Dear Market Patrons and Friends, 

I wanted to say thanks for making the Spring Kickoff and subsequent weeks at your Lexington Farmers' Market so great.  It is hard to believe but we are already planning for the Summer Rollout.
 
Starting May 1, the Tuesday/Thursday market will reopen at the corner of South Broadway and Maxwell Street. This market is open from 7AM-4PM. 

Then on May 14, the Lexington Farmers' Market at UK opens near Commonwealth Stadium on the
 corner Alumni & University Drive.   This market is our evening market, it runs from 3PM-6PM.  NEW THIS YEAR is a walking club.  It will happen during each Wednesday Market at 4:30PM. We will share more information about the club in the coming weeks.
 
Also, August 23 is an important date.  Find out why next week.

We now have two markets each week:
 
Our Tuesday & Thursday market OPENS in ONE WEEK.  The market's first day is May 1! 
 
Our Wednesday evening market is closed for the season because the University of Kentucky is back in session.  The first day back for 2014 is May 14.   
 
On Saturday, you'll find your favorite farmers set up with tables full of fresh, seasonal products at the Fifth-Third Bank Pavilion in Cheapside Park from7AM-2PM.  Our Saturday market is open EVERY WEEK, ALL YEAR!  {Winter Hours (November-March) are 8AM-1PM.}
 
Our Sunday market is open on Southland Drive from 10AM-2PM.   

Remember, free parking is available at all of our market locations. On Saturday, you may park in the Financial Center garage and in any metered street spot for FREE!  There is a map below!

Seasonally Inspired Recipe:
Pasta Squares with Ramps  

Ramps are a fabled crop.  I had often read about them in cookbooks or in cooking magazines.  I had seen them on Iron Chef.  I had heard my great grandmother mention them.  I had never eaten them. 
 
Ramps are in the onion and garlic family.  They are only available for a few weeks at the beginning of spring. So this makes them difficult to find in stores. Luckily the last two weeks, ramps have been available at your Lexington Farmers' Market.  
 
This recipe is by Mr. Stan from Three Little Halves blog. It is based on a Serbian dish.  It is simple and a great way to highlight the bold garlicy, oniony flavor of ramps.

Ingredients
  • 7 oz ramps, cut into a chiffonade

  • 7 oz pasta squares (or any other similar pasta)

  • 4-5 sprigs of young garlic, white and light green parts only, sliced thinly crosswise

  • 2 tbsp heavy cream

  • 2 tbsp olive oil

  • 1 tbsp butter

  • salt and fresh ground pepper

Directions
  1. In a large skillet heat the oil over medium heat. Add the garlic and sauté until soft, for about a minute or two. Add the ramps and continue to sauté until the ramps are soft and lose their chewiness, for about another two to three minutes. Add the heavy cream and sauté for another minute. Remove the skillet from the heat and season with salt and pepper.
  2. Bring a large pot of salted water to a boil. Add the pasta squares and cook to desired doneness. Drain the pasta and add a tablespoon or so of butter to prevent from sticking. Mix well.
  3. Transfer the pasta to individual plates, top with ramps and serve.

Our entry didn't make it into this enews last week, so you didn't hear about our trailer trials and tribulations from the previous Saturday night, and didn't know that we had LAMB for your Easter dinners!   The trailer is back in commission again, due to the talents and diligence of Leo!  (Not saying there weren't some bad words flying around!!)  :-)

 

I realized today that our newest family member arrived after we were done with market last November, so you've never seen her photo!  Her name is Moondancer (AKA "Dani"), and she is a Tortoise Shell Siamese from a rescue in Georgia (Second Hand Siamese).  She has the palest blue eyes we've ever seen!  She is about 9 months old now, and keeps us jumping....and laughing!  She especially LOVES her brother Mouse (AKA "Guitar Shorty")!

This week we'll have Leg of Lamb again, as well as Shoulder, Loin Lamb Chops and Ground Lamb.   PORK- Bacon, Sausage, Chops, Country Ham and Roasts from Stone Cross Farm.  Colcord Farm's Grass Fed/Grass Finished BEEF Steaks, Roasts, Ground and Brats. 

 

The wonderful hydroponic GREENS from Vibrant Greens in Madison County were the hit of the weekend last week....Romaine, Red Leaf, Oakleaf Lettuces, Mizuna, Arugula, Sorrel and Kale.  Some Sweet Basil too!

We should have some more beautiful LILAC Bouquets this week, probably without daffodils, but perhaps with some wildflowers.

 

Garlic Scape Pesto, Garlic Powders and the first BABY GREEN GARLIC!!  This is the latest it has ever been!  Limited quantity! 

 

So many folks lost perennial HERBS through the winter.  It was just TOO COLD!!  We have lots of HERB SETS for you to replant....Rosemarys, Lavenders, Mints, Thymes, Tarragon, Oregano, Bay Leaf, Aloe too!  It will soon be safe to plant outside in the warm spring sun!

We will have our cheeses at the Market this weekend.    

 

Our cheese is made from all natural JD Country Milk, a family owned Mennonite farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

 

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

 

This week we will have over a dozen different cheeses available. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Smoked Cheddar and of course our bourbon infused Kentucky Derby. Oh, and don't miss the Caerphilly, a tangy traditional Welsh coal miners cheese.

We had a wonderful day last Saturday at the Farmers Market, meeting new customers and seeing returning customers!! We sold out our macarons by 11.30 pm.  We LOVED meeting everyone and shared our handcrafted French Macaron! Looks like the weather would be nice again this weekend, so come and stop by at the Farmers Market. We look forward seeing everyone!

 

La Petite Sucré (pronounced su-cray, meaning sweet) is a small boutique specializing in macarons and custom design macarons.  Macaron is a gluten free French confection made of almond flour and meringue filled with choices of ganache, buttercream, caramel or jam filling. Our macarons are about one and seven inches in diameter and each is handcrafted carefully to create a perfect confection that is visually appealing and will delight your taste buds. Magic Beans is excited to announce some new additions to our lineup. First up, a big welcome to our new market helper, Lillie Ruschell, who will be joining our Saturday morning team to serve up coffee and smiles. A lot of you will recognize Lillie from Doodles. Come say hello!

 

Up next, we will be adding a special dark roast Guatemalan coffee from Huehuetenango to our regular lineup throughout the summer. Huehuetenango is nestled at the foot of the Cuchumatanes, Central America's highest non-volcanic mountain range, near the border with Mexico to the north. The area has historically been the home of various tribes of Mayan descendents, and the name has been variously translated as "place of the ancients" or "place of the ancestors". Jesuit priests first introduced coffee to the area in 1773 and the country has since become known for some of the highest quality coffees of Central America. The Huehuetenango highlands in turn are known for producing some of the most distinguished coffees of Guatemala.

 

The rising hot air from the isthmus of Mexico's Tehuatepec plain works in concert with the descending cool air of the Cuchumatanes to create a regional climate that allows for coffee cultivation at altitudes up to 1,900 meters above sea level.

 

This particular coffee comes from the San Pedro Necta area, where the humid subtropical climate gives the coffee beans a beautiful appearance and encourages uniform maturation. The beans are matured under shade trees, which in this instance gives them a more  developed natural sugar and slightly less caffeine.

 

Cupping notes: Jasmine and orange blossom aroma, gentle acidity, sweet with a well-rounded flavor, strong cocoa notes, a light body, and a clean finish.

 

Our last big announcement is the addition of cold brew coffee to our regular market offerings. Starting this Saturday, we will be serving iced coffee made with our new cold brew concentrate. A lot of other coffee places cold brew in plastic buckets, but we went the extra mile to ensure your coffee meets our quality standards, so we developed our own proprietary all-glass system during the winter months. 

 

We will also be selling 1-liter bottles of the concentrate, enough to make roughly 2 liters of iced or hot coffee, depending on your strength preference. Our first batch will feature our new cold brew blend, consisting of our Ethiopian and Peruvian coffees, in a carefully developed proportion. We expect the first batch to sell out quickly, so we are taking pre-orders on our website, at www.magicbeanscoffee.com 

 

And of course, we'll still be serving pourovers of our regular offerings every Saturday as well.

The weather is finally starting to break and we're starting to see some sun and warmer weather.  A very welcome sight indeed.  The lambs, kids and young calves are enjoying the warmer days and so are we.  The lettuce and other vegetables seeded in the ground a few weeks ago are sprouting and it appears the growing season is on the way. 

 

While waiting on our veggies to mature, we still have coolers full of beef, lamb and goat.  The tables are full of canned goods such as corn relish, squash pickles, green tomato relish, which is also known as chow chow, and a wide selection of interesting jams.  There's also breads that aren't your usual zucchini bread.  Lemon poppy seed zucchini as well as blueberry poppy seed and many other favorites are available each week. 

 

Give a leg of lamb a try for Easter instead of ham.  Good local lamb that is carefully tended to give you the most flavor in each bite.  All our animals graze the fields daily and have access to wholesome grass to provide a succulent main dish for your meals.  Our goat or lamb is a wonderful change from some of the more readily available meats. 

 

Stop by Cheapside on Saturday or Southland on Sunday for breakfast, brunch or lunch. Have a sausage, egg and cheese biscuit or bacon and eggs. We're grilling burgers, brats and jumbo hot dogs all made with our beef and containing no fillers. It's all beef and all good.

Gosh, last Saturday we were sold out just after 10:30! We know everyone is SO recited to have Spring here in the Bluegrass and we REALLY appreciate your support!

- TULIPS - two varieties of the wildly flamboyant Parrot tulips! Black Parrots and Green Wave. This may be our last week for tulips - dang! 

 

- LILIES - huge flowers, long stems and amazing fragrance! This week we'll have both the giant white Rialto and luscious soft pink Sorbonne (pictured). 

 

-- LAVENDER 'PHENOMENAL' - this is a totally new variety of Lavender that we got from a wonderful grower in the Skagit Valley of Washington state. Phenomenal has a higher oil content (making it more fragrant) and stronger disease resistance than other Lavenders ... and we've fallen in love with it! It stands up to heat, humidity and extreme weather (like our crazy winters). 

 

-- SPEARMINT - we're growing true spearmint for our friends at Louisville Stoneware and will have some at the Market. Sure, it's fabulous with Bourbon, but it's also excellent in any kind of icy drinks and teas! Butterflies and hummingbirds also love, love, LOVE it's pink-purple flowers. 

 

-- NASTURTIUMS - we're growing climbing Nasturtium for some of our Mothers Day pots and will have a few single plants. We love the flower's happy faces!

Glean KY began four years ago when three community members met and decided to do something about food waste and food insecurity in Kentucky. When looking at the statistics, 17% of the population in Fayette County is considered 'food insecure,' meaning they do not always know where their next meal is coming from, and yet 51% of fruits and vegetables are never eaten at the end of the production process. With that knowledge, they began collecting excess produce from the Lexington Farmer's Market, and trying to find links between local farms and local hunger programs that might need the food. They gleaned 37,000 pounds of food that year, and now have gleaned over 357,000 pounds since they began, delivering to over 51 hunger programs in Fayette and surrounding counties.

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region.
