Recipe of the Week:

Zucchini and Green Onion Muffins

This week's recipe, from  Kalyn's Kitchen, utilizes green onions in a clever way!

Ingredients:
(makes 12 2-inch muffins)
  • 2 cups grated zucchini1/2 cup crumbled Feta
  • 1/4 cup finely grated Parmesan
  • 1/2 cup thinly sliced green onion
  • 1/4 cup buttermilk
  • 2 eggs
  • 1 1/2 cups white whole wheat flour
  • 1/4 cup sugar
  • 1 tsp. all purpose seasoning
  • 1 tsp. baking powder
  • 1 tsp. baking soda

Directions:

  1. Preheat oven to 375 F.  Spray muffin tin with nonstick spray.
  2. Grate a large zucchini. Measure 2 packed cups of grated zucchini; then put the zucchini inside a kitchen towel or white napkin and squeeze out as much liquid as you can.  (There will be quite a bit of liquid.)
  3. Put the squeezed zucchini into a medium-sized bowl and stir in the crumbled Feta, finely grated parmesan, and sliced green onions.  Beat the buttermilk and eggs together and then add that to the zucchini mixture and stir to combine.
  4. In a smaller bowl, mix together the white whole wheat flour, sugar and all purpose seasoning, baking powder, and baking soda.  Mix the dry ingredients into the wet ingredients until all the flour is incorporated.
  5. Use a large spoon to fill muffin tin so that it is full but not overflowing.
  6. Baked 45-50 minutes, or until muffins are nicely browned and firm.
  7. Serve hot with butter or yogurt spread. These muffins will keep in the fridge for at least a week and can be reheated in the microwave for a few seconds.

These products can be purchased from LFM market members:

  • zucchini
  • parmesan
  • green onions
  • eggs
  • all purpose seasoning

UPDATES FROM OUR MARKET MEMBERS:

BLUE MOON FARM WEBSITE | FACEBOOK ]

Madison County

We have spent the past 2 weeks with our lawn mower AND weed whacker out of commission.   Those of you with a yard to mow will understand how bad this is!  Lots of rain, nice cool temperatures, and the grass growing almost fast enough to see!  Today we finally got the mower going again, and I spent a couple of hours struggling to push it through foot tall grass.  NOT fun, but rewarding to see how much better it looks!

Tomorrow we will go to Blue Grass Lamb & Goat to pick up a LAMB for market.  We will have Shoulder Roasts, Leg Roasts, Loin Chops, Spare Ribs, Racks and Shanks, as well as our usual Ground Lamb and Lamb Stew Meat.  This lamb was born and raised in Lincoln County, fed and finished on grass.  Other than lamb, we'll have all the regular PORK from Stone Cross Farm and BEEF from Colcord Farm.  Delicious BACON and Breakfast SAUSAGE, CHOPS, ROASTS and European SAUSAGES, STEAKS (30% off!) and BURGER.

We'll also have lots more of our beautiful LETTUCES, SPRING MIX, KALE and SPINACH this week, and of course BABY GREEN GARLIC.  From Vibrant Greens, our pals here in Madison Co, we'll have BIBB Lettuce and WATERCRESS, and maybe some other goodies.  Leo says maybe a few freshly dug BABY SHALLOTS!

Other than vegetables, we've still got just a few bottles of Abigail's (award winning!) HONEY, and are hoping to get some more for the weekend.  Handmade SOAPS from Stone Cross Farm.  Blue Moon Farm Sunday TEA...an Earl Grey base (either black or green tea), with our own Rosemary and Lavender.  It's wonderful hot or iced!  CHEESES from Stone Cross Farm too!

All kinds of HERB SETS for your garden....or to set in a big pot on your deck!  Lavenders are getting ready to bloom!  ARP Rosemary is more cold tolerant than other varieties.  3 different MINTS...ORANGE, GINGER and CHOCOLATE.  All the regulars....OREGANO, THYME, SAGE, lots more.

GARLIC SCAPE PESTO!!  (Maybe fresh SCAPES in another week!)  Try the PESTO on some FRESH ASPARAGUS!

Artisan BREADS and PASTRIES from Sunrise Bakery, including the best GARLIC BAGELS in Lexington!  (They have our garlic on them!!)  Start your day at the market with a CINNAMON ROLL and a cup of coffee from one of our coffee vendors!

Too tired to think!  Come see us this weekend for lots of yummy things!

Send an email for special requests!

" hand-crafted, Fair Trade, certified organic, and utterly delicious "

The Lexington Herald-Leader

Trieste, Italia, which claims a coffee roasting tradition going back to 1683 and the defeat of the Turks at the Battle of Vienna is the birthplace of CaffeMarco. The inspiration, the respect, and the exhilaration are all there - and they can be felt and recognized in the first cup of coffee.  The passion and the attention are evident. This is our tradition.

In downtown Paris Kentucky, roasting the finest arabica coffee beans in a ten pound coffee roaster and using the proven and traditional methods, Mark Newberry keeps the inspiration of Trieste alive and well.

Possessing a palate from his years in the San Francisco wine trade, he understood the art of blending different grapes to make a better wine. Various winegrapes complement each other to create a more complex wine, a more memorable and satisfying glass of wine. Coffee beans, he discovered, are similar agriculturally and culinarily, so blending coffee beans from different regions of the world produce a finer cup of coffee. Blending, in the wine trade, is considered an art. You can enjoy some of the artfully produced coffees here at the Lexington Farmers Market.

Everyone is welcoming the late spring this year.  We appreciate seeing so

many familiar faces returning to the markets on Saturday and Sunday

outdoors.  We will continue to attend each week, rain or sun or something

in between - hope to see you as well!

We've had great feedback on our jarred Salsa, Ketchup, and Marinara Sauce,

all professionally packed in BPA-free glass.  We'll continue to offer

these items each week until sold out - and we'll be planting enough for a

bumper crop of organic tomatoes this summer to restock the pantry.

NEW, NEW  We have found a professional charcutier to make delicious

sausages and bratwursts for us from Elmwood organic beef.  It has been

several years since we had our all-beef sausages to offer, and we are

really excited about these tasty and high quality offerings.

EGGS We offer each market our certified organic eggs from free-ranging

hens who live outdoors on grass pasture.  Both whole dozen and half-dozens

available. Our hens are always outside, enjoying the green growing grass &

clover and rewarding us with beautiful big brown eggs packed full of

flavor, orangey color, and healthful omega-3-fatty acids.

MEAT and POULTRY  We have restocked our inventory of grass-fed Angus

organic beef, along with our certified organic whole chickens, cut-up

chicken pieces, and flavorful hearty stewing hens.  In addition, we have

chicken liver and ground turkey.  Feel free to order ahead for quantity

amounts or a particular cut for that special meal, and we'll have it ready

for pickup at any of the farmers markets.  View our website for special

Beef & Chicken Bundles, and other quantities packages.

These days, more than ever, it's important to know the source of your

family's food and you can look to our local organic farm to meet your

body's nutritional needs resulting in good health.  Visit our website to

learn more, review our price lists, pre-order your special items, or

contact Elmwood for more information.

Sign UP NOW for Elmwood's Community Supported Agriculture (CSA) program to secure your Farm Share for the 2013 Summer Season.  We offer 3 share sizes, several convenient pickup locations, and USDA Certified Organic. Visit our website now (scroll up a little for a quick link!)

We will be back at the Lexington Farmers Market again this Saturday, offering bags of freshly roasted beans and hand-poured cups of coffee, brewed to order until 1 p.m. (Bring your favorite mug!) We will have two single-origin coffees available this week:

Peru Cajamarca: Fair Trade organic coffee from the Cenfrocafe cooperative. Smooth and balanced, with floral aromas, a toffee-like sweetness, and a great body.

Tanzania Kiboko Peaberry: Cute, tiny beans with a huge amount of flavor. Aromas of blackberry jam, a tangy, grapefruit-like acidity, and a distinct dark-chocolate finish.

Magic Beans roasts coffee every Friday night at our roasting studio in the Bread Box, using a Sivetz clean-air roasting process. We seal our beans in oxygen-free bags, each stamped with its roast date to assure freshness. Got any questions for us? Stop by our booth and ask!

Our grill is up and running at both the Saturday and the Sunday markets so you can start the morning with a good breakfast of local eggs, an omelet which can contain our own beef sausage and your choice of other items and bacon.  There's also biscuits with your choice fillings.   We're also grilling hamburgers, bratwurst and jumbo hot dogs, all made with our beef!  When you get to market, smell the air. You should be able to follow the good smells to our tents!

We'll also have plenty of beef and lamb in our coolers. It's about time to start grilling and we have some impressive filet mignon, ribeye and other fine cuts to go on the fire. If you're looking for an economical steak, try our top sirloin. There are a lot of people in Lexington that are finding out that this cut is a fabulous piece of steak and a very good price.

We'll have plenty of breads and cakes on the table as well as a very wide selection of jams and jellies. Salsas and relishes round out the choices. There's something for everyone at the market so come on down, have a cup of coffee, sweet tea or hot chocolate and take a look around. You'll have a great time!

First, a big THANK YOU to all our customers last week for buying your flowers locally!! This week we'll have:

Lisanthus - We are planting Lisianthus outside this week and will have plugs at the Market this week for those who love to grow them too! Lisanthus was cut flower of the year several years ago  but you don't see more of it at garden centers is because it's very difficult to grow to the plug stage (meaning it's the right size to plant outside in beds or containers). From that point on, it's a cinch! Colors: rose, blue blush and white.

Lilies - We have a very limited supply of cut flowers this week but are planning to bring white 'Rialto,' soft pink 'Sorbonne' and perhaps a few salmon 'Gluhwein' stems. We are also planting 'Lake Carey' bulbs and will have some at the market for you plant in your gardens. This is the deepest red Oriental lily available. Positively gorgeous!

Thanks again for all your support and we look forward to seeing you Saturday.

WUKY

WUKY was founded in 1941 as the radio voice of the University of Kentucky. Our mission then-as now-was to bring information and enlightenment to the people of central Kentucky. Back then we even hauled radios to remote areas so people could hear our programs. Today we're pioneering the use of digital technology to bring multiple streams of great non-commercial programming to this region. Whether you're a Lexington resident or a visitor, please take a moment this weekend to tune your radio to WUKY at 91.3FM, and, when you get home, stream our signal on line at www.wuky.org. There you'll enjoy NPR's Morning Edition, All Things Considered, Car Talk and Fresh Air all supplemented by award-winning WUKY news. On weekdays from 9 a.m. to 4 p.m. and Saturdays from 2 to 5 p.m., you'll hear a unique blend of music that we call "Adult Rock", featuring a wide variety of artists from Talking Heads to Norah Jones to Lucinda Williams. In addition, our weekend schedule includes everything from A Prairie Home Companion to the big bands, the Grateful Dead Hour, and Wait Wait Don't Tell Me. WUKY 91.3FM truly has something for everyone. We are able to accomplish all this only because of community support. Income from this and other special events, underwriting by area businesses, and contributions from individual donors account for over two-thirds of our budget so please pledge now and thank you so much for supporting WUKY.
