Dear Market Patrons and Friends,

Roses are Red,
Violets are Blue,
The market is open,
So why not make stew?

Now that I have gotten the obligatory Valentine's Day week romantic poem out of the way, I can talk about important things such as the market and the Olympics.  As you sit back and kick up your feet this week to watch copious amounts of sports that you pledge alligence to only once every four years {curling fans you know who I am talking about},  make sure your bellies are full of Lexington Farmers' Market ingredients.  The cold, cold, cold snap has impacted our farmers. The greens might be delayed a few weeks, but there are still plenty of winter favorites like roasts and potatoes to fill up your slow cookers. By now you should be acclimated to the cold, so don't let that be an excuse to not eat local this week!

Hope to see you at market,

The Lexington Farmers' Market will be hosting a taste test at William Wells Brown Elementary, Harrison Elementary, and Booker T. Washington Elementary each season this year.

We had a great time getting the year started by hosting a Kale Chip Taste Test at William Wells Brown Elementary last Friday. Not everyone liked what we thought were some of the best kale chips around but most were brave enough to give them a try! Keep an eye out for a behind the scenes look at this taste test on our Facebook page.

Seasonally Inspired Recipe:
Russian Blini with Ground Beef

Pancakes or Crepes, called "Blini", are a traditional food of Russia.  Much like crepes, they can be served sweet or savory.  For this week of cold, I thought a rich oniony and beefy filling would be best.

Thanks to Two Little Chefs for the photo and  Russian Season for the easy recipe!

Ingredients

Blini

  • 1 egg
  • 1 cup minus 1 tablespoon water
  • 1 cup minus 1 tablespoon all-purpose wheat flour
  • 1 cup plus 1 tablespoon whole milk
  • tsp salt
  • Vegetable oil
Filling
  • 3/4 pound ground beef
  • 1/2 cup cooked rice
  • 1 medium-sized onion
  • Salt to taste
  • Vegetable oil

Directions

Filling

  1.  Boil the rice according to instructions on the package, seasoning with salt.
  2. In a skillet, heat some vegetable oil and saut ground beef until cooked through. Don't forget to season with salt.
  3. In a separate small skillet, fry the onion, finely chopped.
  4. When all ingredients have cooked, stir them together.
Blini
  1. Pour water into flour and stir properly, then beat with a fork until all lumps disappear. Stir in the egg, salt, and milk, and beat the batter a little bit more until thin and smooth.

  2. Pre-heat a medium-sized skillet and cook each pancake on both sides until light-golden, allowing not less than a teaspoon of vegetable oil for each pancake. As you cook the pancakes one by one over a medium heat, you will easily figure out how much oil you need each time - just enough to keep them golden and glossy. Use about cup batter to make a 20cm pancake.

  3. Make sure you pre-heat the skillet properly when you start - this will prevent the first pancake from melting, sticking, or whatever else can happen to pancake batter being cooked too slowly. Although a famous Russian proverb says that the first pancake is always lumpy!

  4. Once you have a nice pile of beautiful, thin and crispy Blini, put a full tablespoon of filling on each of them and fold them in your favorite manner.

  5. Lightly brown the folded Blini before serving. The traditional way is to serve them with sour cream!

Quarles Farm {Website}

We're about to start having our first baby goats soon.  Of course, we've been saying that since the first of December and there's still none on the ground.  It appears that these goats have minds of their own and it'll be on their terms and not ours!  I just hope it's not during this coming week's cold snap.  If it is, I guess we'll be making room in the basement for babies.

Anyway, we're still at the Saturday market along with a few other hardy souls and we have coolers stocked with goat, lamb and beef.  There's some really tender goat and lamb shoulder steaks for your first introduction to these cuts and plenty of beef stew meat, soup bones and ground beef to make some of the heartier winter fare. Put a roast or a brisket in the roaster on a Saturday or Sunday afternoon and that night's supper will be one of the most comforting that you've had in a while.   We also have plenty of potatoes, parsnips, turnips and local apples.  Baked and canned goods are on the tables and the grill is still available for breakfast and lunch.  It's also been a great hand warmer.  Just ask Josh!

For larger orders of meat, or to make sure a particular item is on the truck, drop us a note at quarlesfarm.com or visit our Facebook page at https://www.facebook.com/Quarlesfarm?ref=hl  We like to post pictures there from time to time from the farm and give you our thoughts on the world.  Join us there and keep in touch.

Food News & Chews

Food News & Chews TV Show with Chef Jeremy Ashby & Sylvia Lovely, Sundays 11p on Fox 56 WDKY, filmed an episode of the weekly show at Lexington Farmers Market.  Chef Jeremy and Sylvia toured the market, discussed food news topics and chatted with vendors while collecting ingredients for the cooking segment.  Chef & Sylvia have a great conversation with Jeff Dabbelt, Executive Director of LFM.  They cover local sourcing of food, what is available year round and the positive impact of spending food dollars with local producers.  Jeff, Sylvia and Chef all agree farmers markets build community.  In our cooking segment, Chef makes a simple dish in under five minutes with ingredients he collected that morning in the market.  Tune in for a taste of the sights and sounds of the Lexington Farmers Market!  Click Food News & Chews: Lexington Farmers Market Edition to view the episode!

WUKY

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio

to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so pleasepledge now and thank you so much for supporting WUKY.
