Dear Market Patrons and Friends,
I often have a short attention span. It seems like last week I was complaining about inches of snow and ice turning Lexington into a giant igloo. Now I'm complaining that cold and flu season is morphing into allergy season. And before long I will be complaining about it being too warm and too sunny (I dream for that day a little).
As the weather continues to warmup over the next few weeks, more and more vendors will be returning to market. AND more and more produce will begin gracing your dinner table. If you have been waiting for cheese, it is returning. Thinking about greens? They'll be back soon. We now have one market each week:
Our Tuesday & Thursday market is closed for the season. We look forward to serving you again in the spring of 2014.
Our Wednesday evening market is closed for the season because the University of Kentucky is back in session.
On Saturday, you'll find your favorite farmers set up with tables full of fresh, seasonal products at the Fifth-Third Bank Pavilion in Cheapside Park from 8AM-2PM. Our Saturday market is open EVERY WEEK, ALL YEAR! Winter Hours are 8AM-1PM.
Our Sunday market is now closed. Look for us back on Southland Drive April 6, 2014!
Remember, free parking is available at all of our market locations. On Saturday, you may park in the Financial Center garage and in any metered street spot for FREE! There is a map below!

Seasonally Inspired Recipe:
Rustic Potato Dumplings
|
|
Thanks to Brandon Matzek at Kitchen Konfidence for this home style approach to a classic potato dumpling or gnocchi. The direction might seem like a lot, but they are thorough and you are sure to have delicious results.
Ingredients
Potato Dumpling (Gnocchi)
- 1.5 pounds potatoes (about 2 large)
- Kosher salt
- 1/2 to 3/4 cup all-purpose flour, plus more as needed
- 1 egg
Sauce
- 4 tablespoons butter 15 - 20 fresh sage leaves (depending on size)
- Cheese (Try Gouda or per the original recipe Parmesan)
- Red pepper flakes
- Preheat an oven to 375ºF. Prick the potatoes all over with a fork. Pour a small mound of kosher salt in the middle of a rimmed baking sheet, then nestle the potatoes on top of the salt. Bake the potatoes until tender (45 minutes - 1 hour). While the potatoes are still hot, carefully remove the skins. They should come off easily, but you can use a paring knife if there are any stubborn bits. Chop peeled potatoes (still warm) into large chunks, and press through a ricer on to a lightly floured work surface. Let cool for 3 to 4 minutes. {If you don't have a ricer, a sieve and a wooden spoon will work too}
- Bring a large pot of water to a boil, then add 2 big pinches of kosher salt. Form a well in the middle of the riced potatoes. Sprinkle 1/2 cup flour around the well, then crack and egg in the middle (see image). Using a fork, beat the egg in a circular motion, gradually pulling some flour and potato from the sides of the wells. Keep using the fork until the egg is incorporated, then knead the dough with your hands just until it comes together. If you are finding that the dough is too sticky, you can add flour (in small amounts) until the dough becomes smooth. Do not overwork the dough here. Pinch off a small bit off dough, and toss it into the boiling water to make sure it will hold its shape. If it doesn't, knead in a bit more flour, and test again. Divide dough into 4 pieces, then roll each piece into a 1/2-inch thick rope. Cut each rope into 1/2-inch lengths. Transfer to a parchment-lined baking sheet, and set aside while you prepare the sauce.
- Melt butter in a large skillet over medium heat. Cook until the butter turns a light brown color and smells nutty. Add the sage leaves, and let sizzle for 1 minute. Take the sauce off the heat. Drop the gnocchi in the boiling water, and stir. As soon as the gnocchi float to the surface, they are done (30 seconds to 1 minute). Return the brown butter sauce to medium-low heat. Using a slotted spoon, scoop the cooked gnocchi into the brown butter sauce, tossing to coat. Add a pinch of red pepper flakes (to taste) and 2 tablespoons of the gnocchi cooking water, tossing to combine. Remove from the heat and top with Parmesan cheese. For a nice presentation, you can shave the cheese with a vegetable peeler. To serve, spoon gnocchi into shallow bowls, and top with more Parmesan cheese to taste.

With warm temperatures predicted for this week, Spring is just around the corner. So, we will have our cheeses at the Market this Saturday.
Our cheese is made from all natural JD Country Milk, a family owned Mennonite farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.
You won't see hydraulic presses and fancy modern equipment in our micro-creamery. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.
This week we will have over a dozen different cheeses available. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Smoked Cheddar and of course our bourbon infused Kentucky Derby. Oh, and don't miss the Caerphilly, a tangy traditional Welsh coal miners cheese.

EGGS We offer each market our certified organic eggs from free-ranging hens who live outdoors on grass pasture. Both whole dozen and half-dozens available, each egg is hand washed and inspected for cracks. Our hens are always outside, enjoying the green growing grass & clover and rewarding us with beautiful big brown eggs packed full of flavor, orangey color, and healthful omega-3-fatty acids. Each hen's diet includes certified organic grain which is non-gmo.
BEEF, LAMB and POULTRY Each week we bring a complete inventory of our 100% grass-fed Angus organic beef and our 100% grass fed lamb. We also offer certified organic whole chickens, cut-up chicken pieces, and flavorful hearty stewing hens. In addition, we have specialty beef sausages, chicken liver, beef broth bones, roasts for soups and stews, and even bones for your pet!

PANTRY We are grinding our own heirloom organic corn to offer you non-gmo fresh cornmeal. Other items include dried beans (ying-yang, black turtle, peregion, and red kidney), popcorn, dried tomatoes, and dried chile peppers. We sent our organic tomatoes to be professionally packed into Salsa and Marinara, all available in BPA-free glass jars.

The outdoor Lexington Farmers Markets for 2013 are now open. We will NOT be at the following markets this week:
Downtown at Cheapside Park, Saturday, February 22nd (opens at 8 am)
You may purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington. Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.
Our home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter. There is change in a small jar on the counter if you need some.
Shelby County
We're about to start having our first baby goats soon. Of course, we've been saying that since the first of December and there's still none on the ground. It appears that these goats have minds of their own and it'll be on their terms and not ours! I just hope it's not during this coming week's cold snap. If it is, I guess we'll be making room in the basement for babies.
Anyway, we're still at the Saturday market along with a few other hardy souls and we have coolers stocked with goat, lamb and beef. There's some really tender goat and lamb shoulder steaks for your first introduction to these cuts and plenty of beef stew meat, soup bones and ground beef to make some of the heartier winter fare. Put a roast or a brisket in the roaster on a Saturday or Sunday afternoon and that night's supper will be one of the most comforting that you've had in a while. We also have plenty of potatoes, parsnips, turnips and local apples. Baked and canned goods are on the tables and the grill is still available for breakfast and lunch. It's also been a great hand warmer. Just ask Josh!

Chef & Sylvia have a great conversation with Jeff Dabbelt, Executive Director of LFM. They cover local sourcing of food, what is available year round and the positive impact of spending food dollars with local producers. Jeff, Sylvia and Chef all agree farmers markets build community. In our cooking segment, Chef makes a simple dish in under five minutes with ingredients he collected that morning in the market.
