Now that we are into peak farmers' market season, we have markets 5 days each week. On Tuesday and Thursday we are at the corner of Broadway and Maxwell from 7am - 3pmEvery Wednesday from 3pm-6pm stop by the Lexington Farmers' Market at UK. It's located near the University of Kentucky's Commonwealth Stadium on the corner of University Drive and Alumni Drive (click here for map).  This market is open to everyone, not just UK employees and students. On Saturday, you'll find your favorite farmers set up with tables full of fresh, spring products at Cheapside Park from 7am-3pmOn Sunday, follow us to market on Southland Drive from 10am-2pm for another taste of spring.
 
Remember, free parking is available at all of our market locations. On Saturday, you may park in the Financial Center garage and in any metered street spot for FREE!

Recipe of the Week:

Ratatouille Stuffed Pattypan

 

  

This week's recipe is from Mrs. Talley at House to Haus blog. She does a wonderful job at making a delicious entrée while preserving the unique shape of the, recently-in-season, pattypan squash. 

 

Ingredients:
(makes 2 servings
)
  • 1 medium sized pattypan squash
  • olive oil
  • butter
  • 1 spring onion, chopped
  • 1 medium eggplant
  • 1 zucchini, thickly chopped
  • 10 or so cherry tomatoes, halved
  • 12 oz tomato pasta sauce
  • salt and pepper
  • Parmesan cheese

Directions: 

 

  1. Preheat the oven to 400ºF
  2. Slice the top off of the squash, flip and slice the bottom off. With the bottom facing up scoop out the flesh and seeds, and reserve. Place the squash in an oven safe cast iron pan, drizzle with oil and place in the oven. Cook the squash until it is fork-tender, about 30-40 minutes.
  3. Dice eggplant into 1/2 inch cubes; salt and allow to sit for 20 minutes.
  4. Saute onions in equal parts oil and butter.
  5. Add eggplant, zucchini, and leftover pattypan squash pieces to the onions and cook until soft.
  6. Add the cherry tomatoes, stir. Starting with a little bit at a time add the tomato sauce until the ratatouille reaches a consistency that you like. Season with salt and pepper. 
  7. Fill the pattypan squash with as much ratatouille as will fit and top with grated cheese. Return back to the oven for about 15 minute or until cheese has melted and juices are dripping.

***Sustainably Grown*** Last Friday we harvested about 10 LB of the earliest GARLIC SCAPES for market.  Monday the harvest was over 300 LB!!  That's scapes for you!  They come almost all at once and are only around for a few weeks.  It's time to get your fill before they're gone!  They put a nice garlicky crunch in all kinds of salads, from a green salad to tuna, chicken or pasta salad.  Try them stir fried with sugar snap peas, broccoli, kale or just about any other vegetable.  Grill them alongside your steak or chicken and use them to top it off.  Eat them like candy right out of the fridge! GARLIC SCAPES are also the precursor to our main GARLIC HARVEST!  We will have a few of the earliest hand-dug FRESH GARLIC bulbs this weekend!  And for the BABY GREEN GARLIC fans, we're sorry to say it is all gone for this year.  Switch to the fresh garlic and use it just about the same way....you don't even need to peel the cloves!  The clove wrappers are still wet and edible!  There is NOTHING like FRESH GARLIC!!! This gorgeous spring weather has been perfect for GREENS!  We'll have more of our LETTUCE MIX this weekend, KALE, some SPINACH and FRESH CUT CILANTRO.  There will be local tomatoes on the market this week, so get those salsa recipes dusted off!  Try some made with FRESH SHALLOTS and GARLIC SCAPES! From Vibrant Greens, our neighbors in Madison County, we'll have beautiful hydroponic greens like ROMAINE, RED LEAF LETTUCE, or BUTTERHEAD, and beautiful GENOVESE BASIL!  Keep a little water on the roots, let it sit on your counter and it will keep a long time! Our cheese is made from all natural JD Country Milk, a family owned Mennonite dairy farm in Logan County. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We think the milk tastes better because the cows are happy.

You won't see hydraulic presses and fancy modern equipment around here. Instead, we make our cheeses by hand using traditional European techniques to protect the delicate curds. This is a lot more work and very time consuming, but we believe it creates better cheeses with rich complex flavors. We hope you agree.

This week we will have over a dozen different cheeses available. Stop by and sample our Butterkase (Amish Butter Cheese), Mama Mia, Sassy Redhead, Tuscan Sun, Abbey Road and of course our bourbon infused Kentucky Derby. Oh, and don't miss the Caerphilly, a tangy traditional Welsh coal miners cheese.

Magic Beans Coffee Roasters this week will introduce a Colombian coffee as its featured single-origin selection of the month. This coffee comes from the Los Naranjos growers association, a group of about 50 farmers near the town of San Augustin, Huila, who have consistently produced some of the best Colombian coffees over the past decade. The cup has a medium, citrus-like acidity, with aromas of orange, papaya, and molasses, and a rich, cocoa-like body. 

We'll also be offering hand-poured coffee, brewed to order at our pour-over bar. Bring your favorite mug!

Summer is here!  We've weaned the lambs and have moved cows to summer pasture.  Hay is being cut and stored for winter feed.  Blackberries are blooming so we're looking forward to blackberry jam soon being back on the tables. 

 

Grilling season is here and our brats and hamburger patties make having a fun time easy.  We also have some beautiful ribeye and New York strip steaks to grace your grill.  Just got back from the processor and we'll have our coolers restocked with all cuts of lamb; leg, chops, ground lamb, stew meat.  And for the first time, Quarles Farm will have GOAT!  If you've never had it stop by and give it a try.  Lots of folks have been asking for it and now it's here!

 

The grill will also be going next grilling our hamburgers, brats, and jumbo hot dogs Saturday, Sunday and Wednesday.  You can also get breakfast biscuits, omelets, and local eggs made your way.  Stop in and have a meal with us.  We think you'll enjoy it!
