Seasonally Inspired Recipe:
Poutine
|
|
Poutine is a classic Canadian dish. In the US it's PB&J or Mac N Cheese, in China it's Instant Noodles or Eggs & Tomatoes, and in Brazil it's Black Beans & Rice or Pao de Queijo. Something that reminds us of home, is easy to make, and is delicious.
Meghan at Cake 'N' Knife developed the recipe and I hope you like it.
On Facebook, let us know your favorite food that fills the niche of Poutine or PB&J.
Ingredients
- 4 lb. potatoes, skin-on, washed and dried
- 4 tbsp. unsalted butter
- ¼ cup flour
- 1 shallot, minced
- 1 clove garlic, minced
- 4 cups beef stock
- 2 tbsp. ketchup
- ½ tsp. Worcestershire sauce
- Kosher salt and freshly ground black pepper
- Canola oil, for frying
- 2 cups cheddar cheese curds**
**Although not authentic, you can substitute mozzarella or un-brined feta.
Directions
- Cut potatoes into french fry lengths (a mandoline comes in handy here). Place in a large bowl, cover with cold water, and refrigerate for about 1 hour.
- While your potatoes are chilling, heat butter in a 2-qt. saucepan over medium-high heat. Add flour, and cook, stirring until smooth, about 2 minutes. Add shallot and garlic, and cook until soft, about another 2 minutes. Add stock, ketchup, Worcestershire, salt, and pepper, and bring to a boil; cook, stirring occasionally, until thickened, about 6 minutes. Remove from heat and keep warm.
- Pour oil to a depth of about 3" in a Dutch oven, and heat over medium heat until a thermometer reads 325 degrees. Drain potatoes, and dry thoroughly with paper towels. Working in small batches, add potatoes. Fry the potatoes, tossing occasionally, until tender and slightly crisp.
- Drain on paper towels, and let cool for 20 minutes. Increase temperature to medium-high, and heat the oil until it reaches 375 degrees. Again work in small batches and return potatoes to oil. Fry potatoes until crisp and golden brown, about 2 minutes. Transfer fries to paper towels to drain briefly and sprinkle them with salt. Divide the fries among serving bowls, pour gravy over each serving of fries, and top with cheese curds (or if you are like me, put it all in one big bowl and hoard it all to yourself).

Saturday's weather forecast looks downright incredible by our standards. The goats are back to work with plenty of milk, and we will be at the market.

We will have our cheeses at the Market this Saturday.
Our cheese is made from all natural JD Country Milk, a family owned Mennonite farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.
You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.
This week we will have over a dozen different cheeses available. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Smoked Cheddar and of course our bourbon infused Kentucky Derby. Oh, and don't miss the Caerphilly, a tangy traditional Welsh coal miners cheese.
Thanks for your support. See you at the market.

Everyone at Elmwood wants to thank you for your support of local farms and let you know how much we appreciate your attendance at the Lexington Farmers Market week after week. As the seasons change, we continue to work to offer you the highest quality USDA Certified Organic produce, eggs, and meats that we can.
We will be set up each Saturday downtown all winter long! Feel free to phone ahead for special orders.
PRODUCE we are offering now includes Fall Squash, Onions, Potatoes, Sweet Potatoes and more. Cold temperatures are a challenge, but a few green items under cover are producing successfully.
EGGS We offer each market our certified organic eggs from free-ranging hens who live outdoors on grass pasture. Both whole dozen and half-dozens available, each egg is hand washed and inspected for cracks. Our hens are always outside, enjoying the green growing grass & clover and rewarding us with beautiful big brown eggs packed full of flavor, orangey color, and healthful omega-3-fatty acids. Each hen's diet includes certified organic grain which is non-gmo.
BEEF, LAMB and POULTRY Each week we bring a complete inventory of our 100% grass-fed Angus organic beef and our 100% grass fed lamb. We also offer certified organic whole chickens, cut-up chicken pieces, and flavorful hearty stewing hens. In addition, we have specialty beef sausages, chicken liver, beef broth bones, roasts for soups and stews, and even bones for your pet!
Feel free to order ahead for quantity amounts or a particular cut for that special meal, and we'll have it ready for pickup at any of the farmers markets. View our website for special Beef & Chicken Bundles, and other quantity packages to secure your winter supply of wholesome meats.
PANTRY We are grinding our own heirloom organic corn to offer you non-gmo fresh cornmeal. Other items include dried beans (ying-yang, black turtle, peregion, and red kidney), popcorn, dried tomatoes, and dried chile peppers. We sent our organic tomatoes to be professionally packed into Salsa and Marinara, all available in BPA-free glass jars.
These days, more than ever, it's important to know the source of your family's food and you can look to our local organic farm to meet your body's nutritional needs resulting in good health. Visit our website to learn more, review our price lists, pre-order your special items, or contact Elmwood for more information (scroll up a little for a quick link!)

Local Raw Honey by Nick and Bev Nickels { Website}
Fayette County
The outdoor Lexington Farmers Markets for 2013 are now open. We will NOT be at the following markets this week:
Downtown at Cheapside Park, Saturday, March 22nd (opens at 8 am)
You may purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington. Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.
Our home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter. There is change in a small jar on the counter if you need some.
Shelby County
This year the winter has certainly been one to try a person's patience. We're starting seeds for the garden and hoping that we can find weather favorable to prepare ground for planting. In years past we've already had peas, lettuce, beets and many other veggies planted. Not so this year. But rest assured that when the time comes, planting will begin and things will escalate to a frenzy on the farms. Right now our barn is bursting at the seams with new lambs and kids with more still to be born. We're looking for some nice weather and drier pastures to turn the newborns out to become acquainted with the great outdoors.
We continue to be down on Cheapside each Saturday with a good supply of goat, lamb and beef, all raised by us on our farm. This is some of the best meat that you will find in this area. Safely and humanely grown, we do our best to bring you the best. You can try our ground beef in a burger, brat or hot dog straight from the grill at the market. We're also serving breakfast each morning with plenty of hot coffee or chocolate to warm you up.
There's plenty of canned goods on the table; salsas, relishes, jams and jellies. These are canned goods made with wholesome fruits and vegetables, canned with no corn syrup, artificial preservatives or flavorings. Food that tastes good and is good for you. Breads are available each week. They're great for a brunch on Sunday or take one to work on Monday. It'll make the day a little brighter.
Check us out at our website at quarlesfarm.com or visit us on Facebook at https://www.facebook.com/Quarlesfarm?ref=hl We try to keep folks up to date on what we're doing and how you're food's grown. Our food is your local connection to healthy eating.

Food News & Chews
Food News & Chews TV Show with Chef Jeremy Ashby & Sylvia Lovely, Sundays 11p on Fox 56 WDKY, filmed an episode of the weekly show at Lexington Farmers Market. Chef Jeremy and Sylvia toured the market, discussed food news topics and chatted with vendors while collecting ingredients for the cooking segment. Chef & Sylvia have a great conversation with Jeff Dabbelt, Executive Director of LFM. They cover local sourcing of food, what is available year round and the positive impact of spending food dollars with local producers. Jeff, Sylvia and Chef all agree farmers markets build community. In our cooking segment, Chef makes a simple dish in under five minutes with ingredients he collected that morning in the market. GLEANING with Faith Feeds
Gleaning Amounts in Pounds
June 2010-Present 364,143
Tally 2014 28,566
Glean KY began four years ago when three community members met and decided to do something about food waste and food insecurity in Kentucky. When looking at the statistics, 17% of the population in Fayette County is considered 'food insecure,' meaning they do not always know where their next meal is coming from, and yet 51% of fruits and vegetables are never eaten at the end of the production process. With that knowledge, they began collecting excess produce from the Lexington Farmer's Market, and trying to find links between local farms and local hunger programs that might need the food. They gleaned 37,000 pounds of food that year, and now have gleaned over 357,000 pounds since they began, delivering to over 51 hunger programs in Fayette and surrounding counties.

WUKY
WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so pleasepledge now and thank you so much for supporting WUKY.
