This Week

June 12th, 2013

Loyal Readers and Market Patrons,

The Lexington Farmers' Market has had so much fun visiting elementary schools around town this spring! There is nothing better than sharing the taste of fresh produce and the pride of local production with children. In addition to meeting your children in their schools, we are proud to welcome families from all across the bluegrass to our weekly markets. We appreciate being a place where you enjoy buying local produce, being outdoors, and most importantly, spending time with each other. This weekend, plan a special family Father's Day outing to the market.

If we can make your trip to market a special one by helping your child's camp, team, troop, or group organize an activity table, performance, or take a market tour, please let us know. As you can see from the photo of 4H Teen Challenge Participants preparing for their local foods cooking class, the market is a lot of fun. We welcome all interested people to contact Stephanie at stephanie@lexingtonfarmersmarket.com to make arrangements. See the Market Happenings section of this newsletter for information about upcoming youth events at our markets.

Recipe Double Feature!
Recipes of the Week:

Kielbasa with Pepper & Onion Relish

This week's recipe is from the Tasting Table Test Kitchen. The relish is a great way to add a flavor punch to your standard grilling fare.

Ingredients:
(makes 4 with leftover relish)

Relish

3 tablespoons extra-virgin olive oil

2 tablespoons finely chopped fresh rosemary

½ teaspoon dried red pepper flakes

½ teas

poon freshly ground black pepper

1 medium yellow onion, finely chopped

1 medium red bell pepper--halved, seeded and finely chopped

garlic cloves, very finely chopped

1½ teaspoons kosher salt

3 tablespoons maple syrup

3 tablespoons seedy Dijon mustard

¾ cup finely chopped Peppadew peppers (about 15 Peppadews)

½ cup

¼ cup water

Kielbasa

1 tablespoon extra-virgin olive oil

4 kielbasa links (about 1 pound)

1 medium red onion, halved then thinly sliced

¼ teaspoon kosher salt

4 Italian hero or submarine buns

¼ cup melted butter or mayonnaise (optional)

Directions:

  1. Make the relish: In a large skillet set over medium heat, add the 3 tablespoons of olive oil. Once the oil shimmers, after 1 to 2 minutes, add the rosemary, red pepper flakes and black pepper. Stir until the rosemary and black pepper are fragrant, 30 seconds to 1 minute. Add the onion, increase the heat to medium-high and cook, stirring occasionally, until the onion is soft and just starting to brown around the edges, 3 to 5 minutes. Stir in the red bell pepper and cook until soft, about 8 minutes, then add the garlic and the 1½ teaspoons of salt and cook, stirring often, until the garlic is fragrant, about 1 minute. Stir in the maple syrup, mustard, Peppadew peppers, vinegar and water, bring to a simmer and reduce the heat to medium. Cook, stirring occasionally, until the relish is thick and glossy and there isn't any liquid pooling in the bottom of the skillet, 12 to 15 minutes more. Turn off the heat and transfer the relish to a medium bowl.
  2. Cook the kielbasa: In a large skillet set over medium-high heat, add the 1 tablespoon of olive oil. Add the kielbasa links and brown on both sides, 4 to 6 minutes total. Transfer the kielbasa to a paper-towel-lined plate.
  3. Sprinkle the sliced red onion with the ¼ teaspoon of salt and set aside for 5 minutes. Halve the buns lengthwise and tunnel out a narrow strip down the thickest half (the trench will cradle the sausage). Brush with the melted butter or mayonnaise, if using, then place the rolls cut side up under the broiler until toasted, 1 to 3 minutes (watch the bread closely, as broiler intensities vary).
  4. Divide the salted onions among the bottom halves of each toasted bun. Add a kielbasa link to the trench of each bun. On the top half of each bun, spread about ¼ cup of relish.
These products can be purchased from LFM market members:
  • Olive Oil
  • Rosemary
  • Onions
  • Garlic
  • Peppers
  • Salt
  • Kielbasa

Happy Fathers' Day to my Dad (93 years old!) and all of our faithful market shopper Dads!  It looks like the perfect weekend to celebrate all that our Dads mean to us.  Mine is wise, kind, loving, and has always supported his kids in whatever they did (hare-brained or not!).  Thanks, Dad!

We know there will be a lot of Fathers' Day grilling going on this weekend, and we've got all kinds of great meats to barbeque......LAMB CHOPS, GRASS FINISHED BEEF BURGERS, all kinds of PORK SAUSAGES, PORK CHOPS, STEAKS, RACK of LAMB and even a whole BEEF TENDERLOIN (and steaks are 30% off!).  How about a "Mixed Grill"??  Get some of all Dad's favorites, add some FRESH GARLIC BULBS, CANDY ONIONS or fresh SHALLOTS and GARLIC SCAPES for seasoning.........I can smell it now!

We hope to have some more of our BABY LETTUCE MIX this week, and BABY KALE.  Other hydroponically grown salad greens and BASIL from VIBRANT GREENS in Madison Co.  Our fresh cut CILANTRO and ROSEMARY too.

Making Dad breakfast in bed?  We'll have lots of great Stone Cross Farm SMOKED BACON, BREAKFAST SAUSAGE (Medium, Hot, Extra Sage) and Piggie Links (Mild).  Then how about French Toast made with some of Sunrise Bakery's ARTISAN BREAD and some local eggs?  Or maybe a Mexican Frittata with crumbled CHORIZO, FRESH MUSHROOMS, ONIONS, GARLIC and CILANTRO?  Top with some yummy Artisan CHEESE from Stone Cross Farm's Cloverdale Creamery and fresh salsa!

If you need a pastry to hold everybody until brunch, we'll have CINNAMON BUNS, CROISSANTS, and MUFFINS, or maybe a GARLIC BAGEL with fresh goat cheese is more to your liking!

You know what's for dessert!  GARLIC CHOCOLATE CHIP COOKIES!!

GARLIC HARVEST begins in earnest on Wednesday, so for the next few weeks we'll have yummy FRESHLY HARVESTED GARLIC BULBS with the tops left on.  The cloves are crunchy and juicy.  If you've never had it fresh, you really must try some!  Our GARLIC SCAPE deal ($5.00/LB for 1LB or greater quantities) was such a hit last week we're going to do it again!  This will probably be the last week for SCAPES, so stock up for pesto making or seasoning of your vegetables.  They will keep a month or longer in the fridge!

We'll hope to see you Saturday behind the old courthouse on Short St, Sunday in front of Goodyear on Southland Drive.  Please send us an email if you have a special order!

Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

You won't see hydraulic presses and fancy modern equipment around here. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

This week we will have over a dozen different cheeses available. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Abbey Road and of course our bourbon infused Kentucky Derby. Oh, and don't miss the Caerphilly, a tangy traditional Welsh coal miners cheese.

Thanks for your support. See you at the market.

" hand-crafted, Fair Trade, certified organic, and utterly delicious "

- The Lexington Herald-Leader

Trieste, Italia, which claims a coffee roasting tradition going back to 1683 and the defeat of the Turks at the Battle of Vienna is the birthplace of CaffeMarco. The inspiration, the respect, and the exhilaration are all there - and they can be felt and recognized in the first cup of coffee.  The passion and the attention are evident. This is our tradition.

In downtown Paris Kentucky, roasting the finest arabica coffee beans in a ten pound coffee roaster and using the proven and traditional methods, Mark Newberry keeps the inspiration of Trieste alive and well.

Possessing a palate from his years in the San Francisco wine trade, he understood the art of blending different grapes to make a better wine. Various winegrapes complement each other to create a more complex wine, a more memorable and satisfying glass of wine. Coffee beans, he discovered, are similar agriculturally and culinarily, so blending coffee beans from different regions of the world produce a finer cup of coffee. Blending, in the wine trade, is considered an art. You can enjoy some of the artfully produced coffees here at the Lexington Farmers Market.

We will not be at this Wednesday's market but hope to see you at all the other markets this week!

Everyone is welcoming the late spring this year.  We appreciate seeing so

many familiar faces returning to the markets on Saturday and Sunday

outdoors.  We will continue to attend each week, rain or sun or something

in between - hope to see you as well!

We've had great feedback on our jarred Salsa, Ketchup, and Marinara Sauce,

all professionally packed in BPA-free glass.  We'll continue to offer

these items each week until sold out - and we'll be planting enough for a

bumper crop of organic tomatoes this summer to restock the pantry.

NEW, NEW  We have found a professional charcutier to make delicious

sausages and bratwursts for us from Elmwood organic beef.  It has been

several years since we had our all-beef sausages to offer, and we are

really excited about these tasty and high quality offerings.

EGGS We offer each market our certified organic eggs from free-ranging

hens who live outdoors on grass pasture.  Both whole dozen and half-dozens

available. Our hens are always outside, enjoying the green growing grass &

clover and rewarding us with beautiful big brown eggs packed full of

flavor, orangey color, and healthful omega-3-fatty acids.

MEAT and POULTRY  We have restocked our inventory of grass-fed Angus

organic beef, along with our certified organic whole chickens, cut-up

chicken pieces, and flavorful hearty stewing hens.  In addition, we have

chicken liver and ground turkey.  Feel free to order ahead for quantity

amounts or a particular cut for that special meal, and we'll have it ready

for pickup at any of the farmers markets.  View our website for special

Beef & Chicken Bundles, and other quantities packages.

These days, more than ever, it's important to know the source of your

family's food and you can look to our local organic farm to meet your

body's nutritional needs resulting in good health.  Visit our website to

learn more, review our price lists, pre-order your special items, or

contact Elmwood for more information.

If knowing the origin of what you consume is important to you, as it should be, then we are the folks to shop with.  EVERYTHING we offer is started from seed and grown by us just 15 miles away at our farm in Nicholasville.  We opt to use biological controls and to release beneficial insects like lacewings and lady beetles instead of spraying with pesticides that kill honey bees and beneficial predators to create a pest management system that is friendly to the food we bring to market as well as the environment.

Look for us and our big box truck at the corner of Short and Upper on Saturday and at Southland Drive on Sunday.   All of our offerings are sustainably grown, Kentucky Proud, 100% homegrown, and pesticide free.

Hay season is in full swing here at the farm.  There's also a garden to plant, weed and harvest, cattle and sheep to move from pasture to pasture and there's rumor that there could soon be a goat herd coming to Quarles Farm.

Regardless of all the work that is there to be done, we're waiting for all of you at Commonwealth Stadium each Wednesday afternoon.  We're there along the trees next to the road.  Easy to find and plenty of parking close to great local foods.  We have the grill going that afternoon as well as on Saturday at Cheapside and Sunday on Southland.  Come on out and give our great treats a try!

The coolers are full of beef, lamb and goat.  The tables are loaded with homemade breads as well as salsas, relishes, jams, and chutneys all made with Quarles Farm produce and canned right in our kitchen just the way your mother and grandmother used to do.  Homemade goodness canned at the peak of flavor.  Nothing better.

We'll also be cutting more of the lavender rose snapdragons and will have a few bouquets of them with lilies.

Thank goodness for the deep rains this week! Sunflowers, Lisianthus, Zinnias and the fragrant basils are all growing well in the field, so it won't be long until we can have them at the Market. We have three 50' rows of awesome Dahlias coming up - they will be fantastic in later summer!

Genetic Roulette

Never before seen evidence points to genetically engineered foods as a major contributor to rising disease rates in the US population, especially among children. Gastrointestinal disorders, allergies, inflammatory diseases, and infertility are just some of the problems implicated in humans, pets, livestock, and lab animals that eat genetically modified soybeans and corn. Monsanto's strong arm tactics, the FDA's fraudulent policies, and how the USDA ignores a growing health emergency are also laid bare. This sometimes shocking film may change your diet, help you protect your family, and accelerate the consumer tipping point against genetically modified organisms (GMOs). Don't miss this film.

WUKY

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so please pledge now and thank you so much for supporting WUKY.
