Loyal Readers and Market Patrons,

 

The unofficial start to SUMMER and the first weekend of summer break for Lexington Public Schools is upon us.  It's a perfect time to clean off the grill and have a local foods, farm fresh cookout.  As we take time to remember all those who have fallen while serving in the US Armed Forces, let's also celebrate their lives and the freedoms which they bravely protected.  For some great Memorial Day ideas check out the recipe below and visit our Facebook page.

 

We want to see how you use all the delicious things you buy at the Lexington Farmers' Market.  Take a picture (or pictures) of your favorite dish, your backyard cookout, or community potluck.  Share your story on Facebook, Twitter, or Instagram.  And Tag us or use a creative hashtag (#) so we can find it!  You can even start snapping photos tonight!

 

This week also marks the OPENING of our 5th weekly market location.  Every Wednesday from 3pm-6pm stop by the Lexington Farmers' Market at UK .  It's located near the University of Kentucky's Commonwealth Stadium on the corner of University Drive and Alumni Drive (click here for map).  This market is open to people, not just UK employees and students.  There's also free parking. So stop by to pick up all your dinner essentials!

 

This week, you can find us on Tuesday and Thursday at the corner of Broadway and Maxwell from 7am - 3pmOn Saturday, you'll find your favorite farmers set up with tables full of fresh, spring products at Cheapside Park from 7am-3pmOn Sunday, follow us to market on Southland Drive from 10am-2pm for another taste of spring.
 
Remember, free parking is available at all of our market locations. On Saturday, you may park in the Financial Center garage and in any metered street spot for FREE!

Recipe of the Week:

Roasted Tomato Tart

 

  

This week's recipe, from Everyday Miracles and Mayhem, get's us started using some of our favorite summer ingredient: tomatoes and basil!

 

Ingredients:
(makes 2 tartlets)
  • Prepared pie crust, baked for 8 minutes and cooled
  • Grape tomatoes, cut in half or any tomato is 1/2 cubes
  • Kosher Salt
  • Freshly ground pepper
  • Olive oil
  • Sweet onion slices
  • Garlic cloves, pressed (I used 1 clove for two mini tarts)
  • Basil leaves, sliced into thin strips
  • Gruyere cheese, grated
  • Parmigiano Reggiano cheese, grated

Directions: 

  

  1. Preheat oven to 375 degrees. Prepare your tart pan or pie shell with a prepared crust. Bake the crust for 8 minutes or until it just begins to turn brown. Remove from heat and allow to cool completely before filling.
  2. Place the  tomatoes on a baking sheet. Season with salt and pepper and drizzle with olive oil. Toss gently to coat each with oil. Place the baking sheet in the 375 degree oven for approximately 12-15 minutes but watch them carefully to prevent burring. You want to to soften and release their liquid but not burn. Remove the roasted tomatoes to a plate lined with a paper towel. Saut� the sliced onion in a frying pan with a small amount of olive oil until tender but not caramelized. A minute before they are done, add the pressed garlic and stir it with the onions. Be careful that the garlic does not burn. Drain the onion and garlic on a plate lined with paper towel. Grate the cheeses.
  3. Prepare the tarts as follows:
  4. Place a layer of Parmigiano Reggiano cheese in the bottom of the pie crust. Follow with a layer of the onions and garlic. Add a layer of Gruyere cheese followed by the roasted tomatoes and basil. Fill your tar pan or pie shell to the top with a mound in the center as it will cook down. Add additional cheese on top. Bake in a 375 degree oven until the cheese is melted and bubbling. I baked my mini tarts for about 12 minutes with the filling. Allow to cool at least slightly before cutting. I removed mine from the tar pan and cut them in quarters with a sharp knife.

The weatherman is (finally) promising a good weekend for all the Memorial Day festivities, but we don't know whether or not to trust him!  For the past three weeks he has forecast rain for most of the weekend, and we've had 3 good weeks of market without getting wet!!  We're looking forward to our biggest market crowds of the year so far, as folks come down to get everything they need for family or neighborhood get-togethers!

 

Time to get the grill out!!  We've got all kinds of GRASS FINISHED STEAKS and SHORT RIBS from Colcord Farm in Paris, and BURGER for the kids....or HOT DOGS or BRATWURST from Stone Cross Farm in Spencer County!  For something different, how about LAMB shish kebab or GROUND LAMB BURGERS?  We have Kentucky LAMB from Lincoln and Garrard Counties.  LAMB LOIN CHOPS and a gorgeous RACK OF LAMB too! 

It's SALAD time!!  Our LETTUCES are beautiful, RED and GREEN OAKLEAF, DEER'S TONGUE, RUFFLED RED.  SPRING MIX too, with BABY KALE, SPINACH, PEA SHOOTS mixed with the lettuce.  We'll also have KALE and SPINACH alone, BABY GREEN GARLIC, and the first of the fresh GARLIC SCAPES for this year (limited supply!)

Everyone is welcoming the late spring this year.  We appreciate seeing so

many familiar faces returning to the markets on Saturday and Sunday

hens who live outdoors on grass pasture.  Both whole dozen and half-dozens

available. Our hens are always outside, enjoying the green growing grass &

clover and rewarding us with beautiful big brown eggs packed full of

flavor, orangey color, and healthful omega-3-fatty acids.

 

MEAT and POULTRY  We have restocked our inventory of grass-fed Angus

organic beef, along with our certified organic whole chickens, cut-up

chicken pieces, and flavorful hearty stewing hens.  In addition, we have

This Wednesday market the first day of our evening market at Commonwealth Stadium.  We're hoping all you folks will stop by on your way home from work to visit and check out all the goodies that await you.  Please don't let a little rain stop you!  We work in it all the time!  

 

We have the grill up and going and will be cooking hamburgers, hot dogs and brats at each market.  These items are made with beef grown at our farm.  Good stuff!  Grab some Wednesday and give yourself a vacation from the kitchen. 

 

We'll also have plenty of beef and lamb in our coolers. It's about time to start grilling and we have some impressive filet mignon, ribeye and other fine cuts to go on the fire. If you're looking for an economical steak, try our top sirloin. There are a lot of people in Lexington that are finding out that this cut is a fabulous piece of steak and a very good price.

 

We'll have plenty of breads and cakes on the table as well as a very wide selection of jams and jellies. Salsas and relishes round out the choices. There's something for everyone at the market so come on out, have a cup of coffee, sweet tea or hot chocolate and take a look around. You'll have a great time!
