Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.
You won't see hydraulic presses and fancy modern equipment around here. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.
This week we will have over a dozen different cheeses available. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Abbey Road and of course our bourbon infused Kentucky Derby. Oh, and don't miss the Caerphilly, a tangy traditional Welsh coal miners cheese.

Possessing a palate from his years in the San Francisco wine trade, Mark Newberry understood the ancient art of blending different grapes to make a better wine. Various winegrapes complement and enhance each other to create a more complex wine, a more memorable and satisfying glass of wine. Coffee beans, he soon discovered, are similar agriculturally and culinarily, so blending coffee beans from different regions of the world produce a finer, more interesting, cup of coffee.
Blending, in the wine trade, is considered an art. You can enjoy some of the artfully produced coffees here at the Lexington Farmers Market.

EGGS We offer each market our certified organic eggs from free-ranging hens who live outdoors on grass pasture. Both whole dozen and half-dozens available. Our hens are always outside, enjoying the green growing grass & clover and rewarding us with beautiful big brown eggs packed full of flavor, orangey color, and healthful omega-3-fatty acids.
MEAT and POULTRY We have restocked our inventory of grass-fed Angus organic beef, along with our certified organic whole chickens, cut-up chicken pieces, and flavorful hearty stewing hens. In addition, we have chicken liver and ground turkey. Feel free to order ahead for quantity amounts or a particular cut for that special meal, and we'll have it ready for pickup at any of the farmers markets. Our high tunnel tomatoes are starting to trickle in! We have been noticing pockets of different colored tomatoes everywhere and we will be having more each day, but for now quantities are limited. Look for us and our big box truck at the corner of Short and Upper on Saturday, and at Southland Drive on Sunday. All of our offerings are sustainably grown, Kentucky Proud, 100% homegrown, and pesticide free. We will have the following:

The outdoor Lexington Farmers Markets for 2013 are now open. We will be at the following markets this week if it doesn't rain:
Downtown at Cheapside Park, Saturday, June 22nd (opens at 7am)

You may purchase honey, pollen, and/or beeswax candles from us anytime from our home at 1909 Nicholasville Road in Lexington. Call us first at 859 276-0258, and we will put what you want on our back porch for you to pick up. You may also call to make an appointment to look at Bev's candle selection.
Our home is located one block north (toward downtown) of the intersection of Southland Drive and Nicholasville Road. Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter. There is change in a small jar on the counter if you need some.

Magic Beans Coffee Roasters will have two outstanding South American coffees this week: one from a small growers association in Colombia, the other from a single Brazilian estate. All of our coffees are available in bulk or in 12-ounce, oxygen-free valve-bags. We also offer brewed-to-order cups of coffee at our pour-over bar. Bring your favorite mug! Colombia (Huila, Asociación Los Naranjos de San Agustín): This coffee comes from the Los Naranjos growers association, a group of about 50 farmers near the town of San Agustín, who have consistently produced some of the best Colombian coffees over the past decade. This rare, high-grown (1,500-1700 meters above sea level) coffee has a nice balance of origin and roast flavors: Medium, citrus-like acidity, aromas of orange, papaya, and molasses, and a rich, cocoa-like body. Brazil (Monte Sião, Fazenda Santa Lúcia): Fazenda Santa Lúcia, located in the high-quality coffee region of Monte Sião, has about 500,000 trees of arabica coffee, grown with organic fertilizers and minimal other inputs, at an elevation of 1,000-1,200 meters above sea level. This coffee is prepared using a pulped natural process, in which the skin of the coffee cherry is removed, but the pulp is left on the beans to dry. This results in a coffee that is lower in acidity than a fully washed coffee, without the "wild" flavors often associated with the traditional natural dry process, in which the entire fruit is dried before further processing. Very mild, sweet, and balanced, buttery, toffee-nut aromas, with hints of orange peel and bourbon whiskey. Hay season is in full swing here at the farm. There's also a garden to plant, weed and harvest, cattle and sheep to move from pasture to pasture and there's rumor that there could soon be a goat herd coming to Quarles Farm.
Regardless of all the work that is there to be done, we're waiting for all of you at Commonwealth Stadium each Wednesday afternoon. We're there along the trees next to the road. Easy to find and plenty of parking close to great local foods. We have the grill going that afternoon as well as on Saturday at Cheapside and Sunday on Southland. Come on out and give our great treats a try!
The coolers are full of beef, lamb and goat. The tables are loaded with homemade breads as well as salsas, relishes, jams, and chutneys all made with Quarles Farm produce and canned right in our kitchen just the way your mother and grandmother used to do. Homemade goodness canned at the peak of flavor. Nothing better.

Good afternoon everyone I'm Steve. Some may consider me zany but I love the unique, unusual, and tasty. Ever week I strive to bring you wonderful fruits and vegetables that will take any snack or meal from ordinary to extraordinary. This week I'm proud to serve you multicolored heirloom tomatoes, and beets in golden, crimson, and peppermint-stripped hues. Need sweet onions? Skip the Vidalias and try a bunch of my delicious candy onions instead. And I know that the rain last week had everyone feeling blue, so I made sure to get you some plump, juicy, blueberries to brighten you day. So don't be afraid to stop by and ask me how the cucamelons are doing. See you each and every day the market is open.

From the rolling hills of Woodford County our family is here to feed yours. This week we have all the fixings for
salsa verde, tomatillos, cilantro, onions, and peppers. Make some coleslaw for our cabbage, carrots, broccoli, cauliflower, and even kohlrabi. For the grill, slice up acorn squash, egg plant, fennel, or beets, drizzle with olive oil and sprinkle with our parsley and basil for a super easy, super healthy side. Finally round out any meal with something green...green or (purple) beans, cooked greens, or a salad topped with cucumbers. And Finally, add some warmth to any table with a vase of sunflowers or zinnias. In the coming days be on the look out for tenderette beans, okra, red cabbage, and spaghetti squash.

Among our cut flowers this Saturday will be the FIRST stems of the fabulous 'Roselily,' a softly fragrant Oriental with wonderful double blooms and almost no pollen, which means the flowers last a very long time. Check out our Facebook site to see Roselily - she's almost other-worldly!
We are also cutting our first Hydrangea blooms for the Market. As part of our conditioning process, we do something a bit special when we cut Hydrangeas to keep them from wilting. We dip the stems in alum powder, which is commonly used for pickling, before putting them in the cooler. This week we're planning to have both chartreuse and creamy white branches of 'Annabelle' and the magnificent oakleaf 'Snow Queen.' Coming later will be 'Limelight,' the peegee hydrangea 'Grandiflora' and then last of all, 'Tardiva' will bloom in late August or September.
