Our Tuesday & Thursday market is closed for the season.  We look forward to serving you again in the spring of 2014.  The market's first day is May 1! 
 
Our Wednesday evening market is closed for the season because the University of Kentucky is back in session.  The first day back for 2014 is May 14.   
 
On Saturday, you'll find your favorite farmers set up with tables full of fresh, seasonal products at the Fifth-Third Bank Pavilion in Cheapside Park from7AM-2PM.  Our Saturday market is open EVERY WEEK, ALL YEAR!  Winter Hours are 8AM-1PM.
 
Our Sunday market is open on Southland Drive from 10AM-2PM!

Remember, free parking is available at all of our market locations. On Saturday, you may park in the Financial Center garage and in any metered street spot for FREE!  There is a map below!

Seasonally Inspired Recipe:
Butternut Squash & Bacon Pizza 

This winter/spring has been making it difficult for me to come up with good seasonally inspired recipes.  I guess that if I wanted to be truly seasonally inspired, I would have just simply suggested a snow cone recipe! 

Alas, we come to April.  And to our joy and surprise it hasn't snowed yet this month!  We also have this little thing in Kentucky that we like to call the FINAL FOUR!!!?!??!?  OH C-A-T-S, CATS, CATS, CATS!  (Can you tell where I went to college) That tells me that some of you will be having viewing parties and will need an easy, healthy, seasonal treat for your guests.  This would even work for a brunch before Keeneland .

Ingredients

For the dough

  1. 1 ½ cups lightly packed whole-wheat flour
  2. 1 ½ cups lightly packed all-purpose flour
  3. Slightly heaped 1/8 tsp. active dry yeast
  4. 1 ½ tsp. kosher salt
  5. 1 ¼ cups water, plus an additional 1-2 tbsp. (if needed)

For the pizza

  1. 1 lb. cubed butternut squash
  2. 1 tbsp. olive oil
  3. Salt and pepper, to taste
  4. 4 slices thick-cut bacon
  5. 2 cups chopped kale
  6. 1/3 cup milk
  7. Pinch of cayenne pepper, to taste
  8. 1 cup shredded Italian blend cheese
Directions
  1. In a large mixing bowl, mix all of the dough ingredients together with a wooden spoon until they come together. If your dough is too dry and just won't come together, here is where you add the additional water, 1 tbsp. at a time. Cover your bowl with plastic wrap and allow to rise for approximately 22 hours at room temperature.
  2. About 40 minutes before you're ready to bake your pizza, Preheat your oven to 400°F. Arrange your butternut squash in a single layer on a large baking sheet. Drizzle with olive oil and season with salt and pepper. Toss it all around and bake for about 25 minutes or until cooked through.
  3. While the squash is cooking, chop up your kale and cook up your bacon slices. Allow the bacon to drain on a paper towel-lined plate, then chop into small pieces.
  4. When the squash is done, transfer it to a food processor. Add 1/3 cup milk, a pinch of cayenne pepper, and blend. Taste and add more cayenne if it's not spicy enough for you!
  5. At this point, turn your oven up to 500°F. Now it's time for the dough. Dump your dough out onto a well-floured counter. Flour the top of the dough and divide it in half. (You can refrigerate the other half for up to 3 days - just roll it into a ball and wrap in plastic wrap.) Take your half and let it stretch out a few times before landing it on a large rimmed baking sheet that has been sprayed with cooking spray. Using floured fingers, spread the dough out to the edges of the sheet (or as close as it will get).
  6. Bake the dough by itself for 5 minutes. Then take it out of the oven and top 'er up. Spread the butternut squash puree to the edges, leaving a 1-inch border on all sides. Then sprinkle the chopped bacon and kale over the squash, and top with the shredded cheese. Continue to bake for about 5 more minutes or until the cheese gets all melty and the dough is cooked through. Slice it up and serve!

We're gonna be really "cheesy" on market opening day.  Along with our chèvre, feta and Bloomin' Bleugrass, we're cooking up a brand new venture -  grilled cheese sandwiches with cheeses exclusively from the market.  This week we'll have a classic oozy-gooey sandwich with gruyere, Swiss and cheddar on extra crusty pane bello bread, plus a cheddar and bacon combo using Hood's Heritage Hogs bacon.  Travis Hood is one of the market's new vendors and his pigs have been eating our whey and leftover cheese for the past few months.  Seek out his freezer-filled truck and let him tell you about raising Red Wattle Heritage Hogs the "bluegrass whey."

Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

 

You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

 

This week we will have over a dozen different cheeses available. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Smoked Cheddar and of course our bourbon infused Kentucky Derby. Oh, and don't miss the Caerphilly, a tangy traditional Welsh coal miners cheese.

EGGS We offer each market our certified organic eggs from free-ranging hens who live outdoors on grass pasture.  Both whole dozen and half-dozens available, each egg is hand washed and inspected for cracks. Our hens are always outside, enjoying the green growing grass & clover and rewarding us with beautiful big brown eggs packed full of flavor, orangey color, and healthful omega-3-fatty acids.  Each hen's diet includes certified organic grain which is non-gmo.

 

BEEF, LAMB and POULTRY  Each week we bring a complete inventory of our 100% grass-fed Angus organic beef and our 100% grass fed lamb.  We also offer certified organic whole chickens, cut-up chicken pieces, and flavorful hearty stewing hens.  In addition, we have specialty beef sausages, chicken liver, beef broth bones, roasts for soups and stews, and even bones for your pet!

This year the winter has certainly been one to try a person's patience.  We're starting seeds for the garden and hoping that we can find weather favorable to prepare ground for planting.  In years past we've already had peas, lettuce, beets and many other veggies planted.  Not so this year.  But rest assured that when the time comes, planting will begin and things will escalate to a frenzy on the farms.  Right now our barn is bursting at the seams with new lambs and kids with more still to be born.  We're looking for some nice weather and drier pastures to turn the newborns out to become acquainted with the great outdoors.

 

We continue to be down on Cheapside each Saturday with a good supply of goat, lamb and beef, all raised by us on our farm.  This is some of the best meat that you will find in this area.  Safely and humanely grown, we do our best to bring you the best.  You can try our ground beef in a burger, brat or hot dog straight from the grill at the market.  We're also serving breakfast each morning with plenty of hot coffee or chocolate to warm you up. 

 

There's plenty of canned goods on the table; salsas, relishes, jams and jellies.  These are canned goods made with wholesome fruits and vegetables, canned with no corn syrup, artificial preservatives or flavorings.   Food that tastes good and is good for you.  Breads are available each week.  They're great for a brunch on Sunday or take one to work on Monday.  It'll make the day a little brighter.

Glean KY began four years ago when three community members met and decided to do something about food waste and food insecurity in Kentucky. When looking at the statistics, 17% of the population in Fayette County is considered 'food insecure,' meaning they do not always know where their next meal is coming from, and yet 51% of fruits and vegetables are never eaten at the end of the production process. With that knowledge, they began collecting excess produce from the Lexington Farmer's Market, and trying to find links between local farms and local hunger programs that might need the food. They gleaned 37,000 pounds of food that year, and now have gleaned over 357,000 pounds since they began, delivering to over 51 hunger programs in Fayette and surrounding counties.
