Today marks the start of our Wednesday Market, The Lexington Farmers' Market at UK.  It is still early in the season, so as the summer goes a long we will have more and more vendors attend.  We hope that you can make this evening market, part of your weekly shopping plan!  It's open to the public and there is free parking too!
 
Tonight is also the first night of the walking club, if the weather cooperates. Be sure to check in at the information booth at 4:30 to receive your special gift.

Our Tuesday & Thursday market is now open on the corner of West Maxwell Street and South Broadway. Please check Facebook to see which farmers will be at market. 
 
Our Wednesday evening market is open for the season. See you in Commonwealth Stadium Parking Lot at the corner of University Drive and Alumni Drive on May 14. Market hours are 3PM-6PM with the Walking Club beginning around 4:30PM.
 
On Saturday, you'll find your favorite farmers set up with tables full of fresh, seasonal products at the Fifth-Third Bank Pavilion in Cheapside Park from7AM-2PM.  Our Saturday market is open EVERY WEEK, ALL YEAR!  {Winter Hours (November-March) are 8AM-1PM.}
 
Our Sunday market is open on Southland Drive from 10AM-2PM.   

Remember, free parking is available at all of our market locations. On Saturday, you may park in the Financial Center garage and in any metered street spot for FREE!  There is a map below!

Pea Tendril Salad 
 
Last week a farmer shared some pea tendrils with me. While I had seen them and even tried a bite of them before, I had never seriously explored using them as an ingredient. The tendrils are sweet and crisp, a perfect spring farmers' market treat.  This recipe is from MyRecipes.com.  I think it would make a great healthy, light side dish for a spring cookout.

Ingredients

  • 1 cup cider vinegar
  • 1/2 cup water
  • 1/2 teaspoon sugar
  • 3/4 cup thinly vertically sliced red onion
  • 1 cup shelled fresh English peas
  • 1 teaspoon salt
  • 6 cups pea tendrils/shoots
  • 10 radishes, thinly sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 1/2 tablespoons white wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
Directions
 
  1. Combine cider vinegar, 1/2 cup water, and teaspoon sugar, stirring until sugar dissolves. 
  2. Add onion; let stand 30 minutes. Drain. 
  3. Cook English peas in boiling water with 1 teaspoon salt for 2 minutes. Drain
  4. Rinse peas with cold water.
  5. Combine onion, peas, pea shoots, and sliced radishes in a large bowl.
  6. Combine olive oil, white wine vinegar, 1/4 teaspoon salt, and pepper.
  7. Drizzle oil mixture over pea mixture; toss gently.

We are loaded with fresh chèvre and feta this week.  Tomatoes and basil are abundant at the market now, so what could taste more summery than a Caprese salad with feta or mozzarella?  We alternate slices of tomatoes with slices of feta on a big platter, add basil leaves, then drizzle all with Stuarto's fig balsamic and EVOO.  We could eat this every day with crusty bread or Carla's pretzel bread.

 

Our grilled cheese sandwiches (with market cheeses) are becoming legendary for both breakfast and lunch.  Bacon from Hood's Heritage Hogs turns them instantly into breakfast.  We even grilled a few with fresh sliced tomatoes last week.   Just follow your nose to our panini grill sizzling away.

This week we will have the very first of our beloved SPRING MIX!!  A mix of LETTUCES, PEA SHOOTS, BABY KALE, and BABY SPINACH!  Quantity may be limited, so if you'd like us to hold you a bag, please drop us an email!  Of course we'll also have Vibrant Greens hydroponic  lettuces- Romaine, Bibb and others, Kale, Arugula, BASIL, Red Veined SORREL and more.  If you're ready for the first BLT of the year, we can fix you up!  Blue Moon Farm has the "B" and the "L", and our buddy and market neighbor, Roland McIntosh has the "T".  (KY grown hydroponic tomatoes) Today's photo is of the sweet baby kitties who were born in our garage 3 weeks ago.  Their mother belongs to our neighbors, and on Sunday (Mothers'

Day!!) while we were at the farmers' market, she moved them one by one out to the neighbor's house.  This is a distance of 1/4 mile (one way), with a

kitten in her mouth...... five trips!!   What a good mother!   I miss being

able to visit them during my workday, but we're glad they are safe.  If you are needing a sweet little 4-legged in your life get in touch!  Eventually they will need new homes.

 

ASPARAGUS continues, and has been exceptionally delicious this year.  Nice to think that something appreciates the weird weather we've had!  We never get tired of asparagus here, and have been eating some every day!  It's so easy to prepare!  Just steam and squirt with some fresh lemon juice before serving.  Do you know the trick to peeling the fat ends of the stalks?  Use a vegetable peeler and remove the tough outside layer, and you'll have almost twice the asparagus than if you snapped the ends off!

 

BABY GREEN GARLIC is looking good!  Please note that at best, it will only be around another 2 weeks, tops.  We are on "scape watch", waiting for the first GARLIC SCAPE sighting, but nothing so far.  They should come on just in time to replace the baby green garlic.  There will be lots of GARLIC POWDER, GARLIC SCAPE PESTO, GARLIC FOCACCIA, GARLIC BAGELS and GARLIC CHOCOLATE CHIP COOKIES, too, so we can get you "garlicized"!!

PASTURE RAISED PORK- SAUSAGE, BACON, CHOPS, ROASTS and more from Stone Cross Farm in Spencer County.  We'll have their ARTISAN CHEESES and HANDMADE SOAPS too!  LAMB- GROUND, CHOPS, ROASTS, RACKS.

GRASS FED/GRASS FINISHED BEEF- STEAKS, ROASTS, BURGER, BRATS from Colcord Farm in Bourbon County.  We've even got a whole STRIP LOIN, and a WHOLE TENDERLOIN.

 

From Sunflower Sundries in Robertson County, 100% open pollinated, NON-GMO, heirloom variety white Hickory King corn, ground into CORN MEAL and GRITS.

 

We'll also have their out-of-this-world TORTILLA CHIPS!  You've got to try them!  They don't need salsa, but if you must have it, Elmwood Stock Farm makes a really good one!

We will have our cheeses at the Market this weekend.    

 

Our cheese is made from all natural JD Country Milk, a family owned Mennonite farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

 

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

 

This week we will have over a dozen different cheeses available. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Smoked Cheddar and of course our bourbon infused Kentucky Derby. Oh, and don't miss the Caerphilly, a tangy traditional Welsh coal miners cheese.

This Saturday, Hood's Heritage Hogs will have all cuts, albeit a limited supply, of forest fed and Bleugrass Chèvre/whey finished Red Wattle Pork. As always, chemical nitrite free cures and no preservatives or msg in our bacon and sausage. If you consider yourself a pork connoisseur, then this is your Naismith Trophy.

The weather is finally starting to break and we're starting to see some sun and warmer weather.  A very welcome sight indeed.  The lambs, kids and young calves are enjoying the warmer days and so are we.  The lettuce and other vegetables seeded in the ground a few weeks ago are sprouting and it appears the growing season is on the way. 

 

While waiting on our veggies to mature, we still have coolers full of beef, lamb and goat.  The tables are full of canned goods such as corn relish, squash pickles, green tomato relish, which is also known as chow chow, and a wide selection of interesting jams.  There's also breads that aren't your usual zucchini bread.  Lemon poppy seed zucchini as well as blueberry poppy seed and many other favorites are available each week. 

 

Give a leg of lamb a try for Easter instead of ham.  Good local lamb that is carefully tended to give you the most flavor in each bite.  All our animals graze the fields daily and have access to wholesome grass to provide a succulent main dish for your meals.  Our goat or lamb is a wonderful change from some of the more readily available meats. 

 

Stop by Cheapside on Saturday or Southland on Sunday for breakfast, brunch or lunch. Have a sausage, egg and cheese biscuit or bacon and eggs. We're grilling burgers, brats and jumbo hot dogs all made with our beef and containing no fillers. It's all beef and all good.

Glean KY began four years ago when three community members met and decided to do something about food waste and food insecurity in Kentucky. When looking at the statistics, 17% of the population in Fayette County is considered 'food insecure,' meaning they do not always know where their next meal is coming from, and yet 51% of fruits and vegetables are never eaten at the end of the production process. With that knowledge, they began collecting excess produce from the Lexington Farmer's Market, and trying to find links between local farms and local hunger programs that might need the food. They gleaned 37,000 pounds of food that year, and now have gleaned over 357,000 pounds since they began, delivering to over 51 hunger programs in Fayette and surrounding counties.

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the

 people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region.
