Dear Market Patrons and Friends,
As I mentioned in last week's newsletter, we have continued the great Lexington Farmers' Market tradition of a winter market. This means we will be outside in the Fifth-Third Pavilion in Cheapside Park Every Saturday, All Year! You can always check our Facebook Page for updates or if you have questions about offerings at a specific market.
I've posted two images above:
Left This sign will be placed on the Short Street side of the market and will identify spaces for you to park for FREE. (Also remember metered street spots are free on weekends). Short Street parking is the quickest, most convenient way to shop at our Saturday Winter Market!
Right Did you know that the Lexington Farmers' Market has an online store? This week we are highlighting "Your Local Purveyor," a coupon, recipe, and food publication that spotlights the abundance of Lexington, Louisville and the surrounding areas. It's only $15. It makes a great host gift or stocking stuffer. You can pay online and we will ship it to almost anywhere or even specify that you want it to be picked up at our Saturday Market. We have all kinds of other wonderful gifts on the site for you to choose from as well.
Hope you have a warm day and see you at Market,
Josh England

In Your Community

This week, we've rolled out 27 advertisements on the inside and outside of various Lextran buses. Not only is that 27 chances to be reminded about the year-round bounty of your LFM, but also 27 chances to WIN.
This winter, if you catch a glimpse of any of our bus advertisements, send us a note to let us know when and where you saw it. Snap a picture, if it's safe, and send your submission to Stephanie@lexingtonfarmersmarket.com. In January, we'll randomly select a winning submission to receive a FREE LOCAL PURVEYOR filled with over $500 in coupons for local merchants, including the Lexington Farmers' Market!
The photo to the right is a glimpse of part of the advertisement and information about the prize is available in the Market News section.
Remember, the LFM winter market is on bus routes 24 and 25 and within walking distance of the transit center. So, we welcome you to multi-task.
What are you waiting for!?

Seasonally Inspired Recipe:
Scotch Egg
|
Scotch Eggs are something that I'd had heard about many times, but it wasn't until this week that I decided to find out more about them. For some of you these may be a regular for your Sunday brunch, while for others this gems of a luxury food creation will be brand new. The basic idea of a scotch egg (not really from Scotland) is a soft boiled egg is peeled then wrapped in meat, breaded, and cooked. While it seems complicated, it just takes a bit of finesse and skill. If you are unsure about good techniques for boiling eggs...they can be tricky...check out Marc's blog No Recipes. He gives a concise but comprehensive guide to this seemingly simple endeavor. The recipe for today comes from Molly Yeh at Food52 , the photo of her egg is what caught my attention.
Ingredients
- 6 large eggs
- 1 pound lean ground meat OR sausage
- 2 teaspoons each: sugar, soy sauce, rice vinegar
- a few good grinds of black pepper
- 1 1/2 teaspoon ground ginger
- 2 stalks green onions, minced
- 1/2 cup flour
- 1 cup homemade breadcrumbs OR panko bread crumbs
- 2 teaspoons kosher salt
- oil for frying (I use canola)
Directions (Makes 4)
- Place 6 eggs in a saucepan big enough to hold them all in one layer, and cover with cold water. Bring to a boil, cover, then turn off burner and remove the pan from heat, and let sit for 8 minutes. Transfer eggs to a bowl of ice water, letting them sit for at least 5 minutes. Peel the shells each egg, discard the shells and set the eggs aside.
- In a bowl, combine the meat (remove from casings if necessary), parsley and sage briefly until mixed well together. Separate the mixture into 6 equal parts and set aside.
- Lightly beat the last 2 eggs in a bowl the milk, and set aside. On a plate or wide bowl, add the flour. In another bowl, add the breadcrumbs. You are now ready to start coating your eggs.
- Take one egg and roll in flour, patting lightly to remove loose flour. Take one portion of the sausage, and flatten out in your hand lightly, then press the floured egg into the middle. Carefully shape the sausage around the egg to cover completely. Coat the meat covered egg in the flour lightly, and then transfer to the egg mixture coating lightly with the liquid, then transfer right away to the bowl of breadcrumbs, coating evenly. Transfer the breadcrumb coated egg once more to egg mixture to coat, and then back to the breadcrumbs for a 2nd coating. Set this egg aside, and repeat with the next hard-boiled egg. Until all are coated. You will have 6 tennis ball sized eggs.
-
Fill a heavy walled pan with enough oil to reach a depth of 2 inches, and heat the oil until it reaches 350°F. Gently lower each egg into the oil and fry for about 7 minutes, or until the sausage is cooked and the outside is golden brown. (Be sure not to overcrowd the pan, and if necessary just fry one or two eggs at a time for best results.) Transfer each fried globe onto paper towels to let sit and drain itself of excess oil, and allow to cool for at least 10 minutes before serving.
These products can be purchased from LFM market members:
- Eggs
- Ground Meat
- Sausage
- Onion
- Bread (for making breadcrumbs)
- Salt

IF YOU HAVE QUESTION ABOUT SPECIFIC PRODUCT AVAILABILITY OR FARMER ATTENDANCE ON SATURDAY, PLEASE MESSAGE THE LEXINGTON FARMERS' MARKET FACEBOOK PAGE
Fayette/Clark County
We will be at the market on Saturday, unless there's ice/snow and we can't get off this hill! We will probably only have fresh chèvre for two more weeks because all the goats are due a winter break until kidding starts in February. Since it's the end of lactation and the milk structure always changes, our Feta has magically turned into "Mozza-Retta!" - It's delicious, but has the flavor of Feta with the texture of Mozzarella, so we have basically created a new cheese. Bundle up and come get some. And don't forget that our fresh chèvre freezes well, so you might want to get a couple of extra containers to last through January. We'll have plain, garlic-chive, smoked black pepper and chipotle, plus a few festive rounds decorated with herbs and sundried tomatoes.

Everyone at Elmwood wants to thank you for your support of local farms and let you know how much we appreciate your attendance at the Lexington Farmers Market week after week. As the seasons change, we continue to work to offer you the highest quality USDA Certified Organic produce, eggs, and meats that we can.
We will be set up each Saturday downtown all winter long!
PRODUCE we are offering now includes Beets, Cabbages, Rainbow Swiss Chard, Fall Squash, Leeks, Garlic, Bell Peppers, Turnips, Onions, Potatoes, Kale, Collards, Lettuces, Sweet Potatoes and more as new things are coming on each week.
EGGS We offer each market our certified organic eggs from free-ranging hens who live outdoors on grass pasture. Both whole dozen and half-dozens available, each egg is hand washed and inspected for cracks. Our hens are always outside, enjoying the green growing grass and clover and rewarding us with beautiful big brown eggs packed full of flavor, orangey color, and healthful omega-3-fatty acids. Each hen's diet includes certified organic grain which is non-gmo.
MEAT and POULTRY Each week we bring a complete inventory of our 100% grass-fed Angus organic beef and our 100% grass fed lamb. We also offer certified organic whole chickens, cut-up chicken pieces, and flavorful hearty stewing hens. In addition, we have specialty beef sausages, chicken liver, roasts for soups and stews, and even bones for your pet!
Feel free to order ahead for quantity amounts or a particular cut for that special meal, and we'll have it ready for pickup at any of the farmers markets. View our website for special Beef and Chicken Bundles, and other quantity packages to secure your winter supply of wholesome meats.
ORGANIC TURKEY TIME We take pre-orders for our holiday turkeys in person at the market or by email. At Elmwood, we care year-round for our own breeding flock in order to raise Bourbon Red (named after Bourbon County KY), Narragansett (the oldest known American turkey breed), and the Slate turkeys (also found on Slow Food's Ark of Taste that promotes the survival of near-extinct foods). Stop by the market or email the farm for more details on breeds, sizes and pricing - preorder now to get the size you want!
ALL TURKEYS are Organic Certified free ranging turkeys that are raised outdoors on grass pasture. They are raised the old-fashioned way, on fresh green grass and clover pastures with wholesome grains, resulting in moist, flavorful turkey. Not only are Elmwood turkeys raised naturally, free from any synthetic inputs, flavor additives, or stimulants, but everything that every turkey eats is organically raised grain or grass pasture. You can taste the difference and you will know you are serving the best!
PANTRY We are grinding our own heirloom organic corn to offer you non-gmo fresh cornmeal. Other items include dried beans (ying-yang, black turtle, peregion, and red kidney), popcorn, dried tomatoes, and dried chile peppers. We sent our organic tomatoes to be professionally packed into Salsa, Ketchup and Marinara, all available in BPA-free glass jars.
These days, more than ever, it's important to know the source of your family's food and you can look to our local organic farm to meet your body's nutritional needs resulting in good health. Visit our website to learn more, review our price lists, pre-order your special items, or contact Elmwood for more information (scroll up a little for a quicklink!)

Thanksgiving has past and Christmas is rushing to meet us. We are through with fall calving and lambing and it's amazing just how fast those little ones can grow! We'll still be at the pavilion each Saturday with beef, lamb, goat, baked goods, and canned goods as well as some vegetables such as potatoes, kale, turnips and parsnips.
Give yourself a break this year from Christmas turkey or ham. Think about a nice rack of lamb or a lovely succulent leg of lamb or goat with cloves of garlic tucked throughout and sprinkled with rosemary. Looks lovely on your table and you'll get rave reviews on having a meal that's totally different from all the others during the season. We have plenty of both in stock as well as ribeyes and filets for those who really want to break out of the mold and fire up the grill on Christmas Day. Just think, no big roaster to scrub or oven to clean!
Jams, canned goods and baked goods also make great Christmas presents for those you want to remember with small gifts this time of year. They're always appreciated and besides, who needs another coffee cup or refridgerator magnet? Stop by and do your shopping with us!
Remember, we'll not be moving into Victorian Square this year. You'll find us there on Cheapside all winter long and we hope that you'll stop in and visit a spell. We still have the grill serving breakfast and lunch and there's plenty of hot chocolate and coffee.
Follow us on Facebook or visit our website at quarlesfarm.com. Drop us a line on our website or give us a call at 502-803-7292 if you need a bulk order or just want to make sure that we'll have plenty of whatever you're looking for on Saturday.

Food News & Chews
Food News & Chews TV Show with Chef Jeremy Ashby & Sylvia Lovely, Sundays 11p on Fox 56 WDKY, filmed an episode of the weekly show at Lexington Farmers Market. Chef Jeremy and Sylvia toured the market, discussed food news topics and chatted with vendors while collecting ingredients for the cooking segment. Chef & Sylvia have a great conversation with Jeff Dabbelt, Executive Director of LFM. They cover local sourcing of food, what is available year round and the positive impact of spending food dollars with local producers. Jeff, Sylvia and Chef all agree farmers markets build community. In our cooking segment, Chef makes a simple dish in under five minutes with ingredients he collected that morning in the market. We believe that Lexington-Fayette County will be the model for innovative and sustainable growth, by connecting and balancing its vibrant city with its productive and unique Bluegrass farmland. Growing our city, promoting our farms. Learn more at fayettealliance.com. WUKY WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so pleasepledge now and thank you so much for supporting WUKY.
