Remember that we are into peak farmers' market season, we have markets 5 days each week. On Tuesday and Thursday we are at the corner of Broadway and Maxwell from 7am - 3pmEvery Wednesday from 3pm-6pm stop by the Lexington Farmers' Market at UK. It's located near the University of Kentucky's Commonwealth Stadium on the corner of University Drive and Alumni Drive (click here for map).  This market is open to everyone, not just UK employees and students. On Saturday, you'll find your favorite farmers set up with tables full of fresh, spring products at Cheapside Park from 7am-3pmOn Sunday, follow us to market on Southland Drive from 10am-2pm for another taste seasonal produce.
 
Remember, free parking is available at all of our market locations. On Saturday, you may park in the Financial Center garage and in any metered street spot for FREE!

Recipes of the Week:

Shaved Kohlrabi, Asparagus, and Carrot Salad

 

  

Ever wonder how to use that funky looking kohlrabi? Cassie from the blog Back to Her Roots shows us a easy, summery side dish.

 

Ingredients:

(Makes 4, 3/4 cup servings)

 

1 pound asparagus

1 bulb kohlrabi (peeled)

1 large carrot (peeled

2 tablespoons olive oil

1 teaspoon Dijon mustard

Juice of 1 Lemon

Salt & Pepper (to taste)


Directions: 

 

  1. Lay a single spear of asparagus down flat on a cutting board. Using a sharp vegetable peeler, peel long, thins trips of asparagus from end to spear-discarding the remaining asparagus when it gets too thin to shave. Continue with all remaining spears.
  2. Cut the kohlrabi bulb into thick slices, and then shave with vegetable peeler using the same method as the asparagus. Repeat the same process with the carrot.
  3. In a mixing bowl, mix together the asparagus, kohlrabi, and carrot shavings. Set aside.
  4. In a small jar with a tight-fitting lid, add the olive oil, mustard, lemon juice, salt and pepper. Close the lid and shake until emulsified. Pour dressing over veggie shavings and toss to coat.

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

You won't see hydraulic presses and fancy modern equipment around here. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

 

This week we will have over a dozen different cheeses available. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Abbey Road and of course our bourbon infused Kentucky Derby. Magic Beans Coffee Roasters will have two outstanding South American coffees this week: one from a small growers association in Colombia, the other from a single Brazilian estate. All of our coffees are available in bulk or in 12-ounce, oxygen-free valve-bags. Colombia (Huila, Asociación Los Naranjos de San Agustín): This coffee comes from the Los Naranjos growers association, a group of about 50 farmers near the town of San Agustín, who have consistently produced some of the best Colombian coffees over the past decade. This rare, high-grown (1,500-1700 meters above sea level) coffee has a nice balance of origin and roast flavors: Medium, citrus-like acidity, aromas of orange, papaya, and molasses, and a rich, cocoa-like body. Brazil (Monte Sião, Fazenda Santa Lúcia): Fazenda Santa Lúcia, located in the high-quality coffee region of Monte Sião, has about 500,000 trees of arabica coffee, grown with organic fertilizers and minimal other inputs, at an elevation of 1,000-1,200 meters above sea level. This coffee is prepared using a pulped natural process, in which the skin of the coffee cherry is removed, but the pulp is left on the beans to dry. This results in a coffee that is lower in acidity than a fully washed coffee, without the "wild" flavors often associated with the traditional natural dry process, in which the entire fruit is dried before further processing. Very mild, sweet, and balanced, buttery, toffee-nut aromas, with hints of orange peel and bourbon whiskey. More information is available online at www.magicbeanscoffee.com/files/13-04-06_Bulletin.pdf.

Hay season is in full swing here at the farm.  There's also a garden to plant, weed and harvest, cattle and sheep to move from pasture to pasture and there's rumor that there could soon be a goat herd coming to Quarles Farm. 

 

Regardless of all the work that is there to be done, we're waiting for all of you at Commonwealth Stadium each Wednesday afternoon.  We're there along the trees next to the road.  Easy to find and plenty of parking close to great local foods.  We have the grill going that afternoon as well as on Saturday at Cheapside and Sunday on Southland.  Come on out and give our great treats a try! 

 

The coolers are full of beef, lamb and goat.  The tables are loaded with homemade breads as well as salsas, relishes, jams, and chutneys all made with Quarles Farm produce and canned right in our kitchen just the way your mother and grandmother used to do.  Homemade goodness canned at the peak of flavor.  Nothing better.

Good afternoon everyone I'm Steve.  Some may consider me zany but I love the unique, unusual, and tasty.  Ever week I strive to bring you wonderful fruits and vegetables that will take any snack or meal from ordinary to extraordinary.  This week I'm proud to serve you multicolored heirloom tomatoes, and beets in golden, crimson, and peppermint-stripped hues. Need sweet onions? Skip the Vidalias and try a bunch of my delicious candy onions instead.  And I know that the rain last week had everyone feeling blue, so I made sure to get you some plump, juicy, blueberries to brighten you day.  So don't be afraid to stop by and ask me how the cucamelons are doing.  See you each and every day the market is open.

From the rolling hills of Woodford County our family is here to feed yours.  This week we have all the fixings for
salsa verde, tomatillos, cilantro, onions, and peppers.  Make some coleslaw for our cabbage, carrots, broccoli, cauliflower, and even kohlrabi. For the grill, slice up acorn squash, egg plant, fennel, or beets, drizzle with olive oil and sprinkle with our parsley and basil for a super easy, super healthy side.  Finally round out any meal with something green...green or (purple) beans, cooked greens, or a salad topped with cucumbers.  And Finally, add some warmth to any table with a vase of sunflowers or zinnias.  In the coming days be on the look out for tenderette beans, okra, red cabbage, and spaghetti squash.

Among our cut flowers this Saturday will be the FIRST stems of the fabulous 'Roselily,' a softly fragrant Oriental with wonderful double blooms and almost no pollen, which means the flowers last a very long time. Check out our Facebook site to see Roselily - she's almost other-worldly!

 

We are also cutting our first Hydrangea blooms for the Market. As part of our conditioning process, we do something a bit special when we cut Hydrangeas to keep them from wilting. We dip the stems in alum powder, which is commonly used for pickling, before putting them in the cooler. This week we're planning to have both chartreuse and creamy white branches of 'Annabelle' and the magnificent oakleaf 'Snow Queen.' Coming later will be 'Limelight,' the peegee hydrangea 'Grandiflora' and then last of all, 'Tardiva' will bloom in late August or September.
