This week you can find these products and much more at one of our five daily markets. On Tuesday and Thursday we are at the corner of Broadway and Maxwell from 7am - 3pmEvery Wednesday from 3pm-6pm stop by the Lexington Farmers' Market at UK. It's located near the University of Kentucky's Commonwealth Stadium on the corner of University Drive and Alumni Drive (click here for map).  This market is open to everyone, not just UK employees and students. On Saturday, you'll find your favorite farmers set up with tables full of fresh, spring products at Cheapside Park from 7am-3pmOn Sunday, follow us to market on Southland Drive from 10am-2pm for another taste of spring.
 
Remember, free parking is available at all of our market locations. On Saturday, you may park in the Financial Center garage and in any metered street spot for FREE!

Recipe of the Week:

Strawberry & Balsamic Grilled Chicken Salad

 

  

This week's recipe is base on one by Kevin Lynch at Closet Sized Cooking, and it shows us another delicious way to use strawberries before they're gone!

 

Ingredients:
(makes 4 servings
)

 

Marinade & Chicken

  • 1 pound chicken breasts
  • 1/2 cup balsamic vinaigrette (for marinading)

Salad

  • 2 cups spinach
  • 2 cups swiss/rainbow chard
  • 1 pint strawberries, sliced
  • 4 strips bacon, cooked
  • 4 ounces goat cheese, crumbled
  • 1/4 cup pecans or candied pecans
  • 1/4 *Additional* balsamic vinaigrette (for dressing)
 

Directions: 

 

  1. Place the chicken and balsamic vinaigrette in a large ziplock bag and marinate in the fridge for 30 minutes to over night. 
  2. Heat the grill or a grill pan over medium heat and brush it with oil.
  3.  Place the chicken on the grill until cooked, about 2-4 minutes per side and set aside.
  4.  Slice the chicken assemble the salad and enjoy!
  5.

Everyone is welcoming the late spring this year.  We appreciate seeing so

many familiar faces returning to the markets on Saturday and Sunday

outdoors.  We will continue to attend each week, rain or sun or something

We've had great feedback on our jarred Salsa, Ketchup, and Marinara Sauce,

all professionally packed in BPA-free glass.  We'll continue to offer

these items each week until sold out - and we'll be planting enough for a

bumper crop of organic tomatoes this summer to restock the pantry.

 

NEW, NEW  We have found a professional charcutier to make delicious

sausages and bratwursts for us from Elmwood organic beef.  It has been

several years since we had our all-beef sausages to offer, and we are

really excited about these tasty and high quality offerings.

 

EGGS We offer each market our certified organic eggs from free-ranging

hens who live outdoors on grass pasture.  Both whole dozen and half-dozens

available. Our hens are always outside, enjoying the green growing grass &

clover and rewarding us with beautiful big brown eggs packed full of

flavor, orangey color, and healthful omega-3-fatty acids.

 

MEAT and POULTRY  We have restocked our inventory of grass-fed Angus

organic beef, along with our certified organic whole chickens, cut-up

chicken pieces, and flavorful hearty stewing hens.  In addition, we have

Turn on Goodrich Avenue and take the first driveway on your right, and you will be in our back yard. There will be a silver travel trailer (Airstream) under an awning directly in front of you. Your honey will be on the back porch. If we are not home, just leave the money on the counter.  There is change in a small jar on the counter if you need some.

Wow, thanks so much to everyone who took home flowers last week! It was an amazing day and we sold out much faster than we ever anticipated. Hope they helped make your Memorial Day just a bit sweeter.

This week we will have a very limited amount of cut flowers it looks like. The beautiful coral 'Gluwhein' may give us enough blooms to bring. The Sweet Peas are just beginning to bloom and we hope to be able to bring a few bunches of these fragrant beauties over the next few weeks. We are setting out Lisianthus and will have a few six packs of blue, blue blush, white and rose.

By the way, if you know someone who's planning a wedding and values fresh, fabulous and locally grown seasonal flowers, we hope you'll send them our way.
