Friends and Patrons of the Market,

On Independence Day we are reminded of the sacrifice, dedication, and hope that early America embodied as a new nation.  We still cling to those ideals as we make celebratory plans and remembrances even today.  As you prepare for cookouts, fireworks, concerts, and time with friends and family it is amazing to think how much has changed and how much has remained the same with July 4th celebrations in these United States.   Even back on July 3, 1776 John Adams had some thoughts on what should happen on the nation's birthday

"It ought to be solemnized with Pomp and Parade, with Shews [sic "shows"], Games, Sports, Guns, Bells, Bonfires and Illuminations from one End of this Continent to the other from this Time forward forever more."

So this July 4, attend parades, play games, ring bells, and watch the skies illuminate with festive blazes.  Eat, drink and be merry.  And make sure all your bonfires are well stocked with the freshest, most delicious ingredients from your Lexington Farmers' Market.  We'll be opening at 7 AM on Independence Day at the corner of Maxwell Street and Broadway.

See you at market,

Josh England

WUKY Farmers Market Report
SeasonalRecipe
Seasonally Inspired Recipe:
Thomas Jefferson's Vanilla Ice Cream
Today's recipe comes from the website of Monticello, Thomas Jefferson's homestead.  This recipe is the first such known for "ice-creams" in the new world.   Included in this section are the original recipe and a modern adaptation.

Ingredients:
(makes 1 batch)

2. bottles of good cream.
6. yolks of eggs.
1/2 lb. sugar

Original Directions by Thomas Jefferson:

  1. Mix the yolks & sugar
  2. Put the cream on a fire in a casserole, first putting in a stick of Vanilla.
  3. When near boiling take it off & pour it gently into the mixture of eggs & sugar.
  4. Stir it well.
  5. Put it on the fire again stirring it thoroughly with a spoon to prevent it's sticking to the casserole.
  6. When near boiling take it off and strain it thro' a towel.
  7. Put it in the Sabottiere*
  8. Then set it in ice an hour before it is to be served. put into the ice a handful of salt.
  9. Put salt on the coverlid of the Sabotiere & cover the whole with ice.
  10. Leave it still half a quarter of an hour.
  11. Then turn the Sabottiere in the ice 10 minutes
  12. Open it to loosen with a spatula the ice from the inner sides of the Sabotiere.
  13. Shut it & replace it in the ice
  14. Open it from time to time to detach the ice from the sides
  15. When well taken (prise) stir it well with the Spatula.
  16. Put it in moulds, justling it well down on the knee.
  17. Then put the mould into the same bucket of ice.
  18. Leave it there to the moment of serving it.
  19. To withdraw it, immerse the mould in warm water, turning it well till it will come out & turn it into a plate.
*The sabottiere is the inner cannister shown in the drawing. There was no crank to turn it; when Jefferson wrote "turn the Sabottiere in the ice 10 minutes," he meant for someone to grab the handle and turn the cannister clockwise and then counterclockwise.

Adaptation by Marie Kimball:
  1. Beat the yolks of 6 eggs until thick and lemon colored.
  2. Add, gradually, 1 cup of sugar and a pinch of salt.
  3. Bring to a boil 1 quart of cream and pour slowly on the egg mixture.
  4. Put in top of double boiler and when thickens, remove and strain through a fine sieve into a bowl.
  5. When cool add 2 teaspoonfuls of vanilla.
  6. Freeze, as usual, with one part of salt to three parts of ice.
  7. Place in a mould, pack with ice and salt for several hours.
  8. For electric refrigerators, follow usual direction, but stir frequently.

Many of our lucky market shoppers will be having a nice long weekend this week to celebrate Independence Day.  We hope you will have a nice relaxing break from work, and that you'll remember the Farmers' Market in making your plans!  Fresh sweet corn and homegrown tomatoes are now on the market, as well as LOTS of other great local produce!

We will be making our first cutting of our next CILANTRO planting...nice little leaves, and stems tender enough to eat right up!  Maybe there is some fresh salsa in your future!

Grills will be fired up all over town for the holiday, and we'll have all kinds of local, pastured PORK, LAMB and Grass Finished BEEF to help make your barbeque a success, from HOT DOGS to FILET MIGNON to RACK OF LAMB.  We also hope you'll try roasting some of our FRESH GARLIC BULBS on the grill!

It gets soft and spreadable so you can use it to top a burger or steak, or spread it on your  corn on the cob!  Another idea for your corn is to spread our GARLIC SCAPE PESTO on in place of butter!  It's different and delicious!

The picture we have today shows where the June apples on our tree have gone!

This morning there were two squirrels working on it.  They are comical to watch and obviously love apples!

We'll have more of our FRESH CUT BASIL, CANDY ONIONS, FRESH SHALLOTS, BABY LETTUCE MIX, KALE, other greens from  Vibrant Greens, our hydroponic friends in Madison Co.

To top your salads we'll have our CHAMPAGNE DRESSING, to top your burger, Stone Cross Farm's ARTISAN CHEESES.  They all melt very nicely on a burger or in an omelet!

Lots of ARTISAN BREADS from Sunrise Bakery, and of course their yummy PASTRIES too....and GARLIC BAGELS (the best in KY!) GARLIC POWDER (smoked and not), PEPPER POWDERS, delicious Blue Moon Farm SUNDAY TEA (it's great iced!!) and lots more!

We'll look forward to seeing you this weekend!

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

You won't see hydraulic presses and fancy modern equipment around here. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

Thanks for your support. See you at the market.

" hand-crafted, Fair Trade, certified organic, and utterly delicious "

The Lexington Herald Leader

Possessing a palate from his years in the San Francisco wine trade, Mark Newberry understood the ancient art of blending different grapes to make a better wine. Various winegrapes complement and enhance each other to create a more complex wine, a more memorable and satisfying glass of wine. Coffee beans, he soon discovered, are similar agriculturally and culinarily, so blending coffee beans from different regions of the world produce a finer, more interesting, cup of coffee.

Blending, in the wine trade, is considered an art. You can enjoy some of the artfully produced coffees here at the Lexington Farmers Market.

We will NOT be at the market on July 4 but will be at Cheapside Park on Saturday.

We appreciate seeing so many familiar faces returning to the markets on Saturday and Sunday outdoors, as well as lots of new people just moving to the area.  We will continue to attend each market each week including Tues, Wed, Thurs, rain or sun or something in between - hope to see you as well!

PRODUCE we are harvesting now includes Sugar Snap Peas, Lettuces, Beets, Greens, Radishes, Napa Cabbage, Summer Squash, Chard, Onions, Broccoli and more as something new is ready every day!

NEW, NEW  We have found a professional charcutier to make delicious sausages, bratwursts, and franks for us from Elmwood organic beef.  It has been several years since we had our all-beef sausages to offer, and we are really excited about these tasty and high quality offerings.

EGGS We offer each market our certified organic eggs from free-ranging hens who live outdoors on grass pasture.  Both whole dozen and half-dozens available. Our hens are always outside, enjoying the green growing grass & clover and rewarding us with beautiful big brown eggs packed full of flavor, orangey color, and healthful omega-3-fatty acids.

MEAT and POULTRY  We have restocked our inventory of grass-fed Angus organic beef, along with our certified organic whole chickens, cut-up chicken pieces, and flavorful hearty stewing hens.  In addition, we have chicken liver and ground turkey.  Feel free to order ahead for quantity amounts or a particular cut for that special meal, and we'll have it ready for pickup at any of the farmers markets.  View our website for special Beef & Chicken Bundles, and other quantities packages.

These days, more than ever, it's important to know the source of your family's food and you can look to our local organic farm to meet your body's nutritional needs resulting in good health.  Visit our website to learn more, review our price lists, pre-order your special items, or contact Elmwood for more information(scroll up a little for a quick link!)

Local Raw Honey by Nick and Bev Nickels {Website}
Fayette County

The outdoor Lexington Farmers Markets for 2013 are now open. We will not be at the following markets this week:

Downtown at Cheapside Park, Saturday, July 6th (opens at 7am)
Southland Drive, Sunday, July 7th (10am-2pm).

You may purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington. Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.

Our home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

Mexico Chiapas (Triunfo Verde Co-Op): This certified organic, shade-grown, Fair Trade coffee comes from farms located in the buffer zone of El Triunfo Biosphere Reserve, high in the Sierra Madre de Chiapas. One of the world's most diverse forest reserves, El Triunfo serves as a refuge to thousands of plant and animal species.

Mexico is the largest source of coffee imported to the United States, yet it is sadly underrated as an origin of distinction. When grown with care and handled properly, Mexican coffee can rank alongside the best Costa Rican or Guatemalan coffees - with a bright and clean acidity, elegant floral aromas, a mild and sweet flavor, and a well-developed body.

During the 1990s, Mexican coffee underwent a severe crisis following the collapse of the International Coffee Agreement. As prices went into freefall, both the quality and quantity of coffee from Mexico declined. Many farmers simply abandoned the mountains in search of a more sustainable means of earning a living.

Those farmers who remained began to look for ways to improve quality, in order to command a better price. The past decade has seen renewed efforts, and tremendous progress, toward re-establishing production of superior, specialty-grade coffee in Mexico. This coffee, from the Triunfo Verde ("Green Victory!") Co-Op, is literally the fruit of those efforts, by an army of thousands of farmers, agronomists, and coffee experts. Their triumph resonates in every delicious cup.

Mexico Cafe Siesta (Decaf): This week, we're proud to introduce our first decaf, a certified organic, Fair Trade coffee from Mexico, decaffeinated using a natural water process. Mild, sweet, and balanced.

We will also have a small quantity of other coffees from recent roasting sessions, by the bag and by the cup.

Peaches! Peaches! Peaches!

Our sweet juicy peaches are ripe for the pickin'.  Good every day, all day!  Even help soothe your afternoon hunger pangs with Mrs. Mary's tree-ripened peaches!  No need to reach for the vending machine change, instead sink your teeth into some peachy goodness.  And while you're at it, get enough for the entire office or even your grouchy sister's brother's mother's cousin's consin's dog Fido.  These peaches are so tasty they'll even put a smile on her face!

As I'm writing this we've just finished up a thunderstorm and there are more on the way.  In the past week we've had over 5 inches of rain, which to say the least is uncommon for the middle of the year!  Weeds are growing like crazy and the ground won't dry out for more planting in the garden.  The good thing is that the grass in the pastures is still green and supplying plenty of grazing for the cattle and sheep.

This week you'll find us again with the grill fired up at Cheapside on Saturday and Southland on Sunday.  If you get out of your car at either location and get a whiff of those succulent burgers and brats, just follow your nose and bring your appetite.  The burgers and brats are made from our beef as well as the onions and soon tomatoes from our garden.  These burgers aren't those little thin things you get from the drive thru.  These are hand made, thick, juicy and topped with some of the market's best local cheeses.  Place your orders for lunch or breakfast when you first get to the market, do some shopping and then stop by to pick up your meal.  There's also plenty of sweet tea, lemonade and other drinks available.  We'll also be at Commonwealth Stadium on Wednesday.

The coolers will be full of beef and lamb, the tables full of breads, jams, relishes and plenty of veggies.  Candy onions are ready and there's lots of other flavorful selections to be had.  Stop in , stay a while.  We're waiting for you....

From our family farm to your family's table.  The fields are alive with activity.  This week we are excited to offer three kinds of beans (Roma, purple filet, yellow wax), three kinds of greens (collards, chard, and kale), and three kinds of herbs (basil, cilantro, and parsley).  We'll have 4 kinds of squash (zucchini, yellow, coosa, pattypan).  It's probably the last week for broccoli and cauliflower.  Just like last week, we will still have onions (candy and red), tamtilloes, peppers (yummy, banana, bell, and hot), cucmbers (pickling and slicing), and eggplant.  And our flowers...zinnias & sunflowers. New this week are okra, cherry tomatoes, green tomatoes, and spaghetti (and acorn squash).   Fennel, kohl rabi, and turnips are all ending soon!

Just in time for the Holiday weekend, we'll have PLENTY of great flowers for the Market this week! We love making big bouquets of colorful ZINNIAS, fragrant (and edible!) LEMON BASIL mixed with a variety of fresh-cut GARDEN FLOWERS. We'll also have bunches of giant POLLENLESS SUNFLOWERS with Zebra grass, fragrant English SWEET PEA bouquets, Annabelle and Oak Leaf HYDRANGEAS and huge stems of fabulously fragrant ORIENTAL LILIES.

Check us out on Facebook for all the latest photos from the flower farm and we look forward to seeing you this week at the Market. For special orders, or to reserve flowers, just give us a call at 859-771-2085 or send us a note anytime through Facebook.

InYourCommunityIn Your Community

This past week, LFM staff continued to spread the word about the fantastic produce currently available at market. A particularly enjoyable time was had at the William Wells Brown Community Center. Here, adults from around the community gathered to make broccoli pizza and berry salsa with the help of Sara Talbott, a Fayette County Extension Agent. Equipped with ingredients from that day's market, everyone had a great time whipping up these healthy treats!

Join in the fun, and incorporate the Lexington Farmers' Market into your next event, class, or gathering. We love getting to know all of our loyal customers, while creating new customers every week. While LFM produce speaks for itself, staff members are always willing to tag along and talk about the benefits to shopping at a farmers' market.

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news.
