Market News Friends and Patrons of the Market,
Happy National Farmers Market Week!
If you are like me, you can't believe that it's already August! Especially when you think about the unseasonable weather we've been having. But August is here. School is around the corner, baseball is in full swing, and market tables are overflowing!
Come to the market this week and buy something new or unusual to you! Maybe you have never cooked eggplant. Be adventurous and buy some! Instead of buying one or two peppers or tomatoes, buy a few pounds. Use the extra to make sauce or to stretch your cooking repertoire. Don't be afraid, the internet and our newsletter archives are full of delicious recipes to guide you on your cooking expedition!
Thanks to Norm D. for tagging the Lexington Farmers' Market in this juicy lamb chop dinner he prepared using lamb, tomatoes, potatoes, squash, and rosemary all from the market! If you take photos while at the market or of food you prepared using market ingredients be sure to tag us on Facebook!
See you at market,
Josh England

Seasonally Inspired Recipe:Heirloom Tomato Stuffed Zucchini
|
Have an abundance of cherry tomatoes or zucchini? Love both but are wondering how to have them in a new way? Try this beautiful, ooeyy gooey, summer dish.
This recipe, found at Wrightkitchen.com, is full of awesomely colorful, step-by-step photos.
Ingredients:(makes 2-3 servings)
- 2 medium zucchini
- 10 small (cherry) heirloom tomatoes, diced
- 1/4 teaspoon fresh oregano, chopped
- 6oz fresh mozzarella
- 1/4 teaspoon vinegar
- olive oil
- coarse salt and pepper
Directions:
- Preheat oven to 400. Lightly brush a baking sheet with olive oil and set aside.
- Cut zucchini in half and remove the seeds, then season with salt and pepper. In a small bowl mix together tomatoes, oregano, vinegar. Add the coarse salt and pepper to the mixture to preference (I used 1/8 teaspoon), coat the tomato mixture evenly.
- Scoop the tomato mixture into each zucchini, filling up where the seeds once were. Bake for 20 minutes, the zucchini should be tender.
- Pull apart mozzarella into small 1" chunks and cover the top of the zucchini with it. With the broiler on, place the zucchini on the top rack in the oven. The cheese will start to bubble and and turn brown, 2 minutes. Remove from oven and serve hot.
These products can be purchased from LFM market members:
- Zucchini
- Cherry Tomatoes
- Oregano
- Vinegar
- Olive Oil
- Salt

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy. You won't see hydraulic presses and fancy modern equipment around here. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree. Thanks for your support. See you at the market. They're an unlikely pair of partners. One knows the chemistry; the other knows the business. But their stuff is good, man. Really, really good. They got some kind of secret space hidden away in a warehouse somewhere where they cook it up in batches. Pounds of the stuff. The thing is, nobody really understands how they make it. It's just not like any other stuff out there. And once people get a taste, they keep coming back. This week only, at the Lexington Farmers Market:
Heisenberg Blend: A blend born of uncertainty, Heisenberg combines more than 12 different high-grown, specialty-grade arabica coffee beans from Central America, South America, Africa, and Asia. The blend contains a mixture of natural, pulp natural, and fully washed coffees, blended then roasted to a nice, rich, dark brown. It's a coffee that is indescribable and utterly unrepeatable. We're offering it in a limited edition of just 40 hand-printed and numbered bags, created to celebrate the final arc of AMC's outstanding series, "Breaking Bad."
