In Your Community
Have you caught a glimpse of any of the 27 LFM advertisements in and on Lextran buses yet? If you have, don't forget to drop us a note (and maybe a picture) to be entered to WIN the over $500 in local food coupons in this year's Local Purveyor.
We enjoyed serving up locally inspired reindeer mix at the William Wells Brown Community Center Holiday Party yesterday and are looking forward to sharing our twist on holiday deserts (think, kale brownies!) with the Center adults tonight.
We'll be discussing local molasses and gingerbread with the children at the Northside Library on Thursday and then preparing for another year full of community events and education.
Where would you like to see us next year?

Seasonally Inspired Recipe:
Japanese Pork Belly (豚の角煮)
|
If you've known me for any length of time, you know I like to be adventurous with food and that I have an affinity for things that are typically considered marginal to the American diet. I prefer chicken liver to a chicken leg, I drink buttermilk, and my favorite cut of pork is a layered, fatty belly slab While my go-to pork belly dish is usually Chinese Red-Braised Pork ( 红烧肉) it can be a bit greasy and can produce a texture that is quiet different for the uninitiated. This week though my Japanese friend brought me some Japanese Braised Pork Belly with Diakon (豚の角煮). It is really good and makes a much better gateway dish to the complexities of fatty cuts of meat than the Red-Braised dish. Although there might be some ingredients that are not in your pantry, I'll give suggestions of adaptations. This recipe is based on one by the author of the food blog To Food with Love.
Ingredients
- 1.5 pounds pork belly, cut into 1 1/2 inch cubes
- ~1 pound daikon (radish), cut into 1 1/2 inch thick slices
- 5-6 slices ginger
- 3 cloves garlic
- Half a star anise or 1 teaspoon Allspice or Chinese Five Spice
- 2 inch cinnamon stick or 2 teaspoons ground cinnamon
- 1/3 cup light soy sauce
- 1/3 cup sake
- 3 tbsp mirin
- 1 1/2 cups water
- 1 tbsp sugar
- Dash of pepper
- 1 stalk spring onion, chopped finely or ¼ cup white onion
Directions
- Heat up 1 tbsp oil in a pot and fry ginger, garlic, star anise and cinnamon stick until fragrant. Add pork and brown on all sides.
- Add soy, sake, mirin, water and sugar. Bring to a boil, lower heat and gently simmer for 1 hour.
- Periodically skim the film that forms on the top of the liquid.
- Add the daikon and submerge them in the sauce together with the pork.
- Simmer for another hour or so until pork is tender. Season with pepper. Dish out, garnish with chopped spring onions and serve with steamed rice or congee.

Vendor Updates
IF YOU HAVE QUESTION ABOUT SPECIFIC PRODUCT AVAILABILITY OR FARMER ATTENDANCE ON SATURDAY, PLEASE MESSAGE THE LEXINGTON FARMERS' MARKET FACEBOOK PAGE
Fayette/Clark County
This Saturday will probably be our last presence at the market until sometime in February because goats and humans are taking a monthlong break to rejuvenate for next season. The goats will be lounging at home in ankle-deep straw and a new load of alfalfa, but they put all their "milk money" together and are sending me on a short vacation to a surprise location. All they have told me is, "You'll need a passport and you will be eating lots of cheese when you get there!" And I hear little whispers of boulangerie and fromagerie ... Where in the world did they learn these words? We will keep you updated with photos on our Bleugrass Chèvre FB page.
Seriously, on Saturday we will be sampling our new favorite recipe - fresh chèvre rounds in hot, spicy marinara from Elmwood, so please stop by for a sample because it's a perfect holiday appetizer or even an entree with a big salad and crusty bread. We've never been big fans of jarred supermarket marinara, but we quickly found out Elmwood's is one we need to have in the pantry at all times because it tastes so fresh and rich. (We meant to have this tasting sooner, but we keep eating the marinara at home because it's so good.)
Thanks to all our customers who braved the cold last week. This week the forecast is for rain but temps in the 50's. We're covered and comfortable, of course, and the market still has plenty for your holiday table ... root vegetables, greens, squash of all kinds and colors, onions, apples, breads, cakes, jams, jellies, relishes, salsa, dried beans, sorghum, cheese and all kinds of meats. It's downright inspiring in the middle of December.
And a tip: It's worth a trip to meet our brand new pork producer, Travis Hood with Hood's Heritage Hogs. You'll never meet anyone who knows his hogs better and can tell you their story than Travis with his Red Wattle Hogs.
Cheers, and we'll definitely see you at the market.

Everyone at Elmwood wants to thank you for your support of local farms and let you know how much we appreciate your attendance at the Lexington Farmers Market week after week. As the seasons change, we continue to work to offer you the highest quality USDA Certified Organic produce, eggs, and meats that we can.
We will be set up each Saturday downtown all winter long! Feel free to phone ahead for special orders.
PRODUCE we are offering now includes Fall Squash, Onions, Potatoes, Kale, Sweet Potatoes and more. Cold temperatures are a challenge, but a few green items under cover are producing successfully.
EGGS We offer each market our certified organic eggs from free-ranging hens who live outdoors on grass pasture. Both whole dozen and half-dozens available, each egg is hand washed and inspected for cracks. Our hens are always outside, enjoying the green growing grass & clover and rewarding us with beautiful big brown eggs packed full of flavor, orangey color, and healthful omega-3-fatty acids. Each hen's diet includes certified organic grain which is non-gmo.
BEEF, LAMB and POULTRY Each week we bring a complete inventory of our 100% grass-fed Angus organic beef and our 100% grass fed lamb. We also offer certified organic whole chickens, cut-up chicken pieces, and flavorful hearty stewing hens. In addition, we have specialty beef sausages, chicken liver, beef broth bones, roasts for soups and stews, and even bones for your pet!
Feel free to order ahead for quantity amounts or a particular cut for that special meal, and we'll have it ready for pickup at any of the farmers markets. View our website for special Beef & Chicken Bundles, and other quantity packages to secure your winter supply of wholesome meats.
PANTRY We are grinding our own heirloom organic corn to offer you non-gmo fresh cornmeal. Other items include dried beans (ying-yang, black turtle, peregion, and red kidney), popcorn, dried tomatoes, and dried chile peppers. We sent our organic tomatoes to be professionally packed into Salsa, Ketchup and Marinara, all available in BPA-free glass jars.
These days, more than ever, it's important to know the source of your family's food and you can look to our local organic farm to meet your body's nutritional needs resulting in good health. Visit our website to learn more, review our price lists, pre-order your special items, or contact Elmwood for more information (scroll up a little for a quick link!)

The outdoor Lexington Farmers Markets for 2013 are now open. We will NOT be at the following markets this week:
Downtown at Cheapside Park, Saturday, December 21st (opens at 8 am)
You may purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington. Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.
Our home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter. There is change in a small jar on the counter if you need some.

Thanksgiving has past and Christmas is rushing to meet us. We are through with fall calving and lambing and it's amazing just how fast those little ones can grow! We'll still be at the pavilion each Saturday with beef, lamb, goat, baked goods, and canned goods as well as some vegetables such as potatoes, kale, turnips and parsnips.
Give yourself a break this year from Christmas turkey or ham. Think about a nice rack of lamb or a lovely succulent leg of lamb or goat with cloves of garlic tucked throughout and sprinkled with rosemary. Looks lovely on your table and you'll get rave reviews on having a meal that's totally different from all the others during the season. We have plenty of both in stock as well as ribeyes and filets for those who really want to break out of the mold and fire up the grill on Christmas Day. Just think, no big roaster to scrub or oven to clean!
Jams, canned goods and baked goods also make great Christmas presents for those you want to remember with small gifts this time of year. They're always appreciated and besides, who needs another coffee cup or refridgerator magnet? Stop by and do your shopping with us!
Remember, we'll not be moving into Victorian Square this year. You'll find us there on Cheapside all winter long and we hope that you'll stop in and visit a spell. We still have the grill serving breakfast and lunch and there's plenty of hot chocolate and coffee.
Follow us on Facebook or visit our website at quarlesfarm.com. Drop us a line on our website or give us a call at 502-803-7292 if you need a bulk order or just want to make sure that we'll have plenty of whatever you're looking for on Saturday.

Food News & Chews
Food News & Chews TV Show with Chef Jeremy Ashby & Sylvia Lovely, Sundays 11p on Fox 56 WDKY, filmed an episode of the weekly show at Lexington Farmers Market. Chef Jeremy and Sylvia toured the market, discussed food news topics and chatted with vendors while collecting ingredients for the cooking segment. Chef & Sylvia have a great conversation with Jeff Dabbelt, Executive Director of LFM. They cover local sourcing of food, what is available year round and the positive impact of spending food dollars with local producers. Jeff, Sylvia and Chef all agree farmers markets build community. In our cooking segment, Chef makes a simple dish in under five minutes with ingredients he collected that morning in the market. We believe that Lexington-Fayette County will be the model for innovative and sustainable growth, by connecting and balancing its vibrant city with its productive and unique Bluegrass farmland. Growing our city, promoting our farms. Learn more at fayettealliance.com. WUKY WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so pleasepledge now and thank you so much for supporting WUKY.
