Friends and Patrons of the Market,
This week the market had a group of young farm-to-fork entrepreneurs from The Learning Center at Linlee. The students shown help operate a cafe at their school called "World Cafe & Bistro." The students enjoy cooking, learning about, and growing food. While at the market, Stephanie helped them understand aspects of production and sales that farmers at the LFM encounter.

In Your Community
Our first round of monthly community center workshops was a success! The Youth Vegetable Literacy Workshop dissected and sampled 8 different varieties of LFM tomatoes, while the Adult Vegetable Literacy Workshop brainstormed ways to overcome common barriers to healthy eating before taking home local apples and instructions for making homemade apples sauce.
This month, we'll host these workshops again at the William Wells Brown Community Center and add on two additional classes at the Winburn Community Center: Vegetable Adventures (K-5) and Your Local Economy (6-12).
Additionally, we'll continue to bring produce and information to community meetings, scout troops, cooking clubs, public schools, and more!

Our Markets
We now have markets 4 days each week. On Tuesday and Thursday we are at the corner of Broadway and Maxwell from 7am - 3pm. The last Tuesday/Thursday market of the year is November 26.
Our Wednesday evening market is closed for the season because the University of Kentucky is back in session.
On Saturday, you'll find your favorite farmers set up with tables full of fresh, seasonal products at Cheapside Park from 7am-3pm. Year Round! (Information about the winter schedule coming soon)
On Sunday, follow us to market on Southland Drive from 10am-2pm for another taste of seasonal produce. The last Sunday market of 2013 is on October 27.
Remember, free parking is available at all of our market locations. On Saturday, you may park in the Financial Center garage and in any metered street spot for FREE! There is a map below!

The Kentucky Proud Incredible Food Show will be held Saturday, October 26, 2013 at Lexington Center/Rupp Arena
The 2013 show will include two cooking presentations by celebrity chefs The Deen Brothers in Rupp Arena and cooking demos by award-winning local and regional chefs. The show will also include: Now in its 5th year, the Kentucky Proud Incredible Food Show is the event of the year for everyone who loves food, cooking and entertaining. Featuring more than 100 exhibitors including specialty food companies, caterers, restaurants, kitchen accessories and appliance distributers. Everyone's favorite The Marketplace will showcase products to sample and purchase. Kentucky Agricultural Commissioner Comer sums it nicely by saying "The Kentucky Proud Incredible Food Show is the biggest event of the year for Kentucky food lovers. Seasonally Inspired Recipe:Butternut Squash Rigatoni Pie
|
Cool fall evenings call for warm hardy dinners.This recipe used noodles in a way that I've never seen before. Tieghan at Half Baked Harvest created this recipe that is unique and yet full of familiar tastes, smells and ingredients. Although the recipe has many steps, it really is not all that complicated.
Ingredients:
(makes 4-6 servings)
- 1 pound rigatoni pasta (the biggest variety you can find)
- 4 cups cubed butternut squash (about 1 small butternut squash)
- 2 tablespoons olive oil
- salt + pepper
- 4-6 ounces gorgonzola, plus more for topping
- 8 ounces burrata cheese, dived (may sub fresh mozzarella)
- 1 egg, beaten
- 1/2 cup milk (I used 2 percent)
- 1 tablespoon butter
- 1/2 onion, chopped
- 2 cloves garlic, minced or grated
- 3 cups chicken broth
- 1 bunch sage, dived
- 1/4 teaspoon cayenne pepper (or to your liking)
- 1/8 teaspoon nutmeg
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup mozzarella cheese, shredded
- 8 pepperoni rounds (optional)
Directions: - Preheat oven to 400 degrees F.
- Peel the squash, deseed and cut into cubes. Place them on a baking sheet. Coat them with olive oil, salt and pepper. Roast the squash at 400 degrees for 45 minutes until it is tender. Remove and allow to cool for 15 minutes or so.
- In the meantime, cook the rigatoni until it's slightly underdone. Drain and rinse with cool water and set aside. Lightly oil an 8 or 9-inch spring form pan (I used an 8 inch).
Once the squash is ready, transfer squash to a food processor add the egg, gorgonzola cheese, burrata cheese and the milk. Puree until smooth.- Heat the butter in a large skillet over medium-high. Add the onion and cook until the onion is soft, about 5 minutes. Add the garlic and cook another minute. Transfer the butternut squash puree to the skillet, add 2 cups of the chicken broth, the cayenne, 1 tablespoons chopped sage, nutmeg, crushed red pepper flakes, salt and pepper. Whisk to combine and cook about 2 minutes. If the sauce seems too thick add more chicken broth to thin, I used the full 3 cups.
- Spoon about a 1/4 cup of the sauce into the bottom of the spring form pan. Grab the rigatoni and pack the rigatoni in the pan, standing on their ends. Pour the remaining sauce over the pasta. Push the sauce down into the holes as best you can. Cover with the mozzarella cheese.
- Place in the oven for 15 minutes. Remove, spread with the remaining burrata cheese and the pepperonis, and bake another 10 to 15 minutes, or until cheese is browned and bubbly. Let sit 15 minutes before slicing and serving.
- While the pie sits fry the sage, melt 1 tablespoon butter in a sauce pan. Add sage leaves. Cook on medium-low for 1 minute, flip and cook one more minutes or until the sage has darkened in color, but is not burnt. Remove from the heat and place the fried sage leaves on the top of the pie. Serve!

Vendor Updates
Fayette/Clark County 
We plan to be at both markets this weekend, unless extreme weather kicks in. We will have plenty of cheese (lots of feta!). Our francophile friend Philippe will be bringing fresh figs from Harrodsburg, but only if they are at the peak of perfection (you know the French!). If Mother Nature (we are calling in the French one) cooperates, we will be having the first annual FIG FEST. Fresh figs with goat cheese, Feta with fig balsamic from Stuarto's, maybe even some fig sorbet at the Sunday market. Who know what we can come up with between now and the weekend?

Madison County This week's photo is of our barn full of garlic! It's a hard thing to photograph, but I love this one. This Saturday will be a big tailgating day before UK's evening football game. Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy. You won't see hydraulic presses and fancy modern equipment around here. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. There may be a chill in the air but our homegrown produce is far from being over. There are still 4 more weeks of Sunday market and we will always have the Saturday market after that. So, just because school has started and retail
stores are already gearing up for the holidays don't let the flavors of summer fade away before their time. Our late tomato planting is just starting to produce as well as a pepper and eggplant planting that is the most beautiful and bountiful we have seen in years. The late basil and cilantro plantings are thriving, the lettuce mixes will be ready soon and the broccoli planting is starting to form heads as well so don't hesitate to come see us at the market, we are still going strong!
Look for us and our big box truck at the corner of Short and Upper on Saturday and at Southland Drive on Sunday. The outdoor Lexington Farmers Markets for 2013 are now open. We will be at the following markets this week:
Downtown at Cheapside Park, Saturday, October 5th (opens at 7am)
Southland Drive, Sunday, October 6th (10am-2pm)
You may purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington. Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.
Our home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter. There is change in a small jar on the counter if you need some.
Quarles Farm
There's still lots of things going on at the farm even though the garden season is slowing down a little. New calves dot the pastures and the first fall lamb was born yesterday. We know our customers have lots of activities to choose from in the in fall but don't forget that there's still lots of great food at the market. We continue to have the summer vegetables and are starting to add fall vegetables to the tables. Lettuce mixes, mustard greens, collards, kale and other greens are on the table as well as parsnips. If you have never tried them I think you'll enjoy the carrot-like flavor.
We still have plenty of succulent beef and lamb cuts in the coolers. It's turning into chili, stew and roast weather and we have ample supply of each cut. Want something different for Thanksgiving? Try leg of lamb or grill up some big ribeyes. There's nothing that says the meal has to be turkey! Change it up this year!
Our grill is still smoking at the markets making breakfast and grilling burgers, brats and hot dogs made your way. There's lots of baked goods on the tables, jams, jellies, salsas and relishes too.

We had SO much fun making pumpkin and gourd bouquets last week and it was even more fun seeing how popular they were! Each week they will be a little different, so we can take full advantage of the most colorful and longest lasting flowers, foliage and berries ... everything that says "It's Fall"!
We'll also have several varieties of big, fragrant stems of blooming Oriental lilies and lush jewel-toned bouquets of Dahlias, along our Oriental and hybrid lily bulbs that are perfect for planting in early Fall.

Chef & Sylvia have a great conversation with Jeff Dabbelt, Executive Director of LFM. They cover local sourcing of food, what is available year round and the positive impact of spending food dollars with local producers. Jeff, Sylvia and Chef all agree farmers markets build community. In our cooking segment, Chef makes a simple dish in under five minutes with ingredients he collected that morning in the market.
