamas, undergarments and socks. Your generous donation helps build their savings as they build a brighter future!

5 Short Cuts for a Stress Free Thanksgiving
thanksgiving-dinner.jpgThanksgiving ushers in the holiday season, or perhaps it should be called the Stress Season. Magazines are filled with lavishly decorated tables laden with perfectly presented and prepared gourmet cuisine. REALLY? Let's face it; balancing work, kids, families, school, and life in general makes it challenging to live up to these grandiose expectations. However, there are a few things you can do to make the holiday a bit easier. Here are our stress-busting tips:
Tame the turkey! While buying a frozen turkey from the grocery store may be the most economical approach, you'll need to think ahead to defrost it properly. Brining makes a turkey beautifully moist but is a hassle with buckets and brining solutions. To make it easier you can order a pre-brined turkey from Williams Sonoma that will be delivered to your door!

LGCWC will be volunteering at the Commercial Street Inn on December 19th  in San Jose that houses about 55 woman and their children ( ages Newborn to 17yrs). We will be serving between 10-15 clients.
